I am pretty much obsessed with this “shroomami” bowl from @sweetgreen.
It’s filled with organic wild rice, shredded kale, raw beets, cucumbers, basil, spicy sunflower seeds, warm portobello mix, roasted sesame tofu & miso sesame ginger dressing and it’s served warm with a side of carby if you wish, (yall know I’ll never pass on bread)
This beauty is jam packed with some powerhouse plants. Dwight Shrute ain’t the only one getting hype over beets! Those blood red little dudes contain healthy fat, fiber, vitamin C, vitamin B6, magnesium, IRON, PROTEIN, I know can you believe it?! Beets are also a great natural source of folate which is recommended for pregnant women in order to help prevent neural tube defects.

now that my appetite is at full peak and my aversions are gone. This veggie wrap was so filling I couldn’t even finish it 😳 Amazing flavor and incredible ingredients, like black beans, cauliflower, red quinoa, zucchini, squash and a nooch + cashew cheesy sauce. I’ve been a bit rubbish on the cooking front during the week due to long work hours. Working wife guilt for not being able to make 3 meals a day is thing. Some may say it’s my half Indian upbringing, I say my mum just set the bar really high juggling it all. Here’s my first home cooked meal for the week: Tofu and Peas Masala with Garlic Naan.

Hello Troops, Here we have some carrot, onion and coriander fritters, using a recipe invented in the deepest recesses of my head. There is also some mashed potato, mashed chickpeas and breadcrumbs in there (I am of course, referring to the fritters not my head) and a generous sprinkle of cumin. Remember, they are not burgers they are fritters! That sounds so much healthier, don’t you think?
