So thankful my office is close to a supermarket. The salad bar and fruit station have been my go-to place for when I didn't bring lunch, especially this week. 🙈💕 I always try to load my salads with lots of plant protein and good carbs. 👆
Why is it that the best food comes from the restaurants with the worst lighting? 🤔 Was actually able to enjoy a vegan option at a luncheon for work today in Moab. This is a veggie bowl with rice, roasted peppers and onions, marinated mushrooms and braised kale. It was sooo good but it’s hard to take a photo with no lighting and trying to be sneaky so complete strangers don’t think you’re weird for taking photos of your food 😂

Salmonella bacteria are a leading cause of food poisoning hospitalizations and the top cause of food poisoning death. Within 12-72 hours post infection, the most common symptoms may appear—fever, diarrhea, and severe cramps. The illness lasts four to seven days, but among children and elderly, the disease can be severe enough to require hospitalization or worse.
In 2010, more than half a billion eggs were recalled due to Salmonella outbreaks. Salmonella in eggs often times survive most cooking methods.
Salmonella aside, experts suggest that eating even one egg a day exceeds the safe upper limit for cholesterol intake in terms of CVD risk. Dietary cholesterol may also contribute to nonalcoholic fatty liver disease, and cholesterol consumption was found to be a strong predictor of cirrhosis/liver cancer. Those consuming the amount of cholesterol found in two McMuffins or more each day appeared to double their risk of hospitalization/death.
Compared w/men who rarely eat eggs, men eating even less than 1 egg a day appear to have twice the risk of prostate cancer progression. And, men who consume 2 and a half or more eggs per week basically an egg every three days may have an 81 percent increased risk of dying from prostate cancer. How could eating less than an egg a day have such potential impact on cancer risk? The answer is choline, a compound found concentrated in eggs. The choline in eggs, like the carnitine in red meat, is converted into a toxin called trimethylamine by bacteria existing in meat-eaters’ guts. Trimethylamine, once oxidized in the liver, appears to increase the risk of heart attack, stroke, and premature death.

Lenny and Larry’s 🌱 Vegan Oatmeal Raisin 🍪 Cookie!
If you are familiar with Lenny and Larry’s, you already know... lol. I picked this up at Vitamin Shoppe(@vitaminshoppe
). I love the White Chocolate Macadamia Nut and Chocolate Chip Lenny and Larry’s cookies. Lenny and Larry’s are very dense and HUGE cookies(they are 2 servings), with a pretty soft texture(not crispy at all). The last picture is when the cookie is microwaved for 30 seconds. They get very soft. The cookies have 16 grams of vegan protein. Vegan protein usually has a grainy texture in my opinion, but the protein is actually not that noticeable. This cookie has raisins and texture from the oats. This flavor is not as good as the chocolate chip in my opinion, but its ultra soft texture and extra molassey flavor get it an 8/10!
