are out and they are delicious! I love every single one! Not only are they vegan, they are all gluten free too! (The cone is not gf) It was so hard to pick, but I ended up with a scoop of toasted coconut milk and cookies and oatmeal moon pie with aquafaba marshmallows! Even though it was pouring rain, I still enjoyed every bite with @mslynnchen

1 3/4 c nuts (I used almonds and pecans)
150g medjool dates soaked in boiling water for about five minutes and then drained
1 tsp vanilla essence
1/3 cup @macr0mike
chocolate peanut butter powder
Blend nuts first until a course meal, add the remaining ingredients and blend until it all sticks together! Then roll out little balls and pop them in the freezer for a couple of hours before storing in the fridge 👏
Back and biceps done.
Still at 172. Eating 2900 calories a day. Plant powered.

3 cups roughly chopped mushrooms
3 tablespoons low-sodium soy sauce or coconut aminos
2 tablespoons maple syrup
1 teaspoon apple cider vinegar
1 teaspoon cold pressed olive oil (optional)
2 cups walnuts, soaked for 2-3 hours, rinsed and drained
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon smoked paprika
1 teaspoon chipotle powder fresh parsley, one handful
1 cup cooked quinoa (optional) Himalayan salt and pepper to taste
Place mushrooms in sealable container. Mix together marinade ingredients and pour over mushrooms. Seal container and shake to coat mushrooms. Let marinate for 2-3 hours (in the refrigerator), shaking occasionally to coat mushrooms.
Place walnuts in food processor. Pulse until chunky. Do not over process.Add mushrooms and parsley. Pulse until combined and mushrooms and parsley are incorporated. Stir in spices, quinoa and salt and pepper.
Walnut mixture1 head butter lettuce1 cup cherry tomatoes, quartered1 avocado, Himalayan salt and pepper. Place walnut mixture in lettuce leaf.Top with avocado and tomato. Finish with a grind of salt and pepper.

My sister sent me this beautiful photo of her dinner tonight, to share with everyone! She sautéed up a bunch of veggies and added a green curry sauce and rice. It sounded so amazing I am making this tomorrow. Look at all those beautiful colours, kinda jealous I’m not eating this tonight.
I have never felt like I have had to “give up” food. I’ve only had to get a little creative! Stuff some sushi with veggies and you are good to go!

This particular bowl had two bananas, two cups of Trader Joe's Berry Medly and was topped with chia seeds, museli and raspberries!
Here's some of my top smoothie bowl making tips: •To keep it thick, add water last, little by little •Don't be afraid to have it a little chunky, the chunks make it more filling because you have to chew. •Freeze overripe bananas for a creamy consistency •Most importantly, just have fun and experiment! There's so many ways to make a yummy smoothie bowl!
