🥗 Smoked tofu salad (using @sunrisesoyafoods tofu)
This is really quick to make:
I buy a box of mixed greens, add spices, lemon & vinegar to it, top it with 🍄 & then smoked tofu cut into tiny pieces (which helps me actually eat slower & appreciate the taste more).
Talking about taste, this has been my favorite tofu kind for more than a year, if you ever find it definitely try it, it’s so different than firm tofu tastewise & actually surprisingly tastes very similar to « smoked turkey breast slice » so I trust you’ll really like it if you like « deli cold cuts » ... I use it directly as is no need to cook it, I like this one cold ... oh AND they also have sriracha flavor 😁 🌶

We found our new favorite Ethiopian place ❤️ cozy atmosphere, stellar service, delicious food, nice spice, unbeatable prices. Me and the boyfriend both had long days at work, so this was the best way to turn our days around. DALLAS FRIENDS - CAN'T RECOMMEND CHECKING THEM OUT MORE!

Vegan Pulled Jackfruit BBQ Sandwich with Coleslaw
OMG, why did I just discover #jackfruit 🤦🏾♀️. Also this southern gal made her first #vegan coleslaw (yes it was 👋🏾 ya mama good lol).
obviously one was not enough lmao. these came out so delicious I could not stop eating them. vegan egg rolls made with sautéed cabbage + shallots + green onion + ginger + coconut aminos. instead of deep frying I brushed them with toasted sesame and olive oil and toasted them in the oven, and they turned out so crispy! definitely can’t wait to try making these again with a different stuffing.

🌶For the Baked Crispy Cauliflower
5 tbsp corn starch or other starch
6 tbsp bread crumbs use gluten-free crumbs to make gf
5 tbsp or more water
1/2 tsp cayenne use a 1/3 tsp for less heat
2 tsp soy sauce
1/4 tsp salt
1/4 tsp roasted sesame oil
1 tsp oil
1 medium head of cauliflower chopped into florets
🌶For the Kung Pao sauce:
1 tsp oil
8 to 10 dried red chilies chinese red chilies, or arbol or cayenne, or use california red for less heat
1/2 tsp coarsely crushed sichuan peppercorns or use a mix of coarsely crushed black pepper and red pepper flakes
2 to 3 tbsp chopped cashews or peanuts
4 to 5 cloves of garlic minced
1 inch ginger minced
2 tbsp scallions chopped
2.5 tbsp low sodium soy sauce/tamari use certified gluten-free sauce to make gf
1.5 to 2 tbsp rice vinegar
1 tsp chinese rice wine optional
1 tbsp sugar
1/4 cup + 2 tbsp water use 1/2 cup for more sauce
1 tsp cornstarch

This mornings smoothie bowl!! 🍓🍌🍊Made with frozen strawberries, bananas, blueberries, @traderjoes orange juice, and 1 tbsp of ground flax! Topped with half a banana, 1 tbsp hemp seeds, some pumpkin seeds, and a small handful of unsweetened shredded coconut! Not only was this packed full of antioxidants, vitamins and healthy fats— it was also f*king delicious. Will definitely be making again✌🏻
Cloaked in a thin battered shell, a fat @gardein chicken patty fills out the Nashville Hot Chickin' Sandwich ($10.95) at @veggiegrill. Drenched in a sauce that some might find spicy, the sweet bite once offered by coleslaw currants is replace with sugar kisses of bread and butter pickles. Underneath it all hides a redundant slick of charred scallion ranch. The first bites were good, but there is not nearly enough hot sauce to counter bread mouth—which is all I tasted for the majority of the sandwich.
While I miss the season salted skinny fries, the fat cuts of skin-on Idahos were my favorite part of the meal.
Vegan Ropa Vieja 😋
This is my vegan spin on a traditional Cuban dish which literally means "old clothes". I added some jalapeno flavored brown rice, a corn tortilla, jalapenos and lime. This one was a hit with my kids and is one of my personal favorites. 👍😃
Oil of choice (I like grapeseed)
1/2 yellow onion (chopped)
2 garlic cloves (minced)
2 celery sticks (diced)
Handful of baby carrots (cut long ways)
Green, yellow, orange and red bell peppers (thin sliced)
12 oz tofu (jackfruit would probably work better, but I didn't have any 😞)
8 oz vegetable broth
Jar roasted red peppers
Manzanilla olives stuffed with pimento
2 tbsp cumin
2 tbsp oregano
1tbsp smoky paprika
1/2 tsp cloves
1/2 tsp allspice
1 tbsp parsley
Salt & pepper
Can diced tomatoes
6 oz can tomato paste
2 bay leaves
Brown tofu and set aside. I like to toss it in almond flour seasoned with cumin, chili powder, garlic powder and onion powder, then brown it.
Sautee onion, garlic, carrots, celery in oil. Add oregano, cumin, salt and pepper. When carrots are a little soft, add peppers, cloves, allspice, parsley, bay leaves and paprika. When carrots are completely soft add tomatoes, tomato paste and vegetable broth. Stir until it has the consistency of a very thick stew, then let simmer for a few minutes. Slice roasted red peppers and add along with olives and capers. At the very end, add tofu and stir. Time to taste and add any more seasoning you like. I tend to add more cloves. Let it simmer awhile longer and you're ready to eat!😀
#vegan Coconut crusted tofu with a sweet chili sauce 🤤
For the Coconut Crusted Tofu
14 ounces extra-firm tofu
1/4 cup soy sauce
1/4 cup coconut sugar
1 small lime, juiced
1/2 tablespoon fresh ginger, grated
2 tablespoons whole wheat flour
2 tablespoons cornstarch
1/4 teaspoon baking powder
3 tablespoons cold water
1/2 cup panko breadcrumbs
3/4 cup shredded coconut (sweetened or unsweetened)
1/4 cup vegetable or canola oil, for frying
For the Sweet Chili Sauce
1/2 cup coconut cream
2 tablespoons pineapple juice
2 teaspoons lime juice
1 teaspoon chili garlic sauce

Desde que abrieron quería ir pero no había tenido la oportunidad y hoy (que ha sido un día maravilloso) lo logré y de verdad creo que es el mejor restaurante de comida vegana de Santiago!
De esos sabores que te hacen cerrar los ojos y hacer mmmmmmhhhh...
Fuimos con @sylvegankaur y quedamos encantadas, yo comí la hamburguesa de porotos negros y ella tostadas con un queso crema vegetal espectacular.
100% recomendado!!! Se sacan un 10, A+, 5 estrellas, etc.
