Vegan Mushroom Marsala: Ingredients: 2 cups sliced shiitake mushrooms 6 tablespoons vegan butter 1 small shallot, finely chopped 2 garlic cloves, minced 1/2 cup Marsala wine 2 cups vegetable broth 2 tablespoons of creamed coconut 4 sprigs fresh thyme 1/2 teaspoon, finely chopped parsley Salt and pepper 1 teaspoon nutritional yeast Method: In a large sauté pan, heat 2 tablespoons of butter over medium heat. Add the garlic and shallots and the remaining butter. Sauté until fragrant, about 2 minutes. Season with salt and pepper. Add the wine, thyme, parsley and the mushrooms. Simmer until the wine has been reduced by half. Add the broth and continue to simmer until the liquid has reduced by about half again. Add creamed coconut and fold. @Regran_ed from @veganfoodspace - MOIST AND DELICIOUS BANANA BREAD by @gaspic_healthyberry 💜 Recipe:⠀ 3 ripe bananas medium size⠀ 1 cup raw buckwheat groats soaked overnight⠀ 2 cups walnuts⠀ 1 1/2 cups pitted dates⠀ 1/2 cup milk of your choice⠀ 1/4 cup liquid oil⠀ 2 vegan egg of choice⠀ 1 tsp baking powder⠀ 1 tsp baking soda⠀ 1/4 tsp sea salt⠀ Optional but highly recommended!⠀ 1/2 tsp ground cinnamon⠀ 1/2 tsp ground ginger⠀ 1/4 tsp allspice⠀ 1/8 tsp ground clove⠀ ⠀ Instructions⠀ Preheat the oven to 200°C⠀ Drain and process the buckwheat until you get a creamy pudding. Add bananas, process again. Put dates and nuts, process again. You may need to stop processing and mix a little with a spoon or spatula. Process until you haven't large pieces of ingredients. ⠀ Add the rest of the ingredients and mix or process well.⠀ Put the mixture in a mold of 20x8 cm with parchment paper. We made a delicious pesto over the weekend. While we were meal prepping & making our hummus we decided to add the left over pesto. You GUYS this is seriously delicious. What do you like to add to your hummus?
[#Vegan ] Vegetable lentil stew . ❄️ Winter comfort food at its best! . Ingredients: 1x carrot 1x eggplant 1/2x lemon 2x tomatoes 3x bay leaves 1x large onion or 2x small onions 1x tablespoon coconut oil 2x tablespoons dried curry leaves – mix this with 1x tablespoon of minced garlic Mixed beans. I used around ½ cup dried mung beans, 1x cup dried red lentils, and a handful of mixed soup beans. . Spices: 1x tablespoon cumin 1x tablespoon paprika 1x tablespoon coriander seed 1x tablespoon mustard seed 1x tablespoon chilli powder ½ tablespoon turmeric ½ tablespoon nutmeg . In a pot, add in a drop of vegetable oil and sweat out vegetables. Once cooked for around 5min, fill the pot to the brim with vegetable stock (around 5x cups). Add vegetables and lentils/mixed beans to the pot and bring to a boil. . In a separate frying pan, add in coconut oil and sautee onions until soft and caramelized. Fry in curry leaves with the garlic and add all the spices. This should be sizzling – cook for another 3min. Ladle a spoonful of soup from the other pot into the pan to infuse all the flavours. . Pour everything from the frying pan into the pot. Add in bay leaf. Simmer this until you get your desired consistency – I usually leave mine for 2hrs since I like it thicker. So simple yet so good 🤤 Most flapjacks are loaded with butter and sugar but these are refined sugar free ✅ AND low fat ✅ So they’re ridiculously easy to make, delicious and healthy 🌱 😊 Recipe: 200g dates 5 tbsp coconut oil 3 tsp vanilla 1 tsp salt 250g oats •Blend the dates with 350ml hot water. •Transfer the date-liquid into a pot on high heat along with the coconut oil, vanilla and salt. •Keep the mix on a high heat until it begins to bubble. Reduce the heat and simmer the mix for approx 5 mins, stirring constantly. •Add in the oats and mix well. Place the mix in a lined baking tray and bake @200 °C

No recipe needed, just slice up your fave apple variety (granny smith seen here), watermelon radish, watercress, toast up some hazelnuts, and sprinkle with black lava salt. Who wants a Vegan Apple Pie Pocket? 😍🙋🏼‍♀️ RECIPE below👇🏻 They’re made of a crisp & flaky puff pastry crust and filled with yummy cinnamon apples! 😋 you can head over my insta-story to see how easy they can be made 🙌🏻 Enjoy your evening, my lovelies! 😘 . Ingredients for 8: 1 sheet vegan puff pastry 2 apples, chopped 100 ml apple juice 1 tbsp cornstarch 1 tbsp raw cane sugar 1 tsp cinnamon a pinch of vanilla plant-based condensed milk or cream (to brush) Instructions: In a pot, combine water, cornstarch, sugar, cinnamon and vanilla. Bring to the boil to thicken while stirring, then stir in apples and set aside. Lay out puff pastry on a baking sheet lined with parchment paper. Cut into 8 squares, brush the sides with plant-based milk. Add 1-2 tbsp of the apple filling on half of each square, then fold over to create a pocket pie and seal using a fork. Slice 3 slashes across the top of each pie, brush with milk, sprinkle over raw cane sugar and bake at 220°C for 10-15 minutes, until puffed & golden-brown. Meatballs on open faced french bun. I was at the bakery and saw these buns come right out the oven, no clue what I was going to do with it at first but I wanted one of those buns!! This is what I ended up making 🔻 italian veggie balls seasoned in steak spices & olive oil on a french bun with melted mozzarella & cheddar vegan cheese, shredded carrots,mushrooms & spicy pesto sauce as toppings. Here is my spicy pesto recipe: 2ups fresh basil 🌿 leaves 1/2 cup light tasting extra virgin olive oil 2 Tablespoons macadamia nuts 2 Tbsp nutritional yeast Pinch of fresh arugula 2 big garlic cloves 1Tbsp lemon or lime juice 1/2 tsp Habanero spicy sauce 1/2 tsp salt 1/2 tsp fresh ground black pepper * Mix all ingredients in food processor. To jeden z moich pierwszych eksperymentów kulinarnych 🤫 SKŁADNIKI: ✔️2 duże papryki ✔️150g kaszy jaglanej ✔️4 pieczarki ✔️2 papryczki piri – piri ✔️2 ząbki czosnku ✔️1 duża cebula ✔️ziarna słonecznika ✔️ziarna dyni ✔️curry  WYKONANIE Ugotuj kaszę jaglaną według przepisu i dodaj curry. Na patelni zeszklij pokrojoną w kosteczkę cebulę. Dodaj pieczarki, starty czosnek, drobno pokrojone papryczki piri–piri oraz nasiona słonecznika i dyni. Wszystko smaż przez chwile. Wymieszaj z kaszą jaglaną. Farszem wypełnij połówki papryk. Włóż do piekarnika i piecz w 180°C przez około 25 minut. Smacznego! ❤️ . . 🇬🇧PEPPERS STUFFED WITH MILLET GROATS Dears, today I’d like to share with you a recipe of a very easy dish. This is one of my first culinary experiments 🤫 INGREDIENTS ✔️2 large peppers ✔️150g of millet groats ✔️4 mushrooms ✔️2 piri-piri peppers ✔️2 cloves of garlic ✔️1 large onion ✔️ sunflower seeds ✔️ pumpkin seeds ✔️curry DIRECTIONS Cook millet groats according to the recipe and add curry. Fry cubed onions in a pan a little. Add mushrooms, grated garlic, finely sliced piri - piri peppers, sunflower and pumpkin seeds. Fry all for a moment. Mix with millet groats. Fill the halves of peppers with stuffing. Put in the oven and bake at 180°C for about 25 minutes. One winner 👆👆👆 Sponsored by @cybelesfreetoeat • • • • • Recipe for the roasted walnut and sage pesto: Ingredients: 1/3 cup walnuts 1 cups of cilantro 8 whole sage leaves 2 small garlic cloves 2 tbsp nutritional yeast 1/2 medium avocado 6 tbsp water 3 tbsp lemon juice Toast walnuts in a non-stick pan on medium-high heat for about 5 minutes, shaking the pan often until nicely toasted Simply place all the pesto ingredients in a food processor and blend until it’s smooth!

Creamy cheesy mushroom 🍄 & pine nut saffron pasta. Very filling 😋 🤤 Ingredients ✒️ (6 servings approx) 5 large mushrooms sliced 1/4 cup pine nuts Olive oil 👩🏻‍🍳 Sauté mushrooms in olive oil (2 tsp) until cooked. Set aside. Pan fry pine nuts in 1tsp olive oil. Set aside. ✒️ 1 bag of your preferred pasta. Cook pasta 🍝 as per norm. (Water, salt and olive oil) @sanremopasta ✒️ For the sauce: 1/2 cup plain flour 1tsp saffron powder 2.5 cups of plant milk 🥛 (I used @pureharvest ) 75g plant spread (I used @nuttelexspread ) 1/4 cup nutritional yeast Salt to taste 👩🏻‍🍳 Melt plant spread in a saucepan over medium heat. Add flour, stir until mixture bubbles. Add saffron and gradually stir in milk, keep stirring or it will clump. Add nutritional yeast. Keep stirring until it boils. NB, if sauce is too thick add more milk until it’s a consistency you can enjoy with your pasta 😉 👩🏻‍🍳 Combine pasta, mushroom, pine nuts and sauce in a bowl and garnish with chopped parsley. Tip, don’t not be rough as pasta will mush and break. Mal wieder was gesundes *hust* ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Mega-Chocolate-Brownie-Cake ♡♥♡ ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ZUTATEN: 400g Mehl 70g Backkakao 1 Pkch Backpulver 360g Zucker(Xucker für weniger kcal 2 Pkch Vanillezucker oder 2 TL Vanilleextrakt 200 ml Sonnenblumen oder Rapsöl 480 ml Wasser (wer den Teig nicht so kompakt möchte wie bei Brownies nimmt Mineralwasser Alle trockenen Zutaten gut mischen Die flüssigen separat mischen Dann mit der Küchenmaschiene oder dem Handrührgerät die Flüssigzutaten erst kurz auf niedrigster Stufe und dann auf höchster Stufe 3 Minuten unterrühren.
