Regrann from @veganfoodspace - Chocolate cake with zucchini and cherries by @frei_style ❤️ Recipe:⠀ Ingredients: 350 gr (12,5 oz) zucchini⠀ 100 gr (3,5 oz) whole cane sugar⠀ 250 gr (9 oz) spelt flour ⠀ 1 packet of baking soda⠀ 3 Tbsp cocoa⠀ 1 tsp vanilla extract (or the pulp of 1 vanilla pod)⠀ 100 ml (3,5 oz) neutral oil (i.e. canola oil)⠀ 100 gr (3,5 oz) dark chocolate (and some more for the glaze)⠀ 100 gr (3,5 oz) fresh cherries (and some more for decoration)⠀ 100 ml (3,5 oz) sparkling water ⠀ 1 Tbsp apple cider vinegar⠀ ⠀ Method⠀ 1. Preheat the oven to 180°C (356°F) ⠀ 2. Finely grate the zucchini, put them into a kitchen towel or paper towel and drain as much fluid as possible ⠀ 3. Break the chocolate into pieces and melt them ⠀ 4. Pit the cherries and cut them into small pieces ⠀ 5. Put flour, sugar, baking powder, cocoa and vanilla into a bowl and mix well ⠀ 6. Then add oil, sparkling water and cider vinegar and stir into a smooth dough ⠀ 7. Slowly fold in chocolate and cherries ⠀ 8. Grease a loaf pan and put dough inside ⠀ 9. Bake for 40-50 minutes – check with stick if well done ⠀ 10. Melt some chocolate for the glaze and pour over the cooled off cake. Place the cherries on top of the liquid chocolate. If you have any more ideas let me know! 😊😊💕 For the crust: 🥨 2 cup of cashews. 🥨1 cup of coconut shreds. 🥨1/2 cup of activated groats. 🥨1/4 of rice malt syrup. 🥨1 cup of pitted dates. 🥨3/4 cup of rolled oats. 🥨2 T of quinoa flour. . . Peach filling: 🍑4 peaches de skinned and depitted. 🍑1 cup of cashews. 🍑1 tsp of lemon zest. 🍑1 T of lemon juice. 🍑1 can of full fat milk, placed overnight in the fridge. . . Method: 🍰 place cashews, coconut shreds, buckwheat groats, rolled oats and quinoa flour into a food processor and blend until cashews are tiny pieces. Add malt syrup and pitted dates until combined. Place into a tart pan, taking time to make the border. 🍰 prick the crust with a fork a few times and place into the oven. 350°F for 15 minutes. It should be a nice golden colour and smell rich. 🍰 leave to cool down while you make the filling. 🍰 place all the filling ingredient into a blender. Scoop only the cream part of the coconut milk can. 🍰 pour carefully over the crust. Place into the freezer for an hour. 🍰 slice 5 peaches carefully and arrange slices to your liking on the cold tart. Good morning everyone!!! I am super excited for this week, I hope you all are too!! Thought I’d start out the week sharing this quick stovetop breakfast granola bowl that I had yesterday. I found this recipe few months ago from @jessbeautician ‘s video couple of months ago and it’s been my go to method for a quickie granola meal when I’m out of granola. You know I love my Granola. This recipe also gives me the Overnight oatmeal flavor and feel and that comes in handy when I’m craving overnight oats but didn’t make any overnight. Watch the video, and enjoy! RECIPE: ~ feed drops of oil (skip if sticking to WPBD) ~ 1 cup Organic Rolled Oats ~ 1 cup Oatmeal ~ 1/2 cup rawnola to top . Heat pan. Add oil, then add oatmeal. Stir for about 5-8 minutes until you start eating a toast like aroma. (I like mine burnt just a little on the bottom to give it a crunchy feel. Add fruits and any other topic of your choice. one of the perks i’ve experienced since becoming plant-based (ish), is that i have way more flexibility with my daily calorie intake. i never realised how many calories were in meat before! … and now some of those calories can should be allocated to bread and other yummy things. this 🍞 VEGAN RUSTIC ARTISAN BREAD 🍞 is the perfect loaf of rustic bread, wonderfully crisp and chewy on the outside, while tender and even slightly moist on the inside. i can now officially say i’ve made a loaf of bread as good as a professional artisan bread baker 👩🏼‍🍳// there’ nothing like the comforting sound of a crackling crispy crust being torn over a steaming hot bowl of soup 🍲 am i right, or am i right ..?! i love to bake cookies, pies, brownies, cakes…you name it. but for me, there is nothing more rewarding than baking my own bread. i get serious vibes when i can serve my whole family crusty, earthy bread, straight out of the oven 😋 thank god, we don’t suffer from any gluten intolerance, and i think making my own bread with high quality, minimal ingredients has a lot to do with that. it’s a very sensory process, and it makes me nostalgic for a simpler time before i was even alive – before corporations took over the farming and food industry and before bread had a list of 20+ ingredients on the supermarket shelves.// the bread shown here has a nice textured crumb with a wonderful crusty shell. so good straight from the oven 🙌🏻 nothing better than homemade bread! especially when it’s this easy to put together. it came out with a nice crispy crust and soft flavorful center. never again will i pay $5 to buy a loaf of rustic artisan bread at the store or bakery. astoundingly i liked this even better and it had to cost less than 0.50 cents to make. there is something very therapeutic and rewarding about making your own bread. you just don’t get the same feeling with a warmed loaf of store bought bread ☺️

Edible cookie dough 📸@thebigmansworld 💛 Recipe:⠀ Ingredients⠀ 1/2 cup blanched almond flour⠀ 2 tbsp coconut flour⠀ 2 tbsp granulated sweetener of choice ⠀ 2 tbsp sticky vegan sweetener of choice ⠀ 1 1/2 tbsp coconut oil, melted⠀ 1-2 tbsp vegan chocolate chips of choice⠀ ⠀ Instructions⠀ 1. In a small mixing bowl, combine your blanched almond flour, coconut flour and granulated sweetener of choice. Mix well.⠀ 2.Add your sticky sweetener of choice and coconut oil and mix very well, until fully combined. The mixture should resemble a creamy cookie dough. Stir through chocolate chips. If it is too crumbly, add either some extra sticky sweetener or a few drops of liquid (plant-based milk works great). 3.Either enjoy immediately or for a thicker, denser cookie dough, refrigerate for 30 minutes. ⠀ Note: Can keep for up to a week, refrigerated. Caramelised fennel, celeriac and cauliflower soup to get you through these cold winter nights #winter #soup #plantbased #vegan Recipe below 😃😃😃❤️😊 Ingredients: Two bulbs fennel One bulb celeriac peeled Half a head of cauliflower 4-6 cups veggie stock 1/2 medium brown onion 3 cloves garlic 1 carrot 2 sticks celery 1 tablespoon fennel seeds grounded 1 tablespoon cumin seeds grounded 1/2 to 1 teaspoon chilli flakes 1-2 tablespoons sumac 3 tablespoons olive oil Parsley chopped (garnish) Toasted hazelnuts (garnish) Method: •Preheat oven to 180 degrees Celsius •Chop cauliflower and celeriac into small pieces and roast in the oven with one tablespoon olives oil, ground cumin, fennel seeds,sumac, chilli flakes, salt/ pepper for 45 minutes •Meanwhile slice fennel and caramelise 1 and 1/2 of the bulbs in a pot over a low heat with 1 tablespoon of olive oil (about 20-25 minutes). •Roast the remaining half of the fennel in the oven until crispy. Do this in a seperate tray to the cauli/celeriac (these will be used as a crispy garnish at the end and are optional) •Dice onion, carrot and celery and cook in a large pot over medium heat until onion is translucent, add garlic and cook for a further 2 minutes. •Combine the caramelised fennel and roasted veggies to the onion mix with the veggie stock and blitz with a hand held blender. Add salt and pepper as desired. •Serve with a sprinkle of parsley, toasted hazelnuts and the crispy roasted fennel and enjjjjoy 😃

Chickpea Flatbread & Marinated Crunchy Chickpeas by @bettinas_kitchen 💛 Recipe⠀⠀ Makes 1 big oven tray, serves 4–6 ⠀⠀ For the flatbread ⠀⠀ 140g (5 oz / 1 cup) chickpea flour⠀⠀ 140 g (5 oz / 1 cup) Gluten-free Flour Mix ⠀⠀ 500 ml (17 oz / 2 cups) water pinch of pink Himalayan salt⠀⠀ 1 tablespoon bicarbonate of soda (baking soda) black sesame seeds⠀⠀ ⠀⠀ For the caramelised onions ⠀⠀ 2–3 tbsp olive oil⠀⠀ 1 yellow onion, sliced⠀⠀ 1/2 tsp sweet paprika⠀⠀ 2–3 medjool dates, stoned (pitted) ⠀⠀ and torn or chopped ⠀⠀ For the marinated chickpeas ⠀⠀ 400 g (14 oz) tin chickpeas, drained 1/2 teaspoon sesame seeds⠀⠀ 1/2 teaspoon dried parsley⠀⠀ 1/2 teaspoon red chilli akes (red ⠀⠀ pepper akes)⠀⠀ pinch of pink Himalayan salt ⠀⠀ ⠀⠀ To serve ⠀⠀ coriander (cilantro) and mint, chopped ⠀⠀ Flatbread caramelised onions ⠀⠀ Marinated Chickpeas ⠀⠀ Preheat the oven to 200oC (400oF/Gas 6) and line a baking tray (baking sheet) with greaseproof paper (wax paper). In a bowl combine all the bread ingredients and set aside. ⠀⠀ Next, start on the caramelised onions. Heat a good glug of olive oil in a pan and fry the onion for 10 min until nice and soft. ⠀⠀ Add the sweet paprika along with the dates, give it a stir and set aside. ⠀⠀ Drain the chickpeas very well – you can even pat them dry with a towel. Put them in a bowl and add the rest of the marinade ingredients, then stir to coat the chickpeas and set aside. ⠀⠀ Drizzle a bit of olive oil over the lined baking tray and spoon the bread mixture over the tray. Make sure the mixture is spread out evenly with a spatula. ⠀⠀ Sprinkle the chickpeas evenly over the top along with dollops of the caramelised onions.⠀⠀ Make sure that every bite will have a little bit of both mixtures. Scatter over the sesame seeds. ⠀⠀ Stick the tray in the middle of the oven and cook for 20 minutes. After the bread is done, move it to the top of the oven for 5 minutes or under the grill to give the chickpeas an extra crunch, but keep an eye on it to make sure they don’t burn. ⠀⠀ Take the bread out of the oven and transfer to a wire rack to cool. Monday Morning = Peanut Butter & Chocolate Marble Banana Bread 🍌🍞 ⬇️RECIPE⬇️ #bananabread #veganbananabread #peanutbutterbanana #veganbreakfast #veganmuffins #veganrecipe #vegansnack #veganfoodshare #vegangotgame #veganfoodspace #veganfoodplug ➡️RECIPE➡️ 4 Super Ripe Bananas 1/4 cup coconut oil 1/4 vegan milk 1/4 cup agave nectar 1 tsp vanilla 2 cups unbleached flour 1/2 tsp cinnamon 1 tsp baking soda 1/2 tsp salt ⏺Marbling: 2 Tbsp unsweetened cocoa powder 1 Tbsp water 2 Tbsp peanut butter ✔ Mash bananas in mixing bowl until creamy (I like to keep some chunks) and then add the oil, milk, agave and vanilla. Whisk until blended. ✔ In another bowl, sift together the flour, cinnamon, baking soda and salt and add into the wet mixture with spatula or wooden spoon. Mix well. ✔Pour 2/3 of the batter into baking pan or dish lined with parchment or prepped with nonstick spray. ✔In the remaining batter, add the cocoa and water, blending it together. Drizzle new batter over previous batter and then dot the peanut butter randomly on top. Taking a fork or knife, swirl the batter around, making marble effects. Sprinkle nuts or dried fruit toppings if you want! ✔Bake at 350°F for about 45 minutes or until toothpick testing comes out clean. (Extra 10-15 mins if using deep pan) ✔Let bread cool 15 minutes before digging in. YUM!
I went to @meltbargrilled about a month ago and I was so excited to have a vegan menu in my hands. So I got the Buffalo tofu wings and I've been craving them ever since. This is my first attempt at recreating them. Unfortunately, they tasted nothing like those delicious little triangles but these were still amazing nonetheless. Credit to @veganfoodspace : Cauliflower wings by @the_clumsy_vegan 💛 Recipe:⠀ Ingredients:⠀ Cauliflower: 1 cut into bite sized pieces⠀ Tikka masala mix: 4 tsp divided⠀ Chickpea flour: 1 C⠀ Water: 3/4 cup + more⠀ Olive oil⠀ Smoked salt⠀ ⠀ Recipe:⠀ 1) Preheat oven to 175C⠀ 2) Mix cauliflower, sea salt , 2 tsp tikka masala and olive oil in a bowl.⠀ 3) Transfer to a lined baking sheet and bake for 15 minutes. Allow to completely cool⠀ 2) Make a smooth batter with chickpea flour, olive oil and water. Flavour batter with salt and tikka masala⠀ 4) Dip cauliflower in batter to evenly coat and transfer to a lined baking sheet (or straight into hot oily to fry)⠀ 5) Bake for 15-20 minutes till batter is crispy. Some lil raw PB&J cheesecake bites I made a while ago 🍓🥜 A creamy peanut butter filling sandwiched between a fudgey “biscuit” base and a tangy raspberry topping 🤤 . . Recipe for the base: 150g dates 50g walnuts 175g ground almonds 50g desiccated coconut 2 tsp vanilla 1 tsp salt •Blend the dates along with 75ml hot water until a paste forms. Remove from blender and place in a bowl. •Blend the walnuts until they form a fine flour. Place in the bowl along with the date paste. •Mix all the ingredients until well combined and place in a lined baking tray. Refrigerate. . . Recipe for the PB filling: 100g cashews 150ml almond milk 100g peanut butter 100g dates The juice of a lemon 2 tsp salt 2 tsp vanilla •Blend all ingredients until well combined and smooth and creamy - this may take a few minutes. •Spread evenly on top of the base and place in the freezer while preparing the topping. . . Recipe for the raspberry topping: 150g raspberries (I used frozen as they’re cheaper) 5 tbsp agave The juice of a lemon 1 tsp vanilla 2 tbsp chia seeds •Microwave the raspberries until soft (approximately 20 seconds). •Mash all the ingredients bar the chia seeds until well combined. •Add in the chia seeds and leave aside for 5 minutes to allow mix to thicken. •Spread evenly on top of the filling. Freeze for at least an hour. Keep bars in the freezer and defrost for 30 mins before serving ❄️
