EASY DELICATA SQUASH CURRY 🍛
This curry is so easy, absolutely delicious, healthy and warming. It is rich without being heavy, and has a subtle sweetness lingering beneath the spice. It works well with any vegetables but I LOVE the delicata squash, it is a featured ingredient in this dish. Use a high quality curry paste, and taste it before cooking. If your curry paste is especially spicy, start with half the amount noted. ∙
1/2 tbsp coconut oil
3 cloves garlic, minced
1 inch piece ginger, peeled and minced
1 yellow onion, large dice
2 tbsp yellow curry paste
1 tsp cumin
1/2 tsp hot curry powder
1/4 tsp turmeric
1 tsp sugar
2 small delicata squash, washed, halved lengthwise- seeds removed and sliced into 1/2” thick moons
2 large carrots, peeled and cut into 1/2” rounds
8 oz firm tofu, drained and cut into 1” cubes
1 14 oz can coconut milk
1 14 oz can diced tomatoes
Heat large pot over medium heat for 1 minute. Add coconut oil, allow to melt & add onion. Sauté for 3-4 minutes until soft then add garlic, ginger, curry paste & all spices, including sugar, stirring for 1 minute longer. Add delicata squash and carrots (hold off on tofu for now) and diced tomatoes & coconut milk. Bring to a simmer and cook for 15 minutes, stirring occasionally. Add tofu, cook for 10-15 minutes longer until vegetables are soft. Add salt if desired, although most curry paste is already high in sodium so mine did not need. Serve with rice & garnish with cilantro, lime wedges and chili oil if you want 🔥.

Gingerbread cake with orange, clementine icing. It could not be more scrumptious, I promise you! Who else loves the flavours of gingerbread and clementines together? I wasn’t in the mood for icing one day, so I took some of my baking test cake, (a pan the I bake along side my main cake to repeatedly test to see when I should shop baking the actual cake), and ate it with clementines and no frosting. This is my second upload of this cake, the first was an action shot with icing snow coming down, but to be honest I wasn’t into how the picture turned out. There was something about the other one that made me feel 😒 every time I looked at it. I loved the cake and didn’t want to waste all my work, so instead of scraping it all, I went back to my files and tried again. I’m much happier with the style, angle and colouring of this shot. Moral of the story, try, try and try again.

This is Fonio pudding also known as acha pudding in the central part of Nigeria where my mom is from and where I was raised. It is such a nutrient dense grain full of vitamins and antioxidants. This is a perfect grain to implement in your diet. The best part is that you can have it for breakfast lunch or dinner as it takes multiple different forms!!!

Here is a delicious dish to get your Holiday celebrations started, Taco Feast by @elavegan
6 soft tortillas⠀
1 avocado chopped into cubes⠀
2 tomatoes diced⠀
1 1/2 cups chickpeas drained and rinsed⠀
1 green pepper chopped⠀
1/2 big onion finely sliced⠀
6 tbsp red cabbage finely sliced⠀
1-2 tbsp balsamic vinegar (to roast the chickpeas)⠀
1-2 tbsp soy sauce (to roast the chickpeas)⠀
fresh cilantro to taste⠀
1/4 cup tahini⠀
1/8 cup (or more) water (to thin out)⠀
3 tbsp lime juice or lemon juice⠀
2 cloves garlic finely minced⠀
1-2 tsp maple syrup or agave syrup⠀
1/2 tsp onion powder⠀
1/3 tsp salt or more to taste⠀
1/4 tsp black pepper ground⠀
1/4 tsp ground cumin (optional)⠀
1 tsp hot sauce (optional)⠀
Put the chickpeas in a pan/skillet together with the balsamic vinegar and soy sauce. Roast at low-medium heat for about 5 minutes and stir frequently⠀
Chop your veggies and the avocado. You can lightly sauté the veggies (onion, green pepper, red cabbage, tomatoes) in a pan/skillet for a few minutes with a little bit of oil or leave them raw (like I did)⠀
Mix the ingredients for the tahini dressing in a small bowl with a whisk. If you use a thick tahini paste then you might need more water to thin it out⠀
Stuff your tortillas with the veggies, the roasted chickpeas and drizzle the tahini dressing on top. Enjoy hot or cold! Enjoy!

Hey, are you excited for the weekend? I feel like it’s gonna be a busy one for many of us! However, I have a very quick and easy recipe to share in case you fancy some rich, creamy and decadent Dark Chocolate Almond Butter Cups 🍫
To make 12 cups: •200 g of dark chocolate (85% cocoa) •1 tsp (heaping) of soft coconut oil •1/2 cup of smooth almond butter •2 tsp of maple syrup •Coarse sea salt (optional) —> Line a 12-cup muffin pan with cupcake liners. In a small bowl, combine almond butter and maple syrup to create a thick paste, then chill it in the fridge. Melt chocolate over a bain marie and incorporate coconut oil to make it smoother. Pour a tablespoon of melted chocolate into each liner and place the muffin pan in the fridge to harden. When ready, scoop a teaspoon of chilled almond butter mixture into the center of each cup, flatten the tops using the back of the spoon (try to not reach the edges so the chocolate can go around the sides). Cover with the remaining melted chocolate and sprinkle some sea salt on top (optional). Place the muffin pan back in the fridge to set. Enjoy your Dark Chocolate Almond Butter Cups directly out of the fridge or allow 15 minutes to taste them at room temperature 😍 •

Spicy Tofu Sofritas Crunchwrap Supreme 🔥🌮 .

Spicy Sofritas Tofu
3 tablespoons olive oil
16 ounces extra firm tofu (press out some liquid first)
2 tablespoons taco seasoning (add about 1 teaspoon salt if it’s unsalted)
2 chipotle peppers, minced
1/3 to 1/2 cup salsa
1 cup cashews
1/2 cup water
1 can diced green chiles (or less, to taste)
1 teaspoon taco seasoning (add a pinch of salt if it’s unsalted)
huge burrito-sized flour tortillas
something crunchy: tostadas, tortilla chips
fresh stuff: tomatoes, cabbage slaw, lettuce, cilantro
Sofritas Tofu: Heat oil over medium high heat in a large nonstick skillet. Add tofu and break apart into crumbles. Add taco seasoning, salt, chipotles, and salsa. Get it all going in the pan, nice and hot. Finish by letting everything sit without stirring for another 10+ minutes (adding oil to prevent sticking as needed) until you get some nice browned, almost-crunchy pieces.
Cashew Queso: Blend everything together aggressively until smooth!
Crunch Wrap Time: Lay a large tortilla on a flat surface. Layer: tofu, queso, crunchy stuff, and any other extras you want in there. Fold in the edges of the tortilla toward the center. Place in a hot oiled skillet, seam side down. Cook for a few minutes on each side until the exterior is firm, crunchy, and golden brown. Cut and serve!

Wanna guess what is it made of?🧐Not tofu, not beans...
Yup, it’s jackfruit!! This is my first time using jackfruit for savory dish and I must say it’s surprisingly flavorful!
🙋🏻♀️never tried barbacoa before and thought I would give it a try with jackfruit!
~ 2 cans of jackfruit in brine, drained and baked at 250F for about an hour.
*strongly recommend this step to remove the moisture and sourness of jackfruit, especially when it’s in the brine. Using a fork, shred jackfruit into strips and take out the seeds.
~ 1 medium onion, diced
~ 3 cloves garlic, minced
~ 3 tsp ground cumin
~ 1 tsp ancho chili pepper
~ 1 chipotle pepper in adobo sauce, sliced ~ 2 tbsp adobo sauce (adjust accordingly for spiciness)
~ 2.5 heaping tbsp vegan Worcestershire sauce
~ 1-2 tbsp ketchup (adjust based on preference)
~ 2 heaping tbsp maple syrup
~ 1/2 tsp green Chile (optional)
~ salt to taste
In a heated pan, sauté onion and garlic until soft, add cumin, chili, and condiments.
Now the fun begins... add jackfruit, stir-mix-stir.. if it’s too dry, add a bit of water. Your kitchen will smell so sweet now.. and you probably sneeze because of the heat from chili🤣. Season...
Transfer jackfruit into a loaf pan and bake at 350F covered for 30-35 mins. Layer with banana leaf, if you have one. Why bake it, you asked?! Well, it’s just more fancy🤣, no actually, I wanted the jackfruit to absorb all the flavor from the sauce.. in fact, it’s more seasoned the day after.
Serve with 🌽or flour tortilla, salsa, 🥑 and lime juice. I added more Worcestershire and hot sauce🤩. Have a yummy 🌱Fri-Yay, my Insta friends!!! .

My favourite type of bowl: 50% grains + legumes and 50% veggies - guaranteed satisfaction 😊
🌱In my bowl: quinoa & bulgur mix with harissa-spiced borlotti beans, steamed broccoli, steamed pak Choi, pumpkin seeds, and lots of spinach on the base.
Harissa Borlotti Beans, you’ll need:
🍀400g tin borlotti beans, drained and rinsed
🍀1 large shallot, finely chopped
🍀2 garlic cloves, finely minced
🍀1 tbsp tomato purée
🍀2 tsp harissa paste
🍀1 vegetable stock cube
🍀1 small chilli pepper
Heat a small splash of water in a saucepan. Add shallots and garlic, cook for 1-2 minutes until soft. Add tomato paste, harissa, chilli, stock cube and a splash of water. Stir well to combine, cook on medium heat for 10-15 minutes then add beans. Add a small splash of water if the ban gets too dry, season with salt and pepper as needed then turn the heat down to a simmer. Cook for 2-3 minutes or until beans are warm. Serve over grain of choice with lots of veggies 💙

Haven't posted on here in a while, I know! But since I've started uni I've been super busy with studying, doing the cleaning (since l live on my own now) and I haven't been bothered to make nice, pretty food. I've been surviving on oatmeals, soy cappuccinos, fruit, salads and sweet potatoes really😅 So here's how my breakfast looks like 99,9% of the time🤗 I always make myself a big bowl of oatmeal cooked with half of a smashed banana, a teaspoon of chia seeds and soy milk and topped it off with lots of seeds, the other half of the banana and last but not least a teaspoon of nut butter (the best thing you can add on top of your oatmeal😍). Last week I tried making my first ever homade almond butter and let me tell you it was delicious, easy to make and much cheaper than the store bought ones for sure!!! I love having oatmeal in the morning because it's warming, easy and quick to make, healthy, delicious and filling! It's the perfect breakfast in my opinion😉
Good morning! I couldn't make up my mind today whether I wanted oats or a smoothie, so I made something in between! This smoothie bowl has oats blended in it to thicken it up and topped with some low sugar granola, berries and nuts. As it is double spin day, I have also added in some protein powder. .

1 tbsp. chia seeds⠀
1 tbsp. dried goji berries⠀
2 tsp. omega-3 superpowder⠀
Juice from half a lime⠀
110 ml milk of choice⠀
To decorate: Toppings of choice. I have used blackberries, raspberries, goji berries, granola, hazelnuts, pumpkin seeds and a sprig of mint⠀
Method: Blend ingredients, pour into a bowl, decorate and serve. Enjoy!⠀
