Friday was my work’s Christmas lunch and I got this delicious vegan roast from Bills 😍 (so did two others on my table!) I’m so grateful that so many restaurants are embracing vegan friendly food 🌿
Today I am grateful for this fluffy baby 🐶 he is the biggest snuggle pup and will sleep all day on my bed under my blanket and tbh I don’t blame him, I would do the same if I could! 😍
Lo prometido es deuda ✨ esta receta es súper fácil y flexible también (pueden reemplazar ingredientes con lo que tengan en casa 😉 : 1 taza de harina de avena + 1/2 taza de harina de garbanzos (o harina de almendras) + 1/2 taza de cacao (o un poco menos si no lo quieren tan intensos) + 5 cucharadas de aceite de coco derretido (o vegetal)+ 1 taza de leche vegetal+ 1/2 taza de azúcar de coco (o panela) + 1 cucharadita de bicarbonato de sodio + 1 cucharadita de polvo de hornear + 3 cucharadas de miel de maple (o agave o de abeja) + 1 cucharada de vinagre de manzana. Separan en dos bowls los ingredientes secos y los líquidos ; y los unen. Al horno por 25 minutos a 180 grados y listo !!! Lo pueden decorar con cobertura de chocolate y mantequilla de almendras de @the.butter.factory

And my FAVORITE egg substitute AQUAFABA. Aquafaba has been on the rise in the vegan community taking its place as the ultimate egg replacement. This plant-based egg substitute is simply the liquid that you would normally drain from canned chickpeas. It whips up to beautiful meringue just like egg whites do. How the first person discovered that is beyond me.

I used to always love a warm chicken and avocado salad, so I decided to make a vegan version! It’s a delicious & nutritious lunch option for winter and no cute chickens were harmed 🐓🥗⛄️
For the “chicken” I used @eat_oumph
pulled pieces which I cooked in a frying pan with just a smidge of avocado oil until they were sticky and crispy, then shredded the pieces and threw them together with avocado, shredded nori, cavolo nero, garlic, romaine lettuce, tomatoes, raw red onion, caramelised onions, piquante peppers & organic houmous 👌🏼
