The difference between where you are and where you want to be, is the challenge you have created between the two.
A goal wouldn’t exist without a challenge that makes that very goal apart from your reality.
The longer we do the same thing, the longer we’ll get the same thing. That challenge is delicately being created into your life every day, every time you make the same choices and follow the same routine.
It isn’t until we get up one day and make that first move, read that first book, hold that first meditation, eat that right thing, etc.
It isn’t until then that we experience a different result. The law of cause and effect will always act accordingly!
Playing yourself means exactly that, playing no one but yourself because the laws of the universe will always remain intact. You give what you get, you attract what you are.
So do it now. Seriously, just start now. Whatever your goal is. Take the smallest step, now.

Al final le estoy cogiendo el tranquillo al tofu 😋
Hoy que no tenía tiempo de marinarlo pensaba que iba a salir un gran fail de esos que te comes por no tirar la comida, pero a veces la vida es maravillosa y te sale un tofu riquísimo ✨
Simplemente lo he dorado un poquito al horno y luego lo he pasado por la plancha con una mezcla de salsa de soja, sirope de agave y sriracha (como siempre, me he pasado con el picante 😅🌶) Un poquito de trigo sarraceno y unos brotes verdes para acompañar ¡y listo! 💪🏾🌱
El otro día volvimos a hacer el Pan Naan a la sartén 😊 Esta vez hicimos una versión con pimentón y la acompañamos con hummus. La verdad es que a mi compañeros de piso les encantó, aunque yo soy mucho más fan de esta versión con ajo y albahaca. 🌿✨Tenéis la receta en el blog! Y como os digo, no hace falta horno para hacerla 🤙🏼 ¡Se hace con sartén!
Pesto Chickpea Patties (RECIPE BELOW!) 🌱 I had this with a bulgur salad, mayo pesto, and some lemon!
The bulgur salad is basically cooked bulgur wheat with cilantro, lemon juice, bell peppers, and red onions. For the pesto mayo, I added pesto into my vegan mayo and just mixed it together!
Pesto Chickpea Patties
1 cup cooked chickpeas
1 flax egg (1 tbsp flax seed meal + 3 tbsp water then let sit for 5-10 mins until thick)
1 1/2 tbsp basil pesto*
1/4 tsp salt (or more to taste)
1 tbsp nutritional yeast (optional, just for added flavor)
2 tbsp all purpose/whole wheat flour
1 small red onion, diced
2 cloves garlic, minced
1. Sauté the garlic and then the onions in a little oil.
2. In a food processor, add all the ingredients and quickly process. You can leave some Chickpea chunks.
3. Form into patties and pan fry over medium heat in a little oil for 5-8 minutes on each side or until golden brown. *You can opt to use 1/4 cup packed fresh basil and add an additional 1/4 tsp of salt to taste.

I made my new bae hummus without tahini because he’s allergic.. and it was DELICIOUS! 😍 and super, super easy! Tag a friend, hit save and give it a go! ⠀⠀⠀⠀⠀⠀⠀⠀
💛2 cans chickpeas (drained and washed) ⠀⠀⠀⠀⠀⠀⠀⠀
💛4 tbsp olive oil ⠀⠀⠀⠀⠀⠀⠀⠀
💛2 tbsp lemon juice ⠀⠀⠀⠀⠀⠀⠀⠀
💛4 tbsp water ⠀⠀⠀⠀⠀⠀⠀⠀
💛1/2 tsp garlic paste (or 2 cloves) ⠀⠀⠀⠀⠀⠀⠀⠀
💛salt and pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀
Place all ingredients into a food processor and blend until smooth! ⠀⠀⠀⠀⠀⠀⠀⠀

Completely in love with my "farofa" with chickpeas coconut curry. Farofa is a very common dish in Brazil that requires mainly eggs and roasted cassava flour. Yes, it can dry my Vata but I use lots of oil and eat it with very creamy sauce, well balanced rs
Recipe for 2 people
For the farofa
1 cup of roasted cassava flour
1/2 cup of olive oil
1 tbsp of butter
1 small onion (sliced)
6 green olives (sliced)
2 eggs (vegans can make it without eggs, you some corn instead)
Salt and pepper
Heat the olive oil and the butter, add the onion and cook for some minutes until they get gold. Add the eggs and the olives, mix very well and when the eggs are starting to get cooked add the cassava flour, salt and pepper. Cook for more 5 minutes and done!
For the chickpea coconut curry
1 tbsp of olive oil
3 tbsp of curry
2 pinchs of assafetida (it helps Vata digestion)
4 tsp of paprika
3 pinchs of cayenne pepper
250 grs of cooked chickpeas
200 ml of coconut milk
Heat the olive oil, add the assafetida and the curry. When they bubble add the chickpeas, the coconut milk, the paprika and the pepper. Cook for about 15-20 minutes in low heat.
Done! You can use your creativity to arrange the dish 😍😜 then send me your photos! I will love to recieve them!

🍫 Bounty Bars 🍫
-185g of unsweetened dehydrated coconut
-3 tbsp maple syrup
-1 tsp vanilla extract
-250g coconut oil, melted
-pinch of salt
-180g dark chocolate
Line a square baking tray with greaseproof paper.
Place the coconut, maple syrup, vanilla extract, coconut oil and salt into a large mixing bowl and, using a wooden spoon, mix until combined. 🥄
Pour the mixture into the lined baking tray and press down until compact, then put the tray into the freezer.
Melt the chocolate until smooth in a double boiler, stirring constantly. 🍫
Carefully pour the chocolate over the coconut base and, using a spatula, smooth it out and sprinkle on some coconut. Put the tray back into the freezer for about 1 hour. ❄
Once set, remove the tray from the freezer and slice into bars. Buon appetito! 😋

I recently moved, you can read all about it on the blog, and I'm pretty excited to share my current breakfast staple with you now that I've got a functioning kitchen; the struggle has been real😅
What I love about muesli is that it's the kind of thing that doesn't require cooking, can be made in advance and can be customized to suit your preferences. Almond milk, a few frozen and fresh berries did the trick for me, but it's no fuss recipe so you are more than welcome to shake things up to suit your needs and tastes.
Hope you enjoy it just as much as I am right now😋
