Split Yellow Bean Soup. My kids love soup but it usually is a starter or a side dish. This particular recipe has an Indian twist to it, to expose the kids to different flavors. My kids are 4 and 1, they can take it 😉. Ingredients:
2 cups of dried split yellow bean, soaked for about 6 hours in water
10 cups of water
2 vegetable bouillon cubes
2 Tbsp sunflower oil
1 tsp cumin seeds
1 tsp mustard seeds
5 green cardamom seeds
1 tsp dried cumin
1 tsp dried coriander
1 tsp turmeric
1/3 cup yogurt
Boil the soaked beans in the water, add more water as necessary, add in the bouillon cubes and simmer for about 40 mins or until soft.
Once soft, heat the oil in a non-stick pan and toast the cumin, mustard seeds, and cumin. Add in the dried spices and fry for a minute, add the yogurt (you can also add 1/3 cup cup of chopped tomatoes). Fry for about 6 minutes until pasty.
Slowly add the paste to the soup and once combined, you can take a hand blender to make the soup smooth, semi-smooth or fully mealy, depending on the texture you desire. For the children, we made it very smooth. #tastyveggie #vegansoup #veggiekids

Creamy Dreamy Vegan Banana Dessert!
had 6 different kinds of bananas this week and I bought 5 of them! This is a version of my all time favorite banana dessert and honestly I could eat this all day. This is the first dish with nothing from the veggie box…oh well! ...Did I mention that I bought 5 kinds of bananas today? -
This is a super simple dessert with very few ingredients that you can made in less than 10 mins. First, cook the sweet potato in the microwave for 2 mins. Peel off skin and cut into small pieces, set aside. Add 5 purple bananas or any kind of bananas 🍌 + one can of coconut milk + 1 table spoon of chia seeds, bring to gentle boil then lower the heat to simmer for anther 5 mins. Add 1 cup of almond milk, 2 table spoons coconut sugar, brown sugar or date syrup plus a pinch of salt. I added the purple potatoes at the last minutes of cooking. Serve with toasted coconut flakes and chopped peanuts. I also drizzle more date nectar from @dvashorganics.

Really, it’s the guac that’s screaming because it absolutely screams summer ☀️ I am actually preparing this guac for an upcoming recipe 😏 It’s so fresh and simple, and a guaranteed hit at any pool party or movie night you bring it to 🙌 (or if you just wanna dig a spoon in for yourself... we don’t judge & have been there before 😎)
🥑Super Simple Guac🥑:
-2 ripe avocados
-1/4 onion (we only had white on hand)
-1/4 bell pepper
-6 cherry tomatoes
-1 clove garlic, minced -Juice of a 1/2 lime
*Mash those avos, chop them veggies, squeeeeeeze that lime, mix mix mix, hearty pinch of salt, lil bit of pepper, dash of cumin and paprika, and ¡OLÉ!

De las cosas que más disfruto es hacer es “veganizar” platos típicos que pensaba no volver a comer 🤷🏻♀️
Teniendo familia costeña crecí comiendo mote de queso muy regularmente y ya hace más de un año no lo comía
Pero hoy decidí intentar cocinar junto a mi mamá, siguiendo la receta y haciendo los cambios pertinentes 😏🍃
Para este mote comencé por cocinar el ñame (una raíz similar a la yuca, clave de este plato) hasta que estuviera suave
Mientras tanto marine cubitos de tofu extra firme en limon, ajo y sal
Cuando el ñame estaba listo, lo hice “puré” junto al agua en el que se cocinó y agregué sal y un poco de leche vegetal sin dulce
Hice un hogao de tomate, cebolla, cebolla larga y ajo y lo agregue
Además, agregué cubitos del queso de marañon casero que hago, pimienta y aji dulce (parecido al pimentón)
Espere a que espesara y puse en el sartén con un poco de aceite los cubitos de tofu hasta que estuvieran dorados y listo! La sopa quedó muy similar y deliciosa! Sin embargo aún tengo que reforzar la marinada del tofu que va encima de decoración, pero si aman este plato tanto como yo, no sentirán la diferencia 👩🏻🍳❤️😍
One of my favorite things is veganizing typical dishes that aren’t vegan, so I can get creative and still enjoy things I used to love and share a beautiful time with my family. 6 Cloves Garlic
2 Sweet Potatoes (medium size, peeled and cut into 1 inch cubes)
1 Red Onion (Chopped into 1 inch pieces)
2 Carrots (Cut in to 1/2 inch pieces)
2 Bell Pepper (Cut in to 1/2 inch pieces)
1 Small Head Broccoli (Cut into small florets)
5 Asparagus Spears (Cut in to 1 inch pieces)
1 tsp Salt
1 tsp Pepper
1 tsp Chilli Powder
1 tsp Paprika
1 cup Quinoa (microwavable packet - cooked & cooled)
1 cup Brown Rice (microwavable packet - cooked & cooled)
1 cup Black Beans (tinned - drained)
1 cup Sweet Corn (tinned - drained)
4 Scallions (finely sliced)
Small handful Coriander
Small handful Parsley
1 Small Cucumber (cut into small pieces)
1 tsp Salt
1 tsp Pepper
2 tbsp Olive Oil
20 (approx) Cherry Tomatoes (Cut into halves)
Handful Spinach (shredded)
Handful Kale (shredded & lightly steamed)
1 Lemon (juice)
2 tsp Olive Oil
1/2 tsp Salt
1/2 tsp Pepper
1 Tub Hummus
4 tbsp Mixed Seeds
1 tbsp Chilli Sauce
1 tbsp Balsamic Glaze

Asian dumpling soup After watching endless videos of momos,dimsums and soups I was craving some so I made these.
For soup and filling:-
~Liquid from pickled gherkins
~Cayenne / red chillie powder
~Green Chillie sauce
~Veges of choice
~Pickled gherkins to add on top
How to make it?
Mix togetther all the sauces and spices forming a vinaigrette texture sauce.
Now fry ginger,garlic,onions and leeks. Add in veges and fry. Add the sauce and cook till dry. If the filling is wet add flour n cook. Form a dough by mixing in water and flour. Cut it in to small pieces and roll out. Fill them up and seal.
In a pan cook onion,garlic,ginger and leek. Add veges and sauce n fry up. Add water to it to form a broth. When it comes to a boil add the dumplings once they float on top boil for a minute or two and your done!
Top with chopped gherkins. This soup has a sweet-tangy flavour and combined with the soft dumplings taste great!
