Continuing with the pizza theme today, this is Sweet Potato Galette. Recipe by #forksoverknivesmealplans . There is a link in my bio if you want to do a free trial of the meal plans. It was super yummy! I totally recommend using hummus instead of pizza sauce. #hummusislife 😊 — I used a cornmeal crust from Trader Joe’s. It does have a bit of oil in it. Oops. I topped the crust with a generous amount of Trader Joe’s oil free eggplant hummus and baked it at 425°f for 15 minutes. It came out crispy and perfect. — Then i topped it with Trader Joe’s sweet potato ribbons, TJ’s roasted bell peppers and sliced green onions. I had cooked the veggies in the air fryer at 400°f for 15 minutes. They really came out the same as roasting them for that amount of time. They didn’t become crispy in the air fryer, it basically just cooked them, which was fine. — My veggies were seasoned with cumin, cayenne, sea salt, garlic and onion powder. They were supper yummy. —

CHEESY KOREAN RICE CAKES 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 👁️ 3 cups water 👁️ 3 tbsp gochujang 👁️ 1 heaping tsp gochugaru (use more if you want it spicier) 👁️ 1 tbsp soy sauce 👁️ 1-2 tbsp coconut sugar 👁️ 1 tbsp minced garlic 👁️ 1 lb rice cakes, soaked for 20 min if frozen 👁️ 1 4x6-inch piece kombu (dried kelp) 👁️ 4 oz napa or green cabbage 👁️ 2 scallions, chopped into 2-inch pieces 👁️ 2 slices Field Roast chao slices ■ Add kombu and water to a large pan over medium heat. As water is heating up, stir in the gochujang, gochuaguru, soy sauce, coconut sugar, and garlic, and bring to a boil. Allow to simmer for 5 minutes, then remove and discard kombu. Add in the rice cakes and continue cooking, stirring frequently, until rice cakes are soft (but still chewy) and sauce is thickened, about 7-10 minutes. Add in the cabbage and scallions, and simmer for an additional 4-5 minutes. Remove from heat and top with the cheese (either grated or the entire slice), and cover until cheese is melted. Alternatively, if using a cast-iron pan, place entire pan into an oven on broiler setting and heat with oven door open for 1-2 minutes until cheese is melted and bubbly. Vegan French Onion Chowder 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 ■ Ingredients 👁️ 1/4 Cup Vegan butter, I used Earth Balance 👁️ 4 Large Sweet onions, sliced thin 👁️ 4 Cloves Garlic, chopped 👁️ 2 Bay leaves, dried 👁️ 2 Fresh Thyme sprigs 👁️ 1 Cup White wine, I used Pinot Grigio (optional) 👁️ 2 Large Russet potatoes, diced 👁️ 2 Quarts(8cups) Vegetable broth, divided 👁️ 1 Cup Raw cashews, soaked for at least 8 hours 👁️ 1/4 Cup Nutritional yeast 👁️ 1 Tablespoon Lemon juice 👁️ 2 Tablespoons Corn starch 👁️ Salt and pepper to taste ■ Instructions Heat the vegan butter in a large soup pot on medium high. Add all the thinly sliced onions and start to saute them. Stirring constantly. Sprinkle with a bit of salt and pepper. Saute until they are translucent, reducing heat as needed. About 5 minutes. Now, reduce heat to medium low, and continue to cook until fully caramelized. Stirring every few minutes. It will take about 30-45 minutes to caramelize the onions. You know they are done when they are very brown and could melt in your mouth. Once the onions are caramelized, add the garlic, bay leaves, thyme, diced potatoes and white wine(if using). Simmer for about 10 minutes or until the wine is mostly absorbed by the onions and potatoes.Next, add the corn starch to the pot and toss to coat the potatoes and onions. Then add the remaining 7 cups of vegetable broth and the cashew cream you made to the pot. Stir to combine. Season with a few pinches of salt and pepper. Simmer on medium low, just so it is at a small bubble for about 20 minutes or until the potatoes are cooked through. Taste and adjust seasonings. Sesame oil 👁️ 1 tsp. Agave nectar 👁️ 1 tsp. Soy sauce 👁️ 2 tsp. Scallions, chopped 👁️ Dash of Salt and Pepper ■ Assembly 👁️ 12-18 Vegan wonton wrappers 👁️ Oil for frying 👁️ Small bowl of water ■ Instructions In a medium mixing bowl, add all the filling ingredients and whisk, or beat with a hand mixer until fully combined. Heat about 1/2 an inch of oil in a frying pan on medium high heat. Assemble the crab rangoon by taking a wonton wrapper and placing about 1/2 tsp.-3/4 tsp. of filling in the center. Using your small bowl of water, wet all the edges of the wrapper and fold point to point making a triangle. Make sure all the edges are sealed together by pressing really well. Once the oil is hot, fry 2 to 3 rangoons at a time, fry for about 1 minute on one side, flip and fry for another minute on the other side until both sides are nice and brown. DE+recipe⬇️ What are your favourite Christmas cookies? Mine are probably vanilla crescent cookies and I already made them a couple times this Christmas season ğŸŽ„. Got the recipe for you here: - 150g wholegrain spelt flower - 75g ground almonds - 1 tbsp flaxmeal mixed with 3 tbsp water - 100g vegan butter - 30g sugar - 1 packet vanilla sugar (8g) - Powdered sugar + vanilla sugar mixed to coat the cookies Combine flaxmeal and water and let sit a few minutes. In a bowl ad all ingredients and mix them together til you got a nice dough. Place in the fridge for at least 30 min. Cut the dough in pieces and form them into the typical shape. Bake on 180 degrees Celsius for 10-15 minutes until they’re slightly golden. Combine powdered sugar and vanilla sugar and gently roll the hot cookies in the mixture. Scoop out the core and a little of the flesh to make room for the filling. In a bowl, mix together the chopped pecans, spices, a pinch of salt, maple syrup and coconut oil. Fill each apple with the gingerbread pecan mixture. Place the apples in a baking dish, put the apple top back on and bake for 20-25 minutes or until the apples are soft. Serve warm with custard. VEGAN BANANA CHOCOLATE TARTS 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 ■ For the chocolate base 👁️ 110g (1 cup) oat flour – plain oats ground into a flour in the food processor 👁️ 50g (1/2 cup) ground almonds 👁️ 2 tbsp cocoa powder 👁️ 2 tbsp maple syrup or liquid sweetener of choice 👁️ 3 tbsp coconut oil or dairy-free spread, melted ■ For the banana filling 👁️ 235ml (1 cup) Planted oat drink with banana 👁️ 2 tbsp cornflour 👁️ Pinch of turmeric for colour (optional but recommended) 👁️ 1/2 tsp agar agar (optional but recommended) ■ Method Mix together the oat flour, ground almonds and cocoa in a bowl. Pour in the maple syrup and coconut oil, then press into 4 mini tart pans and freeze while you make the filling. Add the filling ingredients into a small saucepan. Mix until all the cornflour has dissolved, then cook on a medium/high heat stirring continuously. Take off the heat just before it starts to boil. Leave to cool a little, then pour into the tart bases. Chill in the fridge until set. Use gluten-free oats if allergic/intolerant to gluten 👁️ 1/4 tsp salt 👁️ 2 tbsp maple syrup 👁️ 2 tbsp coconut oil, melted 👁️ 1 cup (145g) Chilean blueberries 👁️ 1.5 tbsp chia seeds 👁️ 2 tbsp stevia or sweetener of choice 👁️ 2 tbsp water 👁️ 2/3 cup (75g) ground almonds 👁️ 1/2 tsp baking powder 👁️ A pinch of salt 👁️ 1 tbsp flaxseed + 3 tbsp water – mix in a small bowl and leave to set for 10 minutes 👁️ 3 tbsp maple syrup or liquid sweetener of choice 👁️ 2 tbsp coconut oil, melted 👁️ 1 tbsp milk of choice 👁️ 1/2 tsp almond extract ■ Start off by making the blueberry chia jam – add the Chilean blueberries into a small saucepan along with the chia seeds, sweetener and water. Gently heat over a low/medium heat while mashing the blueberries with a potato masher. Once the blueberries are all mashed up, take off the heat and leave to cool completely. The jam will set as it cools. To make the base – Mix the oat flour and salt in a bowl, then add in the maple syrup and coconut oil. Press into lightly greased muffin tins. To make the frangipane – mix the ground almonds, salt and baking powder, then mix in the rest of the ingredients. Add about 1-1.5 tsp of the blueberry chia jam into each of the bases, then top with the frangipane. Pistachio Blueberry Thumbprint Cookies 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 ■For the blueberry chia jam 👁️ 80g Chilean blueberries 👁️ 1 tbsp lemon juice 👁️ 1 tbsp stevia 👁️ 1 tbsp chia seeds ■ For the cookies 👁️ 95g oat flour – plain oats ground up into a flour in a food processor. use gluten-free oats if you’re allergic/intolerant to gluten 👁️ 105g ground pistachios – whole pistachios ground up in the food processor 👁️ 1/4 tsp salt 👁️ 1/2 tsp cardamom powder 👁️ 2 tbsp coconut oil, melted 👁️ 2 tbsp maple syrup or liquid sweetener of choice ■ Preheat your oven to 180°C/160°C fan/350°F. Start off by making the blueberry chia jam – add the blueberries, lemon juice and stevia into a small saucepan. Cook over a low/medium heat until soft enough to mash with a potato masher. Once you have a sauce like consistency, take off the heat and mix in the chia seeds. Leave to cool. In a large bowl, mix together the oat flour, ground pistachio, salt and cardamom. Pour in the coconut oil and maple syrup and mix to combine. Divide into 10 equal portions and shape into balls by rolling them between the palms of your hands. Arrange on a baking sheet lined with parchment paper and press down the middle using your thumb to create the ‘thumbprint’. Add jam in the centre, then bake for 12-15 minutes. Homemade vegan♥️Ferraro Rocher♥️ 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 ■ Ingredients 👁️ 100g 70% dark chocolate 👁️ 2 tbsp coconut oil 👁️ 3 tbsp hazelnut butter 👁️ 6 tbsp ground or chopped hazelnuts 👁️ 1 tbsp Real Health Manuka honey or maple syrup 👁️ Pinch of salt 👁️ 12 whole hazelnut ■ To decorate 👁️ Break up the dark chocolate into a heat-proof bowl. Add the hazelnut butter, coconut oil and Manuka honey. 👁️ Place the bowl over a pan of gently simmering water (make sure the bowl doesn't touch the water). Heat the mixture until completely melted. 👁️ Add the chopped hazelnuts along with an optional pinch of salt. 👁️ Leave the mixture to cool slightly then transfer to the fridge and leave for 2-3 hours to set. 👁️ Use an ice cream scoop to scoop out the mixture. Raw raspberry & chocolate tart with coconut whipped cream 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 👁️ 120g raw almonds 👁️ 60g sunflower seeds 👁️ 20g shredded coconut 👁️ 2 Tbsp. raw cacao powder 👁️ 2 Tbsp. melted raw cacao butter 👁️ 2 Tbsp. raw cacao bib 👁️ 5 pitted Medjool dates (100g) 👁️ 1/8 tsp pink salt 👁️ 120g raw cashews (soaked 4-6 hours and rinsed) 👁️ 100g frozen or fresh raspberries (if using frozen berries defrost prior) 👁️ 3 Tbsp. melted coconut oil 👁️ 2-3 Tbsp. coconut cream 👁️ 1-2 Tbsp. lemon juice 👁️ 5 Tbsp. maple syrup ■ Pulse every ingredient for the crust until well processed but still slightly crumbly. Press the mixture into the tin. 2) In a high speed blender place every ingredient for the chocolate layer and blend well until smooth. Add more sweetener if you need. Layer the filling above the base. Cool it in the freezer until set. (3) In a food processor, place every ingredient for the raspberry layer and blend well until smooth. Add more sweetener, lemon juice, and coconut cream if you need. Layer the filling above the chocolate layer. Cool it in the freezer until set. (4) Take out from the tin and let it thaw at room temperature for 15-30 minutes and cut with a warm knife. It's cubed cucumbers + tomatoes drenched in equal amounts of white rice vinegar and soy sauce. ☝🏾Instead of soy sauce I used coconut aminos ☝🏾 . . . Now I eat it with my rice, beans, veggie burgers, tacos, burritos, anything I'd like! It adds great amounts of flavor to your meal! Try it out if you haven't already!

Let us not stop with the chocolate just yet? 🙈 Have you ever tried chocolate cups with nut butter filling? It's so lovely and also easy peasy to make of course! 🤗 Recipe: 1 dl coconut oil 6 tbs raw cacao (or regular cacao) 2/3 dl sweetener (coconut sugar, maple syrup or agave nectar) About 1/2 dl filling (I used almond butter) How to: Melt together, (in a bowl over boiling water) half the coconut oil and half of the sweetener then remove from the heat and whisk in half of the cacao, when it's all even fill the bottom of cupcake sheets and put in the freezer. Then prepare the other half of chocolate filling. When it's ready and even you take out the cupcake sheets from the freezer and click in some nut butter on the chocolate, then you fill the cups with chocolate so it covers the nut butter. Put it in the freezer for about 30 minutes and then take them out and enjoy! 😘 Store them in a jar the fridge. 💖

Green Curry Recipe 🌿 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 FOLLOW🔥@healthy_hot 🔥 FOLLOW 🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺🔺 INGREDIENTS For the Green Curry: . 👁️ 12 ounces firm tofu 👁️ a swish of olive oil + a sprinkle of salt 👁️ 2 sweet potatoes, peeled and cubed 👁️ 4 tablespoons green curry paste 👁️ 3 14-ounce cans coconut milk 👁️ 3-or-so cups broccoli florets INSTRUCTIONS . 👁️ Tofu: Press the tofu with paper towels to remove water. Cut tofu into cubes. In a large soup pot, heat the olive oil over medium high heat. Add the tofu, sprinkle with salt, and pan fry for 10-15 minutes, until golden brown. Remove and set aside. Veggies: Add sweet potatoes, coconut milk, and curry paste to the soup pot. Simmer for 5-10 minutes until potatoes are fork-tender. Add broccoli and tofu. Simmer for 3-5 minutes until broccoli is bright green. My #costco used to sell these lovely mung bean glass noodles. I love them. Luckily I had stocked up before they quit selling them. I’m down to my last few bundles though. So sad. This dinner took about six minutes to make. 😊 #quickandeasydinner — The mung bean noodles only take about four minutes to cook in boiling water. I added a can of chickpeas to the boiling water just to heat the beans before draining the whole lot. — While it was boiling I made a quick peanut sauce by mixing a few tablespoons of chunky peanut butter with a quarter cup of hot water to resolve it. Then a added a generous squirt of sriracha and a good splash of reduced sodium soy sauce. I tossed in a handful of cashews because I didn’t have any peanuts on hand. — Served with steamed broccoli and #traderjoes sweet chili sauce. Yum yum!

Good evening! Brrr! Feeling chilli? How about veggie chilli for dinner?! ⠀ .⠀ It has been a cold crisp day in the UK, so to warm up, I have rustled up this chilli. It's like a hug in a bowl! ⠀ .⠀ The base is made of coarsely grated sweet potatoes (so you have some munchy texture) & I have thickened the tomato sauce with chia seeds rather than the more conventional cornflour, which also adds an extra boost of antioxidants, minerals, fibre, omega-3 fatty acids & protein. ⠀ .⠀ Do you use your chia in interesting ways? I love using it to thicken up sauces as chia seeds soak up to 9-12 times their volume & also are so good for you.⠀ .⠀ The recipe:⠀ 2 red onions⠀ 250g sweet potato⠀ 3 garlic cloves⠀ 1 tbsp coconut oil⠀ 2 tsp cumin⠀ 2 tsp coriander⠀ 1 tsp dried oregano⠀ 2 fresh chillies or 1 tsp hot chilli powder ⠀ 1 red pepper, diced⠀ 1 can (400g) of chopped toms⠀ 250ml stock ⠀ 2 X 400g cans of beans of choice, drained⠀ 1.5 tbsp tomato purée⠀ 1 tbsp soya sauce or tamari⠀ 1 tsp sweetener⠀ 100g mushrooms, chopped⠀ 4 tbsp chia seeds ⠀ ⠀ .⠀ Peel the red onion & sweet potato & roughly cut into chunks. Place in a blender along with 3 peeled cloves of garlic. Whizz to coarsely chop. ⠀ Melt coconut oil in a deep pan. Brown the chopped onion, garlic sweet potato mixture for about 3-4 mins.⠀ Then add the spices, oregano, chilli & stir for a 2 mins.⠀ Then add the diced red pepper, chopped tomatoes, stock, beans of choice, tomato purée, soya sauce/ tamari, sweetener & chopped mushrooms. Cook for 15-20 mins. Stir in the ground chia seeds.
