Here’s my Favorite Christmas recipe for you. Lebkuchen is a kind of Gingerbread covered in Chocolate. Most of the times it’s not vegan, so I created a healthier vegan version. I hope you like it.❤️
Also it’s non-vegan approved🎉🎉
60 g Coconut sugar
50 g ground almonds
40 g almond flour
40 g buckwheat flour
2 tsp maple syrup
2 tbsp aquafaba
1-2 tbsp plant milk
1 tbsp gingerbread spice
1 tsp baking powder
1 tsp coconut oil
Preheat oven to 180 C
Mix all of the ingredients for the dough. Form equal sized ball and press them in cookie shape on a lined baking tray. Bake them for 7 minutes, take them out of the oven for 2 minutes and flip. Bake for another 5 min.
Take them out of the oven and let them cool down for 10-15 minutes. During that time, melt the chocolate and the coconut oil together. Coat the cookies with the chocolate and put them in the fridge for about 1 hour. ENJOY

85mls soya milk⠀
1/2 tsp cider vinegar⠀
1 tbsp cocoa powder⠀
60g wholemeal self raising flour⠀
1 tsp vanilla extract⠀
1 tbsp rapeseed oil⠀
3 tbsp vegan chocolate sauce (or agave/maple mixed with a little cocoa powder) ⠀
Measure the soya milk into a large mug and stir in the cider vinegar. ⠀
Put the rest of the ingredients, except the raspberries, into the mug and stir well. ⠀
When it is well mixed fold in the raspberries.⠀
Microwave at 800W for 80 seconds. This will give you a cake with a little bit of a gooey puddle in the middle. If you prefer it cooked through then microwave for a further 20 seconds.⠀
Tip: measure the oil before you measure the chocolate sauce. The oil left on the spoon will help the sauce to slide off easily.⠀
For a standard size mug simply reduce the soya milk to 70mls and flour to 45g and leave the rest of the ingredients as they are.⠀
To bake in an oven use a large ramekin and bake at 180C/350F for 20 mins. Enjoy! #veganfoodspace #vegantreats #treatyoself
Here’s an idea for a Christmas lentil loaf, pals (or for any celebration really)! 👍💚 Details 👉🏼 2 cups boiled lentils (I used pardina lentils), 1 cup quick oats, 1/2 cup walnuts (crush them into small pieces), 1 cup lentil flour, 4 tbspn chia seeds (I soaked them in 1/2 cup water for 10 min), 2 tbspn extra virgin olive oil, a little bit of water if necessary (I used 1/3 cup). Swipe to see video with the mix consistency you need. Spices are the key 👀 👉🏼 1 tspn dried oregano, 2 tspn fresh rosemary (or use 1 tspn dry if you can’t find fresh rosemary), 1 1/2 tspns salt, 1 tspn pepper, 1 tspn cumin, 1 tspn garlic powder, 1/2 tspn merken (or use smoked crushed red pepper). Add more spices to your taste if you like, of course! 👌NEXT 👉🏼 Mix everything in a bowl except 1 tbspn olive oil and knead for 5-7 minutes ‘til everything is properly mixed. While kneading you will also partially crush the lentils and that’s ok! Coat a baking pan with that 1 tbspn olive oil you have left, pour your mix in the baking pan and put it in the oven at 370 F for 20 min. That’s it! 👌💚 I am serving it with mushroom gravy on top. Por aquí les dejo la idea de un budín de lentejas para Navidad chiquill@s! 👉🏼 Detalles: 2 tazas de lentejas cocidas, 1 taza de harina de lentejas, 1 taza de avena instantánea, 1/2 taza de nueces (las molí en pedacitos chicos), 4 cdas. semillas de chia (las empapé en 1/2 taza de agua durante 10 minutos), 2 cdas de aceite de oliva, y un poco de agua (swipe para ver consistencia de la mezcla en video). Las especias son la clave 👀 👉🏼 1 cdta de orégano, 1 cdta de romero fresco, 1 1/2 cdta de sal, 1 cdta de pimienta, 1 cdta de comino, 1 cdta de ajo en polvo, 1/2 cdta de merken (o usen ají rojo ahumado). SIGUIENTE 👉🏼 Mezclar todo en un bowl menos 1 cda de aceite de oliva y amasar la mezcla por 5-7 min., con eso molerán parte de las lentejas. Cubrir molde con la cda aceite de oliva que queda, verter la mezcla y hornear a 187 C durante 20 min. ¡Eso es todo! Vayan probando para que lo aliñen a su gusto, yo amo el ajo y le podría poner un kilo de ajo 😂😂 abrazos desde el sur de Chile! 🇨🇱 🤗

🔻Eggplants are rich in many types of antioxidants including nasunin -- a somewhat rare type of anthocyanin found in all eggplants. Nasunin is one of the key contributors to the health benefits of eggplants and has demonstrated strong ability to fight free radicals and reduce inflammation.
🔻One study published in Research Communications in Molecular Pathology and Pharmacology found that nasunin is a potent scavenger of reactive oxygen species and iron chelator which protects lipids against peroxidation.
🔻Another study published in the Bioscience, Biotechnology, and Biochemistry found that nasunin from eggplants protected DNA and cell membranes from the effects of oxidative stress due to it's positive effects on lipid cell membranes.

Last week I had some friends over for a very southern meal. -seitan ribs

My friends were intrigued by the prospect of an all vegan meal, but they devoured everything I made -G
Before being vegan I used to think:
-Buttt I can NEVER do it.
-Veganism is too extreme.
-What will I eat?!?!?
-I LOVE cheese too much.
-Its just not for me, idc.
& here I am on the other side.. hearing the same excuses that I once made😕
I’m going to be completely honest with you right now..
I didn’t choose this lifestyle because I decided that I no longer enjoyed the taste of meat and animal products.
I chose this lifestyle because it makes the most sense. & there is so much data proving it is the most optimal choice.
I chose this lifestyle because I realized it IS selfish to continue eating death & suffering for the pleasure of my own taste buds (which lasts about 20 minutes).
I chose this lifestyle because my body deserves to feel amazing and live a long healthy life.
I chose this lifestyle because our planet is completely suffering on such a tremendous level because of the livestock industry.
I used to think “welp what can I do, I’m just one Joe Shmoe other people should be taking care of this issue”.
I am those “other people” we ARE those “other people” it is up to US to care.
To take responsibility for our actions and make some changes that will not only benefit your health, our planet but also the billions of animals who you know damn well can feel just as much pain and suffering as you.
I truly hope 2019 will be the year for everybody to start making even the smallest of changes in regards to what is on their plate.

For dinner today a quick makhani sauce with steamed jasmine rice, vivera pumpkin and sweet potato burger and homemade naan.
The burgers have cumin and coriander as main spices, so I immediately thought to pair them with this smooth Indian sauce and a fragrant warm rice.
A perfect combo. 👌
