This moment when you just realized that you have too many workhours left and you can start your vacations 1.5 days earlier😍 I could leave my work earlier today which was really nice but i honestly also like the feeling that my help could be needed and useful🙈 but yeah, i try to enjoy this time now and son't waste my thoughts with these guilty feelings😅
Anyway, here's another savoury dinner from me!🍴Keepin' it simple as usual with baked potatoes, (it's my favourite way to eat them because i have the feeling they are the most satisfying in this way😋) a usual mountain of broccoli, other veggie leftovers🥒 and crispy fried TOFU!!😍 I actually try to avoid soy and i also didn't ate any soy for a while but i actually heared that soy is not that unhealthy here and there, so i'm eating it more often now👅
I'm off for my thursday run now👟 My arms are also a bit sore from yesterdays workout which means it was a good workout🙊 And i hope you all feel well too💕
Time for a big bowl of comforting oats:
- 1 cup oats
- 1 cup plant milk + 1/2 c water
- 1/2 tbsp chia seeds
- 1/2 banana mashed
Bring the milk and water to boil, then add all the other ingredients and cook till the porridge reaches preferred consistency. Top with whatever you like, I went for more banana, grapes, almond buttah and cinnamon💘

👩🏻🍳Recipe Share ⬇️ Vegan, one - bowl, no frills granola, fit for breakfast, lunch, dinner and everything in between.
Nobody has time to spend hours in the kitchen fixing snacks! This is a one - bowl 10 min prep wonder snack 😛
🔸1 cup oats
🔸2 cups chopped cashews (raw)
🔸2 cups chopped almonds (raw)
🔸2 cups pumpkin seeds (raw)
🔸1 cup walnuts (raw)
🔸1 cup dried fruits (be wary of fructose content though)
🔸1/2 cup oil of choice --- coconut (heat tolerant) or light olive oil or high oleic sunflower or unrefined and sustainable palm oil (avoid flax oil or extra virgin olive oil that cannot tolerate heat)
🔸1 cup unrefined sweetener of choice
--- I used sugar molasses that are lower in fructose content (Maple syrup or coconut sugar are good choices too)
➡️Everything in one bowl and bully your kids to mix it up for you.
➡️Place in pre - heated oven at 120 degrees C. (Above that temp and the good fats in nuts and seeds become destroyed) --- the heat also helps remove some of the inhibitors surrounding the nuts and seeds to aid digestion
➡️Roast it for 30-45 minutes till golden. You can also choose to give it a toss once in a while so every one gets the warmth eh.
Enjoy with some plant - based milk or yogurt! 🥛

Here’s a view of my #birthday
cake that I baked yesterday. 🎈 I used very simple ingredients but the simpler the better, right ? 😉 It is a vegan apple cake in which I’ve added dried raisins, apple pieces and walnuts ! 🍞 🍎
👉🏼 Ingredients : 100g (vanilla) soy yogurt, 270g low-sugar applesauce, 1 tsp vanilla extract, 1 tsp cinnamon, 230g flour, 4g baking powder, 225g stevia (or regular sugar), 60g dried raisins, ~300g diced apple, 100g walnuts.
👉🏼 Directions : Preheat the oven to 180ºC. Soak the raisins in warm water for about 25min and drain them. In a large bowl, mix all the wet ingredients together. Then add the yogurt, vanilla extract and applesauce and mix until smooth - add more flour if needed. Cut a 300g apple in small dices + crush the walnuts in little pieces, add them to the batter and mix well. Pour the cake batter in a greased and floured mold ( or silicone mold ) and bake in the oven for about 35min. Let cool and sprinkle with cinnamon for more taste. Enjoy ! 😋 🧡

recipe, nutella porridge 😍! This is so delicious and 100% worth trying, it’s so satisfying and easy to do (and much healthier breakfast than the original nutella 😉) 🍫🌰. Recipe 👇🏻
1 cup oats
2 cups hazelnut milk
1 tbsp cacao powder
1 tbsp chia seeds
Optional sweetener (I didn’t add any as my hazelnut milk was sweetened, but dates, stevia drops or agave syrup should work well ☺️) Toppings of your like (I added mango, cacao nibs and cashew nuts)
This mornings purple porridge! Coconut milk porridge cooked with berries that burst their lovely colours into the oats. Topped with seeds. Top notch 👌🏻#porridge

HOLY GUACAMOLE!!! CREAMY AVOCADO AND SPINACH LINGUINE
I had no idea how this was going to turn out---one of the many risks when experimenting in the kitchen hahahahahaha but it turned out creamy and rich! It's in between a pesto pasta and a carbonara. #whattheveg
Here's what I used:
-juice of 1 lemon
-1/2 cup soaked and drained cashews -salt and pepper to taste -3 handfuls of spinach or 1 bag -7 sun-dried tomatoes
-1 roasted garlic
-1/4 cup (more or less) olive oil
-a dash of dried dill
-1/4 cup nutritional yeast
-chili flakes to taste *combine in a food processor and set aside
In a large pan:
-2 large spoonfuls of pasta water -4 chopped tomatoes -1 finely sliced onion
-more salt and pepper and chili flakes to taste *saute the onions in olive oil till it caramelizes *add the tomatoes and allow to soften *add some salt and pepper and chili flakes *add the sauce you just made and stir for 5-7 minutes on medium low heat. *add the pasta water till you get the right consistency *stir in linguine
For the love of sweet potatoes 🍠✨
- 1 sweet potato (cut in half and baked until soft and golden)
-1/2 cup quinoa (I used my favorite tricolored @earthsfinestme
-4 or 5 eggplant 🍆slices for the #vegans
and bacon🥓 for the non-vegans cooked with Cajun spice
-1 small tomato
-some freshly chopped coriander, parsley and chives
-1/4 cup green lentils
-some fresh lemon juice
-1 tbsp pomegranate sauce

If you love the taste of coconut with chocolate .... you gonna love my new Bounty Bar .... creamy fresh shredded coconut, vanilla, bit of golden raisins in reach raw chovolate 💚😍🌴 🌴To make it take 2 cups of fresh shredded coconut (or unsweetened desiccated coconut), 1/4 cup of raw coconut oil, 1/4 cup of golden raisins, vanilla, pinch of natural sallt and raw coconut syrup to taste. Mix it all nicely and form the bars, freeze it for 20-30min and meanwhile prepare raw chocolate coating: 1/2 cup of cacao butter, 1cup of raw cacao powder, pinch of salt, vanilla and natural sweetener (coconut syrup/ maple /agave/stevia) to taste. Melt butter in a bowl and mix in all the ingredients on top of the water bath (keep temperature max 30-34C) till creamy, smooth consistency, cool it down. Take your bars from the freezer, cover with chocolate and drizzle with cacao nibs. Keep in fridge and enjoy! ❤
