Veggie Monday! Trying out a new flavour combination with Asian nut dressing with Swedish polka beets that are in season now. Thinly sliced in the mandolin and some fresh radishes with basil leaves makes this a very tasty salad. 💚

A little less than a year ago, I started cooking for myself nearly every day. I hated it. I would throw fits in the morning, bashing my body for being the way it is. “Why can’t I just eat normal. I hate veggies. This sucks.” By normal...I meant little to no veggies with the usual dry chicken and rice with a gorging cheat day at least once a week. ————————————————————————————
Over time, I grew to love the process. I love my relaxing couple of hours in the kitchen. I super love eating the result. My food satisfies me so much that I no longer crave cheat meals. ————————————————————————————
Eating healthy doesn’t have to suck. Eating veggies doesn’t have to suck.
I finally received the chance to share my creations! It made me really nervous. “What if he hates them. What if they taste horrible warmed up in the microwave. I haven’t cooked chicken in forever, what if it’s dry/chewy.” Side note. I’m against the microwave, but I understand not everyone can give that technology up right away. —————————————————————————
I had no idea how much this review of his would mean to me. It filled my heart up to the top. I’m beyond passionate about food and what goes into it. Food is medicine. Food is MY medicine, and it has healed me in more ways than one. I believe firmly in treating your physical body the best you can treat it. This body is all you’ve got to experience the outside world around you. It’s your home. Don’t get bogged down, literally, with all the processed unnatural foods out there. ——————————————————————————
I never thought in a million years that I would enjoy such a thing. The girl who didn’t eat a vegetable until age 20. But here I am! I will grow and improve this little hobby/business of mine as I go. For now, I’m so grateful for having the chance to put all of my effort into one person who appreciates it. I’m so proud of my results! While it may not be much, it’s huge for me! 30 days and I’m down 10 lbs!!! I’ve struggled with my weight for most of my life. I did the “fad” diets, the “magic pill”, group workouts, gym memberships that I paid for FOREVER but only used 3 whole times. After having Ezra, I knew I needed to make a change. I was 40 lbs below my pre-pregnancy weight by 6 months post-partum from just breastfeeding but when I stopped at 13 months PP I gained 20 back. So last month I decided it was time! . . .
I found an at home nutrition and fitness program that was everything I never knew I needed for success! I couldn’t imagine taking more time away from Ezra to go to the gym when I was already away from him for 10 hours a day. With this program, I don’t have to! My gym is WHEREVER I am! I don’t have to worry about restrictive diets where I have to make separate meals for my guys and me! I prepare delicious nutrient dense, family friendly meals! I have online accountability group that pushes me when I don’t have the drive. SUPERFOOD CHOCOLATE SHAKES and My Power Punch too! . . .
