Claytonia (or Portulak) is the absolute star in my winter production. While everything else is looking a bit weak or chewed up by the slugs this one is growing like there is no tomorrow.
I'm not a food, nutrition or diet expert, so what I share is mainly because of my own 'rebling against the system' and finding a managable, natural rythm for myself without getting derailed by the unexpected stresses of life - like my car battery being deader than dead this morning amd so not being able to get my son to his training sessions -
Those who follow me and who've read my previous food posts know that Im meditating on the freedom we gained through Christ and discerning and shattering the self imposed laws we set for ourselves as well as the wisdom of the world we end up bowing under because of not guarding our hearts. So in sticking to this revelation and deliberately applying it daily, I'll share my latest throw togther meal -
Steam baby beets and small sweet potato both with skin on till just cooked, but not cooked through.
Mix couscous and quinoa with coconut oil, pesto of your choice and some water.
In roasting pan spread long stem broccoli, long green beans, roughly chopped red onion. Sprinckle some sunflower and pumpkin seeds over it all. Once the steamed veg is ready mix them into the pan as well, then sprinkle the couscous and quinoa mixture over that. If you can 'stirr' it a bit, do so.
Cover with foil and pop in oven at 200°C for 20min
I had the left overs for lunch

Belize got her own greenhouse
It's Wednesday meaning it's half way through the week😫. I just want it to be Friday, so I can get cut my hair short again. I don't know why, but I always liked my hair to me short. And by short I mean, up to my neck short. Some say that my hair isn't even that long, considering that's it just reached my shoulders, but its still to long to me😅🤷🏻♀️. What's your opinion on the length of your hair?? Do you like it long or short?? Doesn't matter if your a girl or boy too. •
Stats~ baked sweet potato, brown rice, light sauteed baby Bell peppers, corn, broccoli, over a bed of spinach with hummus and nutritional yeast on the side.

(Low calorie, low fat, gluten free & dairy free)
Today for lunch: A SABICH SALAD (instead of the Israeli pita sandwich) with slices of baked eggplant, 2 soft hard boiled eggs, slices of 1/3 baked potato, my homemade Tahini sauce (with parsley), cherry tomatoes, cucumber, onion, parsley, 4 pickled chili peppers, 1 teaspoon of olive oil, lemon juice and salt. So filling, I couldn't finish it all. The pita (which is usually an inseparable part of a Sabich) is definitely unnecessary here!
