Day 105 in Vietnam.
Today was ANOTHER early start so we were up and checked out of our hotel by 7am (not before enjoying our complimentary breakfast ofcourse!) and picked up by a tour bus who took us 30min away to a harbour in Hoi An for the next leg of our adventure.. undersea walking and snorkelling! We got onto a two story wooden boat which sailed an hour off the shore of Hoi An to the island of Cham where an anchor was put down around 5 minutes from the shore. After a brief instructional video we were ready to go and the next couple of hours involved snorkelling through the clear greeny blue water and.. the best part?! Putting a giant glass helmet/fishbowl onto our heads to the walk along the ocean floor like an ancient diver and feed the fish. That was an incredibly quiet and calming experience which has really made me want to look into getting my scuba diving license as I just LOVE being under the water!! The ocean fun was all too quickly over but then we got to go in a speedboat to the other side of Cham Island for lunch.. which was at a little, private and quiet, tropical beach which had hammocks, thatch roof huts and golden sand. We had an endless supply of food provided to us at Cham Restaurant (with enough being vegetarian for me to also tuck in!) and then we spent the next couple of hours swimming, floating and drinking beers in the unbelievably warm and calm bay before our speedboat was ready to take us back to Hoi An. THIS was yet another moment of realisation that "Holy HELL I'm in Asia!!" and I luxuriated in every moment of it.. #vietnam #vietnamdiary #vietnamlife #vietnamindependenceday

Day 84 in Vietnam.
My centre is still closed for renovations so I had another wonderfully relaxed day pottering around at home before meeting up with my friend Nancy for dinner at Prem Bistro. She's not on social media so can't be tagged.. and doesn't like photos being taken so it all seems more mysterious than it is! LoL.
It's been ages since I'd been to Prem so I opted for us to sit outside as I arrived first. Which was great for about five minutes.. until the roadworks started 😂😂😂 That wrecked the peace!! But, it's such a common noise in this hectic city that we soon settled down for a catch up and almost forgot about it! Haha. We were so engrossed that I didn't even think to take photos of the divine food that we had.. DID IT EVEN HAPPEN IF I DIDN'T TAKE PHOTOS?! 😂😂😂😂😂 I can say that I had the roasted tomato and basil soup with toasted cheese croustinis (toasted baguette slices) and tofu tacos (you get three small but perfectly formed tacos with all the divine flavours of salty, savoury and feta cheesy). It's one of my favourite dishes at Prem but I wish the portion sizes were bigger! LoL. I also treated myself to a mango and passion fruit smoothie as I was craving something sweet afterwards. All sooooooooooooo good 👌 Normally I'd feel guilty about all that food but the portion sizes are half of what I used to eat in the UK and I'm still losing weight which is great! So I no longer suffer from food guilt. Something I've carried with me for most of my life. So that's pretty liberating, right?! Not that you need to know about my quirks *winks* But it's sure fun for me to realise that revelation!

So happy we got to try The Lunch Lady, catapulted to fame when Anthony Bourdain featured them on his show — No Reservations. There’s no ordering system here, you just basically eat whatever they put in front of you. 😅 They serve different kinds of phở for each day of the week. I loved the phở but my favorite was their fresh spring rolls! A must visit when in HCMC! 💖 #vietnomnomnom

Day 13 in Vietnam.
Today I enjoyed my last Sunday off for the forseeable future as I'll be working weekends starting from this week *sob* Good thing this city never sleeps so that I can still enjoy my times off! The day was pretty uneventful as I got to truly relax at my Airbnb for the first time since training started. So I did the responsible things of tidying.. laundry.. and snacking! Haha. I put my phone away to have a break from social media and I even had a nap! A complete rest. Which I'm glad I did as I more than made up for that laziness this evening! I caught a Grab scooter taxi to District 1 with the view of meeting one of the guys off my training course and his friend for dinner. HOWEVER, the driver decides to drop me on a completely random street which was apparently 10 minutes away from my destination, Bubba's Kitchen, according to Google Maps. So I set off walking to find it but 20 minutes later and it's nowhere in sight! Most frustrating!! I grab my phone to check and it turns out I've only gone the wrong way! I would never normally have issues with Google Maps but I'm being overly cautious until I get my feet and I try to never take my phone out on the street. I'll probably laugh at myself in a month or two but not right now buddy.. NOT TODAY! So.. after much walking, some wrong turns and a very hot and bothered moi, I finally get to my destination an hour late! But I still managed to get there before David and Quang who were also running late! Haha. My vegan curry was heavenly! Made up of peas, carrots, peppers, onions and potato with plain rice and nan. I couldn't finish it all so leftovers for tomorrow woooooo! After dinner we checked out the HECTIC Bui Vien street which is popular with tourists and just insane at night time. There are crowds of people, street performers, traditional Vietnamese food sellers and the atmosphere is electric! We had a wander and then ended up in Thi Pub.. a gay pub celebrating it's 3rd anniversary with live music. The singer was incredible! What an insanely energetic and loud night. I LOVED IT!

You gotta check this place out, to me, this is arguably the best Pho I’ve had to date, and I’m a proud Pho connoisseur having had bowls of Pho around Vietnam and the world, first place was formerly Le Bambou in Paris until my dad showed me this gem
Oh man, once you take that first sip, you’ll feel deprived of this perfectly balanced aromatic broth all your life, accompanied by the tender AF beef brisket which hold fine in the chopsticks until it touches your lips and immediately falls apart, simultaneously going back and forth between the beef and perfectly seasoned homemade meatballs
I teared up with joy at the last slurp but now I’m addicted, I’m craving a bowl every morning I wake up now, how did I not know about this place sooner?! 😩

When in Nha Trang, thy must eat Bò Nướng (charcoal grilled beef)! Follow the grill smell to one of the countless BBQ restaurants lining the streets, sit down, and be immediately greeted with a flaming charcoal grill for you to DIY your BeefBQ (if you’re a Veg then don’t worry- they’ve got killer grilled veg plates too!) Go to the local institution Bò Nướng Lạc Cảnh for some of the best in town (I went there 2x in 1 weekend 🙈). Just don’t fry your finger tips too 🤪🔥 @ctslaird

So so psyched I successfully made some Goi Ngo Sen (Vietnamese Lotus Stem Salad) with Deena’s recipe (and by recipe, I mean her just telling me the ingredients and something along the lines of, “A little bit of this and that ... then you just try it to see if it tastes right”). Grateful to have this master chef as a mom ... who else would make me fresh squeezed oranges whenever I’m home? Haha:)
