Here is anorher of my favourite little veggie to snack on. I cut one before dinner and eat it while cooking. 👩🍳
These beauty are a winner. Low in calories high in water and goodies.
🍊If eaten raw they have 3 times more witamin C than an orange (you want a bag of these when you have a cold)
🥕They also contain betacatene (precursor of vitamin A) and beautiful minerals such as potassium and iron. .
🍜Better raw or cooked?
To preserve the vit C content you better have them raw.
To make the most of the betacarotene instead you better cook them and add a drizzle of extravergin olive oil to absorb all that good stuff.
I usually have them raw as a snack and cooked maybe once a week.
✋Little extra tip: red ones are the one to go because the content of vitamin C and carotenoids will be higher. .
🇳🇿Capsicum. I learned to call them peppers in high school and none seemed to understand what I was talking about in NZ's supermarket. .
🇮🇹In itialian they are actually called peperoni.
If you are in Italy be aware that if you are going to order a pizza with peperoni it will have a load of capsicum on top and NO salami, sorry peeps! #itsanitialianthing

So this post is about the Rasperry Chia Jam on top of my creation.
Is easy as! ✔1 cup of frozen raspberries ✔ 1/2 cup chia seeds
I simply put the raspberries in a pan with a drop of water and let them cook for 5 minutes - low heat and with the lid on.
At this point they are soft but still moist.
Add the chia seeds and cook for another minute maximum.
Set aside for about 20 minutes and you have a fresh, healthy homemade jam. 🥞 Keep it ib the fridge for 3-4 days.... if you can 🤗
