I saw a picture on Pinterest about five years ago and it made me think of this recipe. Alas, I was without a waffle iron because what kind of lunatic would have such bulky unitaskers in a tiny kitchen? The answer, this lunatic right here. Last weekend I finally bit the bullet and using a gift card from the wedding (three years ago) to buy a ceramic waffle iron.
So today I present to you:
Spicy pecorino sweet potato hash brown waffles... with a fried egg on it. #putaneggonit
Makes 2 servings
1 medium size sweet potato grated
1 small onion grated
2 tbs salted butter melted (separated)
1 egg lightly beaten
1/4 graded pecorino Romano cheese
1 tsp smoked paprika
1/2 tsp red chili powder
1/4 tsp cumin
1/4 tsp salt
1/2 tsp freshly ground multi colored pepper
Preheat waffle iron on medium high. Set aside 1 tbs melted butter for waffle iron. Mix all remaining ingredients together separate in two portions. Spread half of mixture into waffle iron and close tightly. Cool 7-9 minutes checking so the waffle doesn’t burn. Remove gently with a wooden spatula and serve with a fried egg on top. Sprinkle with Romano cheese. Enjoy!
