Wat Tan Hor or flat noodles in egg gravy is one of my favourite noodles.This is the kind of noodles that we will normally eat at hawker stalls as they have a huge wok and fire which gives the noodles a nice smoky flavor. I have been craving for it lately after having bought takeaways several times for my mother who's recuperating from a fractured leg. So I thought why not cook it myself with my low carb kuay teow or fettuccine from @miraclenoodle
and it turned out well. The key was using pork fat and croutons which made the noodles so fragrant! . .
INGREDIENTS ▶️1 packet of Miraclenoodle fettuccine or kuay teow
200gm pork tenderloin (sliced)
3 to 4 medium sized prawns
Some mustard greens
1 thumb of ginger (sliced)
1 to 2 tsp black sauce for color
Salt or chicken stock powder and white pepper to taste
1 tbsp arrowroot powder (mix with a bit of water)
Pork fat, sesame or cooking oil
DIRECTIONS ▶️Blanch miracle noodle in normal water for 1 min and boil for 2 mins and drain. ▶️In a pan, fry the noodles until water is removed. Then add pork fat or oil and black sauce. Mix well and set aside in a serving plate. ▶️In the same pan, stir fry some oil with ginger slices until fragrant, then add pork slices, prawns and stir fry until almost cooked. Add some chicken stock or water, mustard greens, egg and seasonings to taste. Once the sauce comes to a boil, thicken it with the arrowroot mixture. Pour the sauce over the noodles and serve hot.
