Homemade quinoa salad , 😋😋😋😋😋😋😋😋😋😋😋😋 2 cups water
1 cups quinoa, rinsed
5 pickling cucumbers, peeled, ends trimmed, and cut into 1/4-inch cubes
1 small red onion, cut into 1/4-inch cubes
1 large tomato, cored, seeded, and diced
1 bunch Italian parsley leaves, chopped
2 bunches mint leaves, chopped
1/2 cup extra-virgin olive oil
1 lemon, juiced
2 garlic minced
1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
separated into individual spears
1 avocado and feta cheese for garnish ( optional)
Cranberry, raisins, parsely and green onion for garnish .

Fresh tomatoes salsa shrimp over carrots and summer squash noodles

What you, good souls, need:
12 oz. cooked shrimp 🍤
2 medium tomatoes 🍅 , chopped
1⁄2 medium red onion, chopped
1⁄4 cup finely chopped fresh cilantro
1⁄4 cup fresh lime juice
2 Tbsp. + 2 tsp. olive oil, divided use
3⁄4 tsp. sea salt (or Himalayan salt), divided use
1⁄4 tsp. ground black pepper
2 medium summer squash (or raw beets), spiralized
2 medium carrot 🥕, spiralized
1. Combine shrimp, tomatoes, onion, cilantro, lime juice, 2 Tbsp. oil, 1⁄4 tsp. salt, and pepper in a medium bowl; mix well. Refrigerate, covered, cover for 20 minutes.
2. Heat remaining 2 tsp. oil in medium skillet over medium heat.
3. Add squash, carrots, and remaining 1⁄2 tsp. salt (if desired); cook, stirring frequently, for 3 to 5 minutes, or until vegetables are cooked to desired doneness. Remove from heat.
4. Evenly divide squash mixture between four serving plates. Top evenly with shrimp mixture. Serve immediately.

Tea tonight was the best I’ve cooked for a while I think! I butterflied a chicken breast and stuffed with spinach and garlic and herb philadelphia, then wrapped in bacon and topped with rosemary and salt. I baked it in foil in the oven and served with Mexican rice, spinach and corn on the cob🍗🥬🌽 Swipe for a close up of the inside🤤

Last night was trivia night at Truck and Tap in Duluth. If you haven't been yet, go. We had a flight of porters and stouts, because to us dark beer goes with winter weather like peanut butter and jelly. Speaking of which, they serve Superstition Peanut Butter and Jelly Mead. Sounds crazy. Tastes exactly like pbj. Must try! Oh and the staff is fabulous and friendly and knows their stuff.
