The crust had been sitting alongside the eggs for a shockingly long period of time, and I knew if I didn’t make a pie soon, I’d have to toss the crust. Because the mood for baking had long since passed after successfully making that double layer pumpkin cheesecake, I stopped telling myself I needed to make a pie and instead made a quiche.
