Going on a 24ish hour road trip today and here are my supplies:
Breakfast: banana bread with PB and a banana.
Lunch: big ‘ol salad with a packet of tuna and balsamic vinaigrette.
Snacks: popcorn, Endangered Species chocolate bar, and plantain chips (wish I had some guac to go with them!)

I had someone ask me to create a post on common Celiac Disease myths so here it is!

“You’re allergic to gluten”
Celiac disease is not an allergy to gluten, it’s an autoimmune disease where if gluten is consumed, the body attacks itself (specifically the small intestine).

“You can have JUST a bite”
People with celiac disease can NEVER “cheat” on their GF lifestyle. Just a bite, just a crumb, just a spec of gluten can trigger an autoimmune response.

“It only impacts your gut”
The impacts of celiac disease go far beyond the stomach and the plate. It impacts your social life, mental health and SO much more.

“You have to live in a bubble”
CORRECTION: it does impact your social life - I meant it doesn’t have to END it! A celiac disease diagnosis doesn’t mean you can’t go out or live your life, it just means there are things you need to take into consideration. You can still eat out and go to parties 💜 you just need to adapt to doing so safely.

Spicy pork & rice bowl I made up the other night. There’s a link on my blog for an almond butter sriracha sauce - used that recipe minus the almond butter for this meal.
To kick off the Easter weekend, we headed over to the city for another delicious meal at Wheat's End Cafe. This time, we brought along my dad, who proudly declares on a regular basis that, "Gluten-free bread won't touch these lips!" Well, folks, not only did he polish off one large cheddar chive biscuit, but he ate TWO! Ha-ha, Dad! You ate GF bread and loved it! ❤️ Noah's favorite is their pizza and I always order their fabulous turkey panini with brie and fig hazelnut jam. So good, guys! Califarmia is one of my favorite food trucks in Nashville. They’re extremely nice and they always have one or two gluten free options! They’ll also change gloves if you ask them to!
They were unfortunately sold out of the Coconut Bang Bang Bowl (it’s my fave!!), so I opted for a Burrito Bowl instead. 😍

Making my Easy Bready Corn Tortillas—with their incredibly chewy texture and classic flavor thanks to one of my fave naturally #glutenfree
flours, masa harina 😋 Make the recipe👇
1. In a large bowl, whisk together 2 cups Silvana’s Kitchen Multi-Purpose Flour, 3⁄4 cup masa harina, 2 teaspoons baking powder and 3⁄4 teaspoon salt.
2. Add 5 tablespoons shortening and, using your fingers or a fork, blend together until coarse crumbs form.
3. Add 3⁄4 cup plus 2 teaspoons lukewarm water and stir with a fork to combine.
4. Working on a piece of parchment paper, knead the dough until smooth. Divide into 12 pieces, shape loosely into balls and cover with plastic wrap.
5. Heat an ungreased cast-iron skillet over medium heat. On a piece of parchment, cover 1 dough ball with a piece of plastic wrap and flatten with a glass pie plate, pressing down gently and evenly in a circular motion to form a circle.

I may be a day late for Taco Tuesday but it’s always a good night for fajitas! The one-pan method is now the only way I’ll make them because it’s SO easy!
1 yellow squash, sliced in strips
1 zucchini, sliced in strips
1 green bell pepper, sliced in strips
1 orange bell pepper, sliced in strips
1 red bell pepper, sliced in strips
1 red onion, sliced in strips
salt & pepper, to taste
1 tsp oregano
1/4 tsp garlic powder
1 lb flank steak
1 tsp cumin
2 tap chili powder
1 tsp paprika
•Preheat oven to 425 degrees.
• In a bowl, add cut squash, zucchini, bell pepper and onion. Drizzle olive oil and add salt, pepper, oregano and garlic powder. Toss so everything is evenly coated.
• In a small bowl add salt, pepper, cumin, chili powder, paprika and a small drizzle of olive oil. Mix it all together to form a paste. Rub it on both sides of the meat. •Line sheet pan with parchment paper (for easy cleanup!). Lay your meat in the center of the pan and then arrange your veggies all around it (try not to overlap)
• Put in oven for 13-15 mins then broil 2-3 mins to brown top or until steak reaches your desired doneness. •Take pan out of the oven and let cooked meat rest for 10 minutes then cut into strips. •Top with lime juice, cilantro, avocado and any other toppings you like!
• Serve with tortillas or over rice/cauliflower rice

There are no waffles like gluten free mickey waffles at Disney World 🐭 🥞 These come from Boma’s at the Animal Kingdom Lodge, by far one of my favorite places to eat at Disney World 🎢 Yes it is a buffet and typically those are dangerous for those with Celiac but not here❗️Read my full review to find out why Disney World is the best at handling safe gluten free eating, especially at Boma’s buffet
