I can’t believe that today is my last day of maternity leave. I’ve had an absolutely amazing time with my little cub (even with the first 5 months of no sleep, anxiety and exhaustion!). It's my weird looking congee (with cauliflower) again. 🤣 I realised that I'm feeling pretty yukky again, because I took probiotics and fermented foods. (I honestly forgot when I ate the KIMCHI in Taiwan, and haven't been right since.) I've been red, and had red, dry eyes all through the fasting. And fasting was HARD! So, I'm hitting the Instaclear again. I should remember that me and PROBIOTICS are not buddies! 🤣 In fact, I think this ALL STARTED back in 2012 when I started taking Kefir, and making KIMCHI. That first overgrowth that lead to diarrhea and antibiotics, was the start of this crazy journey!

Burrito bowl with Mexican Calabacita. The calabacita ("little squash") 🥒is something new to me and part of my efforts to try new vegetables. As a child, I was a very picky eater, especially when it came to veggies🍆. There were few that I liked and I had a particular dislike of zucchini or any type of squash😜 After being vegetarian for over 30 years, I have learned to like a lot of veggies that I didn't before (eggplant, kale, bell peppers...) but squash was not one of them. We've been going to the farmers market every Saturday and there is one booth that is "fill a bag for $5" (of course I bring my own reusable bag). So we were filling up our bag and they had these interesting little squashes -calabacitas. My boyfriend convinced me to get them AND a zucchini, so I am trying to get over it and give it a try. The lady at the booth recommended cooking it with onions and chilis🌶. I had some ingredients leftover from the stuffed peppers I made the other night, including roasted chilis 🌶from the FM, corn🌽, and tomatoes🍅, so I threw it all together in a pan. I served it in a bowl with some pinto beans made in the Instant Pot, brown rice, homemade guacamole🥑, salad, and salsa. It was delicious and I couldn't even tell the squash was in there! So, I can't say that I am in love with squash now, but at least I am trying new things! What I eat in a day. Many people ask me what I eat, as a vegan. So, I thought I would show what I ate today. The only thing not pictured is dinner, because I haven't eaten it yet! But, I plan on eating sauteed spinach, air-fried potatoes, zucchini and beans in a cashew sauce. Breakfast was oatmeal with raisins, pb, and flax seed. My morning snack was a smoothie which had an apple, carrot, ginger, 1/2 banana, protein powder, nut milk. Lunch was mixed greens, rice, beans, and avocado. Very simple, very easy. This is pretty much my norm. But, I also like making other foods such as vegan mac and cheez, vegan burgers, cauliflower everything, Chinese food, etc. Eating vegan never gets boring for me. There's such a variety of foods, what you can make is endless. It can be easy as shown above, or more complex if you like. It's totally up to you! Got home from the supermarket to cook roast chicken, and my chicken was OFF! 🤢 My first home delivery, and my first 'mistake' was listed as broccoli and cheese... so I naturally thought that's what it was... It wasn't, it was cheese sauce and potato with broccoli... so naturally it contained (I'm assuming) flour, and starch. 🤢 Ate it anyway... and reacted... I worked gently through it, icing my nose to reduce the swelling, using a tiger balm to clear my nostrils, and used my neti pot. 🌸 Mostly getting through these episodes is not panicking... so, I put on my oxy pulsometer and I stretched. 😖 I'm not sure which one affected me, I'm assuming the wheat. But it may have been the potato also; which means I have to start my elimination/reintroduction diet thing again... otherwise I can't tell which one... Arghghghghg...

Food boredom is a slippery slope back into food habits that don’t make us feel our best. That’s why I want to help you avoid it. . Does this sound familiar? Find a new recipe you like. Cook it four weeks in a row because it’s easy and tasty. Then you get bored... and trying another new recipe seems like a lot of work. So you go for the ready made freezer meals in the supermarket because it’s easy. Or you start picking up takeout for dinner... every night. . I don’t have anything against ready made meals or takeout... but I think we can all agree that eating them repeatedly for days on end makes us feel like shit. . But what if you NEVER got bored of your own cooking? What if you were confident enough in the kitchen to try new ingredients and recipes every week instead of trying new things after falling down the food boredom slippery slope? Eating home cooked food frequently can help you reach whatever goal your after, whether it’s getting more veggies in your diet, saving money or saving time... the list goes on. . I know what holds us back. Fear of failure (we don’t want to try a new recipe only to find it doesn’t taste good), not knowing what recipes to choose because there are SO MANY, and our own beliefs that we aren’t “natural cooks.” .
