Luuunch!! I’m so incredibly excited to find these gluten free wraps from @grimmsfoods (found them at my local Safeway where I usually neeever shop)... (seriously today was my first time there in over 8 years)... they are the first gf wraps I’ve found that either A)don’t taste like corn dust, or B)don’t crumble into bits and pieces when I wrap them 😒. #weighinwednesday 💪 so another 1.5 ⬇️ don’t let anyone tell you it’s easy and it happens over night ‼️ who ever or whatever claims that is probably feeding you a line or selling you something unhealthy❗️I’ve tried it all all the pills and quick diets you can think off and sure you can drop 10lbs if I drink water pills but it’s not sustainable❗️ put in the work eat clean and have patience with yourself, patience with the time it and takes and patience when the weight stalls(not that I’m stalling just not moving fast ⚡️) because with some time slowly but surely you will see progress... so there is my little pep talk to myself and anyone reading because for me this result is a little bitter sweet, I wanted to see 3/4lbs down but instead -1.5 down somethings better then nothing 💁‍♀️ I tried really hard all week didn’t have many sweets, ate my veggies, stuck to my ingredients when I ate out only ordered salads🥗 but I could’ve drank more water, probably needed some more fat (even though i made fat bombs-will share on another post), and could’ve worked out more 🙄will keep pushing and maybe stop being so hard on myself 😬because end of the day a win is a win 💃
Dinner | Chicken-Pasta Salad with corn, red bel pepper and cucumber-yoghurt dressing 🥗🍗
Tuscan bean Stew......and loads of it. It's lasted the two nights dinner and probably lunch. Big pot of wholesome veg. Peel & slice onions. Fry with some oil in a large pan. Peel & dice carrots & add to onion. Next add Rosemary leaves to taste. Fry together for 5 mins. Peel & chop garlic to taste. Cut unpeeled potatoes into cubes. Add half of your garlic to the pan & cook a minute. Add the potatoes , some passata, 1 tin of borlotti beans, 1 table spoon of bouillon powder & boiled water( measure by eye) . Cut some cherry tomatoes & spinach, add to pot, cook until done & season to taste. ( measure by eye ) I served with pita bread heated in the oven. Using the left over garlic & 1 table spoon olive oil, mix in a bowl. Then break the bread in pieces and dip in the oil & oven heat for few minutes. Serve together with a dollop of green pesto. In all honesty shame I have so much as Panda 🐼 hasn’t been feeling. He barely touched, well only to throw around the room 😂. #whatiatewednesday : brutally honest edition. I'm sorry you guys have to look at these ugly eggs but I'm just trying to keep it real lol. I suck so bad at making eggs, and it's also not a meal I *particularly* enjoy... But that Kerrygold herb butter goodness makes them pretty tolerable and they're great for a quick dinner. I sauteed 2 eggs in the melted herb butter and then topped with 2 slices of sharp cheddar cheese. I paired them with an avocado with salsa, sour cream, and Mexican seasoning. I actually only getting through half the avocado before I got full, which is kind or a shame but I'm learning to trust my body's queues more these days. Now I'm headed off to do my workout (upper body day). I'll let my body decide whether it needs more calories afterward and report back. Just remember, strict calorie limits are a lie. Eat if you're hungry. Anyone else start their #septemberwhole30 on a random Wednesday like me? 😂 I actually had a couple people message me that they were starting when I did because they needed the motivation, so I know you’re out there. I believe this is my 7th round in the past 4 years, oddly enough this round is less about the food for me and more about establishing routine/habits/normalcy in my life. My life has been upside down since the death of my sister in February + add a move to Alaska in there, yea things have been hard. I’m hoping that by doing this round of #whole30 + @msrachelhollis last 90 days challenge I can settle and feel “at home” with myself. ## Week 1 breakfasts will consist of these veggie egg “brownies” + hot sauce + mayo. I’m calling them brownies because I googled this pan and that’s what it is- I never knew there was even such a thing as a brownie pan. Anyway these brownies contain bell peppers, onions, garlic, kale, grape tomatoes, salt and eggs. Good morning! How is your week going? Starting to get those weekend vibes slightly prematurely, as spring has most definitely sprung, meaning lots of fresh air, freedom and outdoorsy fun and games to look forward to. . . Throwing back to last night’s bowl, which was a light, bright, veggie packed one, after a huge, late sweet potato-full lunch. . . Having been utterly bowled over by the beautiful scenery on what was intended to be a relatively short beach walk, I ended up wandering off the beaten track, getting a little bit lost and having to run most of the way back partly to avoid any snakes/spiders/murderers lurking in the long grass and partly to avoid a hefty fine from the traffic warden over the soon-to-expire ticket on my car. . . The apple and bottle of water in my backpack, quite frankly did little for my energy levels, but a winning combination of slow release carbs and masses of protein from sweet potato, hummus and quinoa, with a healthy side of greens, almonds and avocado, absolutely hit the spot. . . It’s worth listening to the body and eating intuitively, as in the long run, it definitely beats restricting calories and dieting any day of the week. It’s all about making sustainable dietary and lifestyle changes to maintain health and nutritional balance. . . Garlicky cauli, broccoli and raw carrot ribbons over spinach, kale and edamame, dressed with balsamic and soy and topped with pepitas. Plenty of fibre, heaps of antioxidants and most importantly, seriously yummy! . . Happy Thursday! Have a lovely one, whatever you’re up to.... . . 💜🚗🐍🏖🏃‍♀️🏖🕷🚓💜

I have tried lots of whole grain, high protein waffle and pancake recipes but none have measured up to our picky eaters standards like the kodiak mix from Costco. We add extra eggs for more protein and they are perfect everytime. With 2 weeks until my due date I am prepping as many freezer meals as I can including a huge batch of these waffles for easy self serve breakfast for the kids. 2 minutes in the toaster and they are perfect!

Ok, so... I actually like this granola. . I have to admit, I’m a bit of a granola snob😬 But I think you have to be when it’s so dang ‘spensive and comes in tiny bags. When you finally give in and it doesn’t even taste good, it’s especially disappointing. I’ve thought, “Well, I’ll just have to make it myself!” HA! Like that’s ever actually happened. Maybe someday. For now, I finally added the Einkorn Granola to my last Young Living order and I love it! As do the kids👌🏻 I’ve eaten it as cereal and here it is on top of coconut yogurt with fresh figs. Mostly, though, it’s the perfect postpartum snack straight from the bag in the midst of the madness. . What the heck is Einkorn? Einkorn is the oldest form of wheat. Ingredients: makes 12 muffins. 2 cups almond meal 1 cup old-fashioned rolled oats 1 grated zucchini 2 grated carrots 2 teaspoons ground cinnamon 1/2 teaspoon turmeric 1/2 teaspoon ground pumpkin pie spice 1 teaspoon baking soda 1/2 teaspoon sea salt 3 eggs, beaten 6 tablespoons melted coconut oil 1/2 cup dark maple syrup 1 teaspoon vanilla 1/2 cup dark chocolate chips 1. Preheat the oven to 350°F. Grease a 12-cup standard muffin tin with coconut oil. 2. In a large bowl, combine the almond meal, oats, dark chocolate chips, cinnamon, turmeric, pumpkin pie spice, baking soda, and salt. 3. In a separate bowl, mix together the eggs, zucchini, carrot, coconut oil, maple syrup, and vanilla. 4. Add the wet ingredients to the dry. 5. Bake the muffins for about 25 minutes. Stick a toothpick in the center of a muffin and it should come out clean, if not bake for a few more minutes.
