Ingredients for the black beans / rice yummy side: 🔸1/2 cup black rice 🔸1 tin organic cooked black beans, drained 🔸Around 2 heaped tbsp of coconut milk 🔸1/4 tsp chopped garlic 🔸S&P as desired (go easy on salt before 12 months) . Method: 1. Boil the black rice to packet instructions. 2. Once the rice is cooked, add everything to a frying pan and simmer for 5 - 10 minutes. 3. #werejammin 🧡🎶🍑 😜 . So who wants THE EASIEST jam recipe ever?? Like, you are done in less than 30 mins of hands-on (if you can even call it that) time! Oh, and it’s a refined free, plant based version of the stuff we like to put on errrrthing around here. Plain greek yogurt and breakfast oatmeal are transformed a ‘special treat’, as my girls call it 😍 and (natural) PB&J sandwiches are back on the menu as a nutrient lunch (or late night snack!!) 🙌🏻 #winning . NOTE - I use this same ratio of fruit, natural sweetener and chia seeds in ALL my jam recipes. (se comments) It's really THAT simple of a process!! Raspberry and blackberry are delicious but a little seedy, so keep that in mind! Our fav so far is strawberry handsdown!! . This jam recipe is now a permanent item in our meal prep and meal starters lineup! The process is EASY, we usually have everything on hand (leftover fruit from the week or in the freezer). I made this Mango Peach version on Friday to be the sweet jammy layer in these oatmeal jam squares - which we served to our friends with the EASIEST homemade dairy-free ice cream! . . MANGO PEACH CHIA FRIDGE JAM 3 cups of Frozen Mango 1 cup of frozen peaches (what I had left on hand) 2 tbsp maple syrup 3 tbsp chia seeds 1 tsp of vanilla (optional) . Leave the frozen fruit on the counter until partially thawed (fully thawed works too!) and then dump into the blender with the maple syrup! . Blend until its a puree and then dump into a sauce pan and place over medium heat (stirring occasionally) . Once it bubbles up, remove from heat and add chia seeds and stir. . Put back on burner over low heat and cook for 15-20 mins, stirring occasionally but more often towards the end - you can stir the vanilla in right before you think it night be done. And you’ll know it's done when it gets thick and sticks more or less to the back of your spoon (you know, jam consistency 😜😋) . Place in glass mason jar and let it cool, uncovered, on the counter until just warm. Cover and keep in the fridge for 2 weeks, maybe even longer! (there’s never any left by then! 🙈) . I have added pieces of broccoli, peas, carrot in it and used grated paneer along with crushed basil for garnishing. Is it really Monday already?! Since summer break started, I swear that I’m totally lost in the days of the week 🤦🏻‍♀️ and this weekend was Ethan’s first time ever sleeping away from home with his grandmother. Austin especially misses him and woke this morning crying, asking “where is my brother? He isn’t in the top bunk”. 😭 But Ethan is having a blast and I’m realizing he is growing up and isn’t as clingy to mommy any more and likes his independence. so bittersweet! . . In an effort to cheer up Austin, I made some of his favorite Mickey Mouse waffles which are made with gluten-free oat flour (I use @bobsredmill gluten free oats and grind them in my Vitamix until it’s a flour-like consistency)-recipe on my blog😉 While he prefers them plain, I top mine with some cacao nibs (basically a raw, pure form of chocolate that has no sugar added to it) and of course nothing is complete without a nut butter drizzle. Does anything make tots hungrier or sleepier than playing in the pool? I think not! 💦 Tonight’s post-swim din: filet mignon (I was feeling fancy 💃🏻), roasted asparagus, @annieshomegrown mac & cheese, plain @stonyfield whole milk yogurt, and chopped veggies with vinaigrette. I made the mac & cheese as a gateway food because the tots haven’t loved steak in the past. Turns out I didn’t need it (though they still gobbled it up) because they each ate an entire filet! (The hubs and I had filet mignon + roasted potatoes + corn on the cob + asparagus after the tots were in bed). . . . The younger tot (20 months old, teal plate) had seconds or thirds of everything except the asparagus. 5 minute Easy Mac & Cheese This is a really quick dish that can be whipped up in no time. Heres what you'll need: 🔸2 tablespoons of unsalted butter 🔸2 tablespoons of plain flour 🔸1 cup of warm milk 🔸1 cup of mild cheddar cheese ✔In a saucepan, melt the butter, then add the flour and whisk till all flour is mixed through. ✔Slowly add in the warm milk a bit at a time, stirring continuously. Fruity curry for dinner with greens for #champions with pilau rice @tildarice. Hooray we actually found some since our move here. This is a quick recipe using @pataksuk butter chicken sauce. A team effort with mum. Tastes so so good. Thank I have over 50 follows 😀🤩which is not alot but means so much. . Diced chicken (2breasts) Pataks sauce butter cream 1/4 jar 1/3 cup water Thinly sliced apple anyhow 1/2 onion diced Optional almond Natural yoghurt 1/2 cup How to..... in a pan Saute onion, then add apple and saute few mins. Add chicken and turn till sealed (few mins) Add pataks paste and stir Add water and mix in with spoon. After few mins, add yoghurt and stir. Simmer 10mins. Finally taste mmmmmm add more yoghurt if needed (you can use cream). Serve with greens and rice top with almonds and coriander. Pumpkin oat cookies! A nutritious option your whole family will love (or at least my whole family did!). 1 cup regular oats 1/2 cup pumpkin puree 3 tbsp cup honey or maple syrup (optional) 4 tbsp nut butter 1/4 cup flax meal 1 tsp pumpkin pie spice or cinnamon pinch of salt Mix ingredients together. Form into cookies and flatten. Bake at 350f for 11min then allow to cool. ✌🏻

Dinner Fairly speedy, and simple dinner tonight. Grass-fed ribeye from @butcher_box , roasted cauliflower with avocado oil and garam masala, and salad with chili olive oil. I try to fill my plate with at least 50% vegetables, so that usually means 2-3 vegetables at each meal. I wish I could take the perfect food picture but it’s school holidays, I was distracted plus I’m not a great photographer and the top is slightly darker than it should be 😂 In saying that we love banana bread but I never feel it’s that healthy. I ordered the @foodtonourish banana bread mix which is full of super healthy stuff and no nasties. We all demolished this loaf over 3 days. So easy to make and so delicious. Fish & Chips for Friday night dinner. I got some fresh cod fillets and coated in flour , dip in egg and covered in some breadcrumbs, with oven baked potatoe fries, and of course some mushy peas. I dont make fish very often as I have this weird phobia of fish, but my family love it so big girl pants on today , baked some fish, and I really enjoyed it!! You know I like to be honest with my food wins and not so good food moments with my kids as well as my cooking so today I want to tell you a story about one of my not so good food attempts 😂 - We had fish tacos Thursday night. I am still on the hunt for better wraps than I can find here in the Supermarkets in Sydney. Most wraps have lots of additives which I think helps them to stay soft but are not ideal. - I have had one attempt making my own flatbread which didn’t work. This time we had a lot of excess broccoli from our coop shop so I thought I would try broccoli tortillas instead. - I made up the mixture ahead of time and then because it was school holidays I ended up having a huge day out with the boys. So when I got home I barely had time to make the fish tacos and I def did not have time to make the tortillas. So we had taco shells instead 😂 - Now I had all this leftover broccoli mixture so decided to turn them into broccoli cheese breads for a snack for us after our trip to the zoo the next day. So I got home, made up the mixture and cooked these amazing looking broccoli cheese bread sticks...... guess what, both my boys refused to eat them 😂😂😂. - Oh well, I ended up eating them for dinners and the boys had homemade hamburgers! I love being adventurous in the kitchen and I love playing around with veggies and seeing what I can make but there are still plenty of times I don’t get it right! #kidslunchboxideas Lunchbox today is about comfort food and Little A insists on something with cheese! . 👉 For breakfast, it's Mix veg and Cheese bread sticks along with ketchup. I took multigrain bread for this. The filling consists of potatoes, capsicum, carrot and italian seasoning. And the top is grated cheese. Apply butter on the bread, spread the filling, sprinkle the cheese on top, place it on a oil smeared pan and cover it for about 3 to 5 mins or till the cheese melts. Perfect cheese toast is ready. I cut them like cheese sticks as it will be easier for Little A to eat. . 👉 On public demand, it's banana walnut cake. . 👉 For lunch, it's Peas pulau or peas rice along with grilled paneer. I have added ghee, cumin seeds, peas, and a bit of garam masala in it. I use homemade garam masala, so it's really flavourful. Sprinkled some chopped spring onion strands on top. For the grilled paneer, I marinated the paneer in a mixture of hung curd, garlic, a teaspoon of mustard oil, salt and pepper. Keep it aside for 15 mins and then grill it on a pan. Let’s talk #brainfood . Our family is pretty blessed with good eaters, but I still like to play the ‘how far can I push my kids?’ game when it comes to food. 😂 Yesterday’s lunch was baby spinach leaves, apple slices, mushrooms, almonds and cashews. The girls were hesitant on the leaves, but happy to put them between apple and mushroom slices to make “sandwiches”. 😉 They ate everything except maybe 50% of the spinach, so I’m calling it a definite win! Dinner: Chicken satay burgers with peanut-coconut sauce (recipe from @weelicious ), carrot spirals (frozen section at TJ’s), @stonyfield plain whole milk yogurt & edamame. . . . As soon as the tots sat down to dinner, the older tot said, “I’m not eating the carrots.” Do you know what I said? “Okay.” While I have a loose rule that they have to taste everything on their plate, I really didn’t think it was necessary to make a big deal about it. I didn’t want him to feel any pressure or exhibit any resistance if he already felt so strongly about not eating them. After all, I know he’ll eat raw carrots. But midway through the meal he tasted them—twice! He declared he didn’t like them and I told him that was fine. I think it was because he didn’t feel any pressure that he actually decided to take a taste. Who knows whether it would work this well again in the future, but I guess it’s food for thought 😉 . . . The older tot (3 years old, blue plate) ate his chicken burger, 2 tastes of the carrots, 3 servings of yogurt, a few pieces of edamame, and (not pictured) an entire orange bell pepper sliced & dipped in ranch and a cup of nice cream made with bananas, strawberries & cauliflower rice. Sweet potatoes are a staple in our home. Delicious, super affordable, they keep well, but best of all they are so freaking good for you!!! They contain a crap ton of Vitamin A, which not only boosts your immune system, but aids in tissue repair and helps with inflammation 🙌🏻 It's such a simple vegetable, that can be made sooo many different ways - but around here, we like to keep it super simple! (See comments for my recipe) . I know, I know...the sweet potato trend was so over years ago, but remember I’m here to help you change how you THINK about healthy eating and wellness...and remind you feeling good again can be as EASY as preparing these nutrient-packed mofos! . It seriously only takes (especially at the beginning) a few little changes here and there, to feel AMAZING! One of the easiest is a simple veggie with every meal. Yep, including breakfast - especially if you want to kick start your system and start feeling better FASTER! . My favourite breaky veg is, you guessed it, the 🍠. I’ll eat it one of two ways in the AM with my eggs and berries - depending on what is leftover in the fridge! 🤷🏼‍♀️ . But making said miracle veg on the daily DOES NOT need to be a make work project either. Roasted, they’ll keep in a glass dish for 5 days 🙌🏻 Another option is to pre-dice all your 🍠 and store them in water (they’ll keep for 5 days too, preservative free!!), and take 2 mins to dry and season (see comments for the recipe!), before popping them in the oven for 14-16 minutes. FAST AND EASY! . Our other fav way is as fries (I mean, who doesn't love sweet potato fries?) ….which I have no problem admitting, are usually frozen and pre-seasoned and purchased from Costco. 🙋🏼‍♀️ These ones are organic without too many ingredients added, and contain way more naturally occurring (and easily absorbed) vitamins and minerals than say a piece of bread, or a side of kale that never actually gets eaten!! 😝🙌🏻 . On a side note, cold sweet potato fries ROCK IN KID LUNCHES and WILL GET EATEN!! 🙏 . Sustainable change can happen! Small and easily managed adjustments, taken on one at time. And eating nutrient dense vegetables daily, is a pretty sweet place to start!
