I got a lot of messages about this bread so I’m sharing the recipe again. It’s one of those things that I wish I always had on hand. It makes even the simplest sammie rich in protein, fiber and fat, which are the key components in feeling satiated and staying full for hours.
I wish I could say I felt satiated and full for hours right now, but let’s just say my heart is full, my mind is satiated and my belly is... well, not. #globalfastingweek
➕ bread: 1c raw buckwheat groats + 1/2c raw quinoa + 1/2c sunflower seeds + 1c pumpkin seeds soaked overnight or at least 2 hours, then drained well + 2TB flaxseeds + 2TB flax meal + 1TB sesame seeds + 2TB chia seeds + 2TB hemp seeds + 4TB psyllium husk + 1tsp sea salt + 3TB coco oil + 2TB maple syrup (optional) + 1.5c water. mix all ingredients, pour into lightly greased or lined loaf pan. bake 350 for 60-90 minutes, then remove from pan, flip and bake another 30 mins or so on the overnight rack or on a cookie sheet until golden and hollow sounding when tapped. wait until cooled before slicing. best when toasted.

My microwave broke yesterday and lemme tell ya, as a mom to a small farm of children, I NEEEED a microwave. So after 4 hours of research and reading reviews, I've decided I hate people who leave reviews and bought the one that was the prettiest for the size we needed. The end.
But then I may or may not have come across a pretty good sale on the fiestaware dishes I've wanted since I was a teenager and am contemplating spending $250 in dishes...along with new silverware because what's new dishes without new silverware?! And then I started looking at new utensils to match and realized my online cart had $550 worth of stuff in it (I got distracted and picked 2 pairs of shoes too!), told myself my hubs would absolutely murder me if I bought all this right before Christmas and went to bed...but I still think I'm going back for the dishes guys.

Ok, I kinda got fancy and prepared this delicious guacamole but... as my son looked at me with huge disgusted eyes, I knew, I made a big mistake🤣How could I forget his extra portion without(!!!) the onions😱🙈? We Might Be Tiny - Ice block moulds
I have been waiting to get my hands on one of these since Feb this year when My hubby and I visited the Trade fairs in Sydney. .
When it comes to iceblock moulds I have tried my fair share of moulds including some expensive $50 set that my kids decided to chew on the non replaceable sticks.
When it comes to moulds I am always looking for the following.
👉easy to clean 👉child friendly
👉 dishwasher safe
The We might be Tiny moulds ticked all my requirements and more. The lid saved me from cleaning up a spill - when Luca demanded to place in the freezer. The sticks were easy enough for my kids to insert (and release when set). .
Clean up was a breeze thanks to being dishwasher friendly and a great little bonus is that they are oven safe. Can’t wait to test them out as banana bread. .
Would I recommend the moulds - Yes! I am planning the purchase another set and some spare sticks early next year to stock pile for ice blocks for the freezer. 3 moulds are great but when you have 4 children - a stock pile is imperative.

As everyone knows California Bay Area traffic is nuts, it can easily take an hour just to go 20 miles. I like to have a back up snack bag in the car. I keep all their favorites, usually two of each to prevent fights, in a large ziplock bag in the car. I store it in the car either in the center consul or in the pocket behind the seat. It’s nice to have a back up supply of snacks for when the kids starts whining and the cars stop moving! I always stock my “mom backpack” with mandarins and @gocontigo
water bottles and a handful of typical snacks but when those run out and they get hungry we dig into the emergency stash. Check out my stories where I talk about this!! @target

Back to packing 4 lunches today, two of which are for newly minted TEENAGERS 😱😱😱
I know what a lot of people are probably thinking... if they're 13, they're old enough to pack their own lunches. Why are you enabling them???
My twins will only be under my roof full-time for 5 more years. They are proud of the lunches I pack for them. They compliment and thank me for them. They know it's hard work, and they appreciate it. They've tasted and seen school cafeteria food, and value their healthier, tastier bento lunches. I'm not packing lunches for obnoxious, ungrateful teenagers. At a school conference last week, one of their teachers told me that they're unusually grateful boys, not the least bit entitled... the kind of boys that the world needs more of.
My packed lunches are also an education in healthy eating habits. I won't be able to control what they eat when they go to college, but I have faith that they will listen to their bodies and make wise and healthy decisions.
Anyway, nothing new to see here. Moses and Asher are big fans of these frozen organic grassfed burgers from Aldi. I'm just happy to have found a protein other than peanut butter that Asher will eat. And the muffins are almond flour cornbread, sweetened only with raw honey. .

Mis chicos aman pochoclo asi esta merienda fue un éxito con un pochoclo salado con oregano y hecho en casa. Siempre uso granos de maíz orgánico porque el choclo es una cultiva que posiblemente puede ser genéticamente modificado. Ademas la merienda tenian manzanas crujientes, frutillas deliciosas y frutas secas. Tambien vasos de agua, aca en casa nunca hay gaseosas, ni jugos artificiales, pero si siempre hay te, jugos naturales, licuados y agua. Comieron todo 💚
🇬🇧🌟The after-school snack of my kids 🌟
My kids love popcorn, so this snack is always a hit. Today they had homemade salty popcorn with dried oregano. I always use organic corn grains as corn could be possibly genetically modified in Argentina. Further they had crispy apples, delicious strawberries, dried fruits and water. At home we never have soda or artificial juices, but if there is always tea, natural juices, smoothies and water. They loved it all 💚
When the temps drop below 60 in Texas, we make chili!❄️🇨🇱 Make your own bowl of chili for lunch complete with cheese, Fritos, sour cream and a mini cornbread muffin. Stay warm, friends! ❤️
Happy Monday everyone. We've had a lovely lazy weekend and I'm a bit sad for it to end. I need to get back on it though, I've got some work to do and the house is a mess so needs a good tidy and clean!! I've got a wash on and the dishwasher unloaded already so feeling positive for a productive day!

This is one of my husbands favorite meals, my enchiladas! I make super easy but very yummy chicken enchiladas. For the kids I served rice and fruit along side the enchiladas with black beans and a dollop of Greek yogurt in substitution for sour cream. These enchiladas are made with a creamy slightly spicy enchilada sauce. I take a shortcut by using canned sauce then heating it on the stove with a little cumin, garlic salt and oregano. To make it creaming I melted in cream cheese. I use another shortcut for the chicken by shredding a roasted chicken from @Costco.
To the chicken I add black beans, frozen corn and cauliflower rice. I mix a little sauce with the chicken mix and roll it in corn tortillas. When all the tortillas are stuffed and rolled I top them with the rest of the sauce and cheese and bake at 350 until the cheese is melted. I then broil it for a few minutes to crisp up the cheese. These enchiladas were SO good!! We always substitute Greek yogurt for sour cream which helps to cool the mouth if it’s a little spicy.
