Whipped up some zucchini blueberry muffins the other night. Good morning everyone 💖 It has been 2 days since my cortisone injection in my R wrist (Wednesday will be the L wrist) and already I can see reduced swelling in my fingers and wrist 👏🏼 and numbness reduced by about 20% 🥂Trust me that is leaps and bounds after years of pain. My wrist and hand however are very weak and I won’t be able to cook anything at the moment (God knows how I’m going to massage at work on Monday 😂) So I will leave you with my PEANUT BUTTER AND JELLY PUDDING recipe. If you remember I told you 4 days ago about the needles in strawberries situation in Australia and how truckloads of strawberries were being thrown due to the scare. Well, let’s put the #waronwasteau and start eating them again. Most importantly to support our farmers that have suffered enough through no fault of theirs! Just make sure you cut your strawberries in 3-4 pieces and they are safe to eat. I’m sure all your kids especially miss having them😉💋 Recipe is in the link and remember you can store the Strawberry Sauce in a jar in the fridge. It goes well with ice cream and over waffles and pancakes too! Researchers think that about 30% of our liking for sweet taste comes from our genes. - Of course there are so many other factors that affects how we taste sweet foods. This like for sweet is also related to our age. Yes as you can tell taste is very complicated. - I have always preferred savoury foods (bellow potato chips 😬😆) but I have also changed my liking for sweet foods over the years. I no longer have sugar in my tea and only like dark chocolate, milk chocolate is too sweet for me. Like as a sandwich skewer or like I did today - cutting the sandwich in 4 strips. Graysons breakfast costed pennies. Dairy & grain free! 💃 • • • • Chia pudding recipe: Blend 1 cup of almond milk, 1/2 cup of rasberries (or any fruit you prefer) and 1/4 tsp cinnamon until smooth. Pour into your mason jar, add 1/4 cups of chia seeds. Stir to combine. Seal and store in the fridge overnight or up to 5 days. Top with your favorites when you're ready to eat! Grayson likes his plain or with coconut shavings, I like mine with granola.
Pad Thai, coconut ice cream, frozen mango - tastes like holiday ☀️🏖️👒🕶️ . Heat 1 tbsp sesame oil in a wok, thinly slice a carrot, half a red pepper and a handful of baby corn and stir fry until soft. Add a handful of mangetout, some frozen peas, chunks of marinated tofu, 100g rice noodles and a few drops of soy sauce. Stir fry for another 5 mins then stir in 1tbsp peanut butter and serve. I sprinkled on some seaweed flakes at the end for iodine.

This wonderful chilled pea and mint soup was served to me on my Pilates retreat @pignoulet in France last weekend (read more about this on my other blog @cookveggielicious ). I saw these frozen soft pretzels 🥨 from @traderjoes a while ago and had to try them out, then completely forgot about them! I made them for the kids today and they were pretty good. I also gave them some turkey deli meat rolled up, a pickle, salami, @babybelus cheese and a mandarin. They also had our beet and blueberry smoothie but I didn’t take a picture of it. We’ve really been on the smoothie boat again especially with all of us having a cold it’s so easy and quick to get a good amount of veggies in them. I have had some issues at mealtimes. I’ve talked about this before but it’s getting worse.... yes I under cater for my hungry family 😂. Even when I think I have cooked too much, my growing boys manage to eat it all and hubby starves 😆😬😂. - This under catering is also an issue because it means less leftovers in the lunchbox for the next day. I managed to salvage these 2 little meat patties for the lunchbox the other night. 😬. I’m a bit scared because next year I have my boys at school and will need even more leftovers!!! - If you are new to doing lunchboxes, using leftovers works so well. Chicken, onion, garlic, pepper, mango, sultanas, chicken stock and coconut milk. Didn’t have mild curry powder so chucked in a bit of medium with added cumin, coriander and turmeric. Another win!! Dinner: Roasted pork tenderloin (this was the best tenderloin I’ve ever made—recipe notes at the end), @seedsofchange brown rice & quinoa, roasted sweet potato & broccoli (+ raw carrot for the older tot) and yogurt. . . . The younger tot (22 months, blue plate) ate everything + tons of extra sweet potato. The older tot (3.5, yellow plate) had a few bites of pork & rice, none of the cooked veggies, all of the yogurt & about 3 whole carrots. I knew he probably wouldn’t eat the cooked veggies, but I still offered them and was sure to include the carrot, which i knew he was more likely to eat, so he’d get some veggies with the meal. . . . The weather was perfect for a picnic at the park today! Before picking Cristian up from preschool I made a lunch for us all. I don’t have any cool lunch box bento boxes so I work with what I have, @target reusable containers. I filled it with a dino shaped pbj, olives with cucumbers, @babybelus cheese, quarter of a avocado 🥑 and cheese cracker sandwiches. In another container I packed 🍎 and 🍇. Ok, so... I actually like this granola. . I have to admit, I’m a bit of a granola snob😬 But I think you have to be when it’s so dang ‘spensive and comes in tiny bags. Midway through the second week of school and I'm quickly learning that Tom arrives home HANGRY!🤯 So I'm expanding my repertoire of fast dinner options. Rice vermicelli noodles to the rescue! They just need soaking for 5 mins in boiling water. While they soaked, I made ribbons of raw carrot and cucumber 🥕🥒. For the kids I also reheated some roast chicken leg meat I had cooked earlier in the day, but since I'm not feeling meat at the moment I just topped mine with chilli flakes 🌶️.
