750g parsnips, peeled, chopped
2 green apples, peeled, chopped
4 cups chicken stock
2 bay leaves
1/2 cup cream
4 slices prosciutto

Nothing special, just roasted some red cabbage and sprouts. Try drizzling some Balsamic vinegar on the cabbage prior to roasting. It’s insanely good!

Chicken thighs with rice, beans, and pico.
Rubbed chicken with cumin, coriander, ancho chili, onion and garlic powder, salt, & pepper. Used pan drippings plus half a can of Barrio Blonde beer, reduced, for sauce.
Rice with Sázon seasoning (in the ethnic section). Beans with culantro paste (made by #Goya
), lime, chicken broth, and onion. Wish I had some plantains!

Ranch Smashed Potatoes
24 oz baby red potatoes
1/4 cup + 1 Tbsp extra virgin olive oil
1 tbsp ranch seasoning (Hidden Valley or this Homemade Ranch Seasoning)
1. Boil the potatoes about 20-30 minutes or until the fork not only can go through but they are very tender. Then drain the potatoes in a colander.
2. Spread 2 tbsp of olive oil on a baking sheet so that it is completely covered, then arrange the potatoes on the cookie sheet so that they are evenly spaced.
3. Use a potato masher or the bottom of a glass to smash each potato until it is about 1/2 inch thick. Then sprinkle the seasoning directly on top of each potato and finish by drizzling the remaining olive oil over each potato generously.

Dinners been made and eaten, the kitchen has been scrubbed, and leftovers. Those have been packed and prepped as lunches for Chris and I. Being frugal and intentional with money continues to be an ever evolving work in progress, but one area we’ve been fairly consistent with has been food. Real talk? When I’m TIRED and OVERWHELMED with motherhood, and life and stuff, I want to make the less than responsible decision to hit up a drive through and go into autopilot. But doing that consistently, just isn’t in the cards! It’s not healthy for my checking account or my waist line. 🤷🏻♀️ SO, leftovers are simple life savers on our #debtfreejourney
. They allow us to have minimal food waste in the kitchen, and maximum savings on food costs. Not a huge fan of packing your lunch or leftovers? I hear you, I wasn’t either. But hear me out... there’s no harm in trying! 😅Try swapping out your drive through or to go lunch just a couple times a week and see how that makes you feel (both physically and financially!) Whether the journey is towards financial freedom or physical health: it truly is the little things that make all the difference!
