Smashing potatoes! If you're looking for a new way to cook your potatoes - try smashing them! Here's a quick recipe for Smashed Potatoes with Salt and Vinegar.
2 lbs. small red - or white-skin new potatoes
1 cup plus 2 tsp. malt vinegar, divided, plus more for brushing
5 tbsp. kosher salt, divided, plus more for sprinkling
2 tbsp. unsalted butter
½ tsp. coarsely cracked black pepper
2 tbsp. finely chopped fresh chives
Combine potatoes, 1 cup vinegar and 1 tablespoon salt in a large saucepan over high heat. Add water to cover potatoes by 1 inch. Bring to a boil; cover and simmer until potatoes are just tender, 15 to 20 minutes.
Preheat oven to 450º. Line a rimmed baking sheet with parchment paper.
Whisk 4 cups cold water and remaining 4 tablespoons salt in a large bowl until salt is dissolved. Add 2 cups ice. Using a slotted spoon, transfer cooked potatoes to ice water. Let stand 30 seconds; drain and pat dry. Allow potatoes to cool slightly.
Meanwhile, melt butter in a saucepan with pepper and 1 tablespoon chives. Remove from heat and whisk in remaining 2 teaspoons vinegar.
Use heel of your hand to gently smash and flatten each potato to a ½-inch thickness. Arrange smashed potatoes in a single layer on prepared baking sheet.
Brush potatoes with butter mixture, and sprinkle generously with salt. Flip and repeat on other side. Bake until edges are crispy and golden, 30 to 40 minutes. Brush generously with more vinegar; transfer to a serving platter. Sprinkle with remaining 1 tablespoon chives and desired amount of salt. Serve hot.

Quick, easy, and nutritious hummus salad dressing with lemon juice
This dressing can be made ahead of time and kept in the fridge for up to 5 days. It is fantastic and satisfying as shown, in a salad of shredded Romaine with red radishes and scallions.
1 lb. hummus
Juice of 2 large lemons
Your favorite spice mix
Wash, cut and put in a mixing bowl the Romaine, radishes and scallions.
Juice the lemons.
Add the hummus and your preferred spices.
Stir until the dressing is smooth.
Add to salad.
Mix by hand — you will have better control over the process.
Serve. If you’d like, add sunflower or pumpkin seeds (like I did). ***

Eight years ago I was back on gluten to prepare for my intestinal test for Celiac. I was in pain every single day, but I had to keep eating it for accurate results. The verdict? "Inconclusive." Uuuugh! 👎👎👎 The doctor said "look, your blood test was positive and if you're eating ANYTHING that causes you that much pain, just don't eat it." So no more gluten for me. Which was sad because while GF products try their best, so many fail. 😭 They just aren't the same! I still don't understand why anyone would eat like this unless they had to. 😞
It's not all bad though! One of the best things I have tried since going GF is Brazi Bites. They're good. 😍 And not just "good for something that's gluten-free", but actually really, really good. My favorite is the cheddar and parmesan, but the 3 cheese pizza ones are also delicious. Even my husband loves them and he and gluten get along just fine. Turmeric cauliflower quiche with toasted garlic
16 oz frozen cauliflower florets
16 oz mozzarella cheese
1 tbsp @spicifyfoods
onion soup and seasoning mix
1 tbsp turmeric
3 tsp oil
4 cloves garlic, sliced
1 onion, sliced
1 tsp salt
½ tsp pepper
½ cup canned coconut milk
Preheat oven to 325
In medium bowl, mix cheese, eggs, coconut milk, turmeric, @spicifyfoods
onion seasonig mix, salt and pepper; set aside.
In a large skillet, heat 1 tsp oil
Add garlic slices and cook until golden, making sure it doesn’t burn, about 5 minutes. Remove garlic from pan and set aside.
In the same skillet, add sliced onion and sauté until golden brown.
Add toasted garlic and sautéed onion to the egg mixture.
Add cauliflower and fold in.
Mix well and pour mixture into prepared pie crust or ceramic dish.
Bake for 1 hour.
