I would have assumed it was too difficult, with too many fancy ingredients, and a super complicated recipe to follow that would require hours in the kitchen. Queste con spinaci, patate e merluzzo, tutto bollito e poi amalgamato con pangrattato di riso, due cucchiai di parmigiano reggiano grattugiato, sale e pepe!
Si formano le palline- o crocchette come in questo caso- e via in forno a 200 gradi per 10/15 minuti con un filino d’olio evo. Le ho accompagnate con del finocchio crudo condito con olio e sale.
Adesso sprofondo sul divano, pensando che con domani mancano solo 3 giorni di lavoro prima della pausa natalizia.. inutile dire che ne ho bisogno, vero?😉

Have you ever been taught how to season your cooking? Beyond adding salt and pepper? Most people who come to my classes have an ‘aha’ moment when I explain the need to add acidity to food - from a squeeze of lime to a bowl of noodles, lemon to roasted veg, vinegar in a pasta sauce or a splash of wine at the end of a gravy. Adding acidity just before serving brightens everything up and transforms your food from alright to delicious. It’s a sure fire way to get kids to enjoy a plate of greens too - adding lemon and salt to greens is transformative. You’ll see a final hit of acid in almost all my recipes. 1 beefy patty grilled well done over a mix of spinach, romaine & argula, topped with chopped tomato, onion and cheese. I like chipotle dressing lightly drizzled on. ⠀

My mom lives alone in her apartment at an assisted living facility about 30 minutes away from me. Her apartment only has a small kitchenette area with no stove or oven.
