Lately I’ve been getting a lot of questions about what I eat everyday. I think it’s hard to imagine what a vegan who tries to avoid packaging might prepare for dinner. Hell I probably would have wondered the same thing a couple of years ago! So I decided I’m gonna post a week of “low waste”, vegan dinners! I know I love looking at this shit on Instagram so hopefully you will too! I’ve learned it’s very easy, and actually less expensive to prepare hearty, low waste, plant based meals at home. I hope this can inspire some of you to leave animal products off your plate one or two nights a week and maybe challenge yourself to prepare a meal that sends nothing to the landfill! 🧜♀️ Do it for the mermaids!
First up is roasted veggies with tahini drizzle 🤗 This is a go-to in our house cus it’s really adaptable depending on the season and what you’re in the mood for. Here I’ve got beets, Japanese sweet potato, carrots, cauliflower and onion (always, I repeat, ALWAYS roast with an onion). I like to leave garlic cloves whole in the roasting pan so I can pop em open in my bowl like sweet lil garlic candies. Cook up some quinoa while the veggies are roasting and stir some tahini with lemon juice, salt and pep for the easiest drizzle you ever did make. DINNER: DONE. Swipe for my cozy bowl.
Sushi bowls are a favorite dinner in our house...suuuuuper easy and customizable!
🌱Brown rice, cooked with a combo of veggie stock and soy sauce
🌱Tonight’s toppings were diced cucumber, broccoli slaw, edamame, and avocado
🌱Finished with a sprinkle of sesame seeds and a drizzle of coconut aminos 👍🏻

, moon tomatoes, radishes, cucumbers, little avocado mash, all served on top of spinach. Quite filling & satisfying.😋 I didn’t realize how filling the brussel sprouts are - yep, I didn’t mind sharing my plate with eager kids!
Being plant-based is very nutritious & satisfying!

Homemade calzone with peppers, onions, spinach, pineapple, and @goveggiefoods

😍 Así que aquí les va.
-1/2 taza de aceite de coco @bioselva
-1/2 taza de azúcar de coco @bobsredmillperu
-2 cdas de chocotahini @darhummus
-1 huevo vegano (1 cda de linaza en polvo + 3 cdas de agua reposado por 10min)
-1 cda de vainilla y 1/2 cdta de sal
-1 1/3 taza de harina multiproposito @bobsredmillperu
-1/2 taza de avena en hojuelas
-1 cdta de polvo de hornear
-1/4 de taza de chispas de chocolate @amazonachocolate
Precalentar el horno a 170°. En un bowl mezclar los ingredientes líquidos y en otro los secos, después unen los secos a los líquidos y se amasa bien. Colocar la masa tapada con papel film en la refri por 10 min. Formar bolitas con la masa, aplastarlas un poco y colocarlas en una bandeja engrasada o con papel manteca. Finalmente llevar al horno por 10 min y aquí viene la mejor parte, disfrutarlas 🤤😍 Salen super crunchies por fuera y suaves por dentro. De lo mejor!!
Did you guys ever chew Juicy Fruit bubble gum growing up?? It was my favorite as a kid! Fun fact: Juicy fruit gum got the idea for the flavor from this crazy yellow spiky fruit that grows in the tropics called jackfruit!! When a lot of people try jackfruit for the first time, they’ll say “this tastes so much like big globs of juicy fruit gum!”... and that’s why!
Jackfruit is usually very expensive back in the US, I’ve actually seen it for upwards of $100!!! But fortunately it grows abundantly in Bali and therefore is very inexpensive and fresh since it hasn’t been picked weeks too early and imported from halfway across the world. I’ve been stocking up! It’s delicious + so awesome that I can bring back a childhood favorite flavor by eating the actual fruit vs the chemical gum! Nature is wild 🍈
Bolinho choconache, gostoso e fácil de fazer.
Modo de preparo:
- Numa vasilha, misture bem todos os ingredientes secos
- Acrescente os ingredientes úmidos (Mistura viscosa de linhaça, óleo e água) e misture bem
- Derreta o chocolate 1/2 amargo vegano em ‘‘Banho Maria’’ com o fogo baixo. Misture de vez em quando para o derreter por igual e mais rápido. (*) *Quando já estiver bem derretido, desligue o fogo e continue misturando
- Com o chocolate derretido, acrescente o Creme de Leite vegano e misture até ficar bem uniforme.
obs.: usei forma de silicone com 8 formatos de bolinho, mas pode usar a forma que melhor se encaixa para cada um na medida do possível. - Pré aqueça o forno a 180° C
- Unte a forma com um pouco de óleo (pode espalhar o óleo usando a mão, papel toalha, pincel etc)
- Após ter untado com óleo, com a ajuda de uma pequena peneira, espalhe um pouco de cacau em pó por toda a forma, inclusive nas laterais. - Coloque um pouco da massa do bolinho nas forminhas (não é para completar)
- Coloque um poquinho do ganache bem no centro da forminha (não deixe que o recheio encoste nas laterais, pois esse espaço deve ser ocupado pelo restante da massa)
- Complete com a massa do bolinho.
- Leve ao forno, pré aquecido, deixe assar entre 40 e 50 minutos.
- Espere esfriar um pouco e desenforme.

I don’t know about you, but my favourite way to celebrate is with good food 😊. I made this bowl a few days ago - it’s rice with tempeh and broccoli in red braising sauce. Apple-Cinnamon-Maple Oatmeal 👅 I am obsessed with fall flavors, call me basic I won’t be mad 🤷🏽♀️ •
3/4 cup oatmeal
1 cup almond milk
1/2 tbsp date sugar
1/2 tbsp cinnamon
1 chopped gala apple
1 tbsp maple syrup
sprinkle of coconut
sprinkle of pepita seeds
sprinkle of cacao nibs
A lot confusions out there about cruelty free products 🐰? People generally don't understand the differences between cruelty free, natural ingredients, vegan, and how to look out for cruelty free products... so here we go!🔥
👉🏻Cruelty free means products that don't test on animals
👉🏻Natural ingredient is more simple, it's just referring to ingredients that are coming from natural sources, not synthetic and not chemical, it has nothing to link with cruelty free and vegan. Honey might be natural, but it's obviously not vegan.
👉🏻A bunny logo doesn't mean it is completely cruelty free, a product without bunny logo also doesn't mean it tests on animals. Look for international certification systems like Peta, Cruelty Free International that are more reliable, do more research before you purchase your products!
