out of the way this morning. I had a cilantro smoothie with unsweetened soy milk, frozen bananas, and cilantro. And this fruit salad on a bed of arugula.
Dark Chocolate Drizzled Protein Rice Crispy Treats. If you’re looking for a quick treat to make these are a pretty solid option. There is no cooking required and only a couple of ingredients. @themealprepmanual
These aren’t quite the traditional rice crispy treats. There are no marshmallows and no butter. The stickiness comes from the protein powder and cornstarch. The nutrition information listed above is for the whole dish. This recipe admittedly isn’t perfect but it still has good flavor and it’s so simple i figured I’d share it (and also because it’s been a slow week for innovation and I didn’t have anything else to put up here 😇😇) These do have a hint of that protein powder flavor which I know a lot of you are used to and don’t mind but if you do, I’d suggest adding in some peanut butter to help mask it. That’s going to drive the calories up as well though. These are best when eaten as soon as they harden up a bit. The longer you let them sit, the more hydrated the rice crispies become and they lose their crunch. This isn’t necessarily a bad thing, you just get a chewier bar. .
2.5 cups rice crispy cereal
2 scoops vanilla whey
2 tsp cornstarch
1/4 cup water
2 tbsp dark chocolate chips .
1. Mix the cornstarch and protein powder together.
2. Stir in 1/4 cup of water and vigorously stir until it is completely smooth.
3. Pour in cereal and stir to coat.
4. Press into an 8x8 pan.
5. Melt chocolate and drizzle over the top. I added a bit of liquid to make it a bit less viscous.

🌱West African Peanut Stew with Chickpeas, Sweet Potato and Collards🌱 (Oil-free + good fat from peanut butter.) I’ve been wanting to post this delicious stew for a while but wanted to get my recipe just right. I’m happy with it now😋. 🤔Do you know...some people actually called the police about their IG being down! There was a tweet from police asking people to stop calling them about their Instagram!!!😂 Still not sure if my feed is back to normal yet but no plans to call the police any time soon😜. Happy Saturday my IG friends and it’s nice to have you back💛.
🌱Recipe: Cook 1 finely chopped small red onion, 4 minced garlic cloves, 2-inch piece minced ginger and 1 finely minced jalapeño in a little vegetable broth until onion is softened, about 5 minutes, adding more broth as needed. (If you prefer to use olive oil, add the garlic later with the spices.) Add 1 tsp cumin, 2 tsp coriander, 1/4 tsp cinnamon and cook another 30 seconds. Add 2 sweet potatoes (chopped into about 1-inch pieces), 3 tbsp tomato paste, 4 cups vegetable broth and 1/2 cup unsweetened peanut butter. Mix well while heating to help dissolve the peanut butter. Bring to a boil before reducing heat and simmer until sweet potato is fork tender, about 20 minutes. (Optional: transfer half of stew to blender, including half of the cooked sweet potato, and blend on high until smooth. Transfer back to pot with remaining stew.) Add about 2 cups (or more if preferred) cooked chickpeas and some chopped collard greens. Heat a couple more minutes until chickpeas warmed through and collards just wilted. Add salt and black pepper to taste. Serve with chopped peanuts and maybe....more chopped jalapeños 😛.

I’ve been craving some healthy fats so last night I made a super simple chia pudding recipe and it’s so good 🤗💖
- 3tbs chia seeds
- 1 cup liquid (I used soy and coconut)
- 1tsp sweetener
- drop of vanilla
combine together and let it set overnight!! I topped mine with strawberries 🍓, blueberries and pineapple 🍍

SESAME-GINGER-CHICKPEA STUFFED POTATO WITH TAHINI DRIZZLE
What a mouthful 😋 Lunch time! Kids asleep! Threw this together in no time at all. The cooking takes a while but after that it’s about 5 mins to throw together and it was EPIC. Roasted chick peas, tahini sauce, spicy sriracha glaze, crunchy spring onions and a sprinkling of sesame seeds!
INGREDIENTS: ▫️2 medium sweet potatoes ▫️1/2 teaspoon olive oil ▫️1 can unsalted chickpeas, rinsed and drained
▫️1 teaspoon toasted sesame oil ▫️1/2 teaspoon garlic powder ▫️Pinch salt x2 ▫️1/4 teaspoon ground ginger
▫️1 & 1/2 tablespoons tahini ▫️ 1/2 teaspoon grated peeled fresh ginger ▫️1/2 teaspoon grated fresh garlic ▫️1/2 teaspoon rice vinegar
▫️1 & 1/2 tablespoons hot water
▫️2 teaspoons Sriracha chili sauce (or any hot sauce / optional)
▫️2 spring onions, thinly sliced ▫️1/2 teaspoon black or white sesame seeds
METHOD: - Preheat oven to 200c fan - Rub potatoes with oil, pierce with a fork and bake for 1 hour or until tender. Cool. Split potatoes in half lengthwise. Score flesh with the tip of a knife.
- Place chickpeas on a baking tray and pat dry with paper towel. Add sesame oil, mix and sprinkle with garlic powder, pinch salt and ground ginger. Mix again. Bake at 180c fan for 30 minutes, stirring every 10 minutes.
- Combine tahini, fresh ginger, fresh garlic, and vinegar in a bowl. Add 1 & 1/2 tablespoons hot water and stir until smooth.
- Combine sriracha and 1 teaspoon water in a bowl. Drizzle about 2 teaspoons of tahini mixture over each sweet potato half and top with a pinch of salt. Top with chickpea mixture, remaining tahini mixture, sriracha mixture, green onions, and sesame seeds.
- Add more water to the tahini if you like it thinner

Putting an Italian spin on one of the best and most un vegan sounding vegan Chinese dishes, Fish flavoured eggplant. Baby eggplant fried in a super crispy batter, then tossed in an agrodolce caramel flavoured with dried fig, cipolline onions, balsamic, Calabrian chilli and fennel seed. Topped with toasted hazelnuts. Best eggplant dish to date? Probs.

is in my top 3 dishes of all time. I go twice a week on a bad week, 4 on a good one. So tonight I decided I’d try and make it for myself because I happened to have what I thought was everything I needed to make it. Verdict? Amazing! Tina’s amazing? Not quite. And you know what, I’m happy about that. Some things are better left to someone else to keep it special.
