Taco taco taco! I run a stitch and bitch til 2100 on Monday nights, so it's a guaranteed late dinner. I determined this is going to be taco night for the foreseeable future, as it gives us a good box to think inside. Tonight was blackened tofu and dry pan portobello mushrooms which taste super meaty and delicious, topped with a spicy avocado slaw. I'm really excited for leftover slaw tomorrow. 🌱 DAY 8/80 Woke up this Monday, ready to take it on! Workout today was total body and we switched to lower rep counts with heavier weights.💪 Loved it! Went to the movies and didn't eat any snacks! Ran to TJ's for some more food to prep for the week. This was only $22!🤗😀 Funny story, I had a dream last night that I went and got a take and bake no cheese black olive and pineapple pizza. (Yeah I'm weird.) But when I got home, I realized "Pizza is not on my meal plan!" And put it in my freezer for later. I had 3 Q of green smoothie today. I wonder what the scale is going to say tomorrow? I did have a ton of energy all day long consistently and did a great leg workout at around 6pm. I leg pressed 200 pounds 4 sets of 10, plus other machines and did a 20 min HIT workout on the elliptical. I tried to stay raw after the workout but couldn't do it. 😕 my body was asking for food so I ate greens, rice and beans. A lot of it! !! 😃 it's 9:30 pm and I'm not even tired. Not a food post but I am a type one diabetic, and my blood sugar levels have been crazy recently 😭 i’ve really been crying nonstop. The past week my blood sugar has been LOW on my dexcom everyday, around 44 when I check. Strikes affect my mood so much, anyone else? Been a while since I’ve done a #zerowaste meal prep! This one is smaller than my previous preps because there wasn’t much to choose from at the farmers market ( #winterproblems ) but I utilized my dry bulk goods and ended up with: honey almond butter, hemp milk, kombucha made in Vermont that my parents got me from their recent trip up there, overnight oats (hemp milk, oatmeal, chia seeds, maple syrup, almond butter, and frozen blueberries), quinoa, lemons for lemon tea, homemade hummus, apples, carrots, sweet potatoes, and garlicky kale.
