Throwback to one of the most complex desserts I’ve made, this past Christmas. Espresso Parfait from @helen_goh_bakes
, as advised by Ms Goh herself! 😍 A beautiful smooth Espresso parfait sandwiched between a rich chocolate almond meringue (original recipe called for hazulnuts but mom’s allergic), covered in a snappy tempered dark chocolate with a burned caramel coffee praline crust, drizzled with hot whiskey caramel sauce. An absolute beauty that is made ahead and keeps well so I could serve it again to the In-laws for New Years’! I love baking from Sweet and learning or practicing important baking techniques. Getting choice advice from Ms. Goh made it even more fun! Last month I posted about making my first rice pudding, inspired by my Okie granny’s pudding in my childhood. Yesterday I made my first bread pudding, from the same inspiration. But this is NOT my granny’s bread pudding! Using the large amount of bread scraps leftover from a Thanksgiving appetizer (see previous post), I added whiskey-soaked golden raisins and topped it with a homemade whiskey caramel sauce. I had really enjoyed a number of these at various McMenamins locations during the past few years, and I think my first try equalled theirs (or surpassed?). It was awesome! The next 3 photos are also from my plate. The 3 after those show the bread pudding straight out of the oven, while the last two show the pudding before baking.

. . . . . 1 sirloin steak - 1 1/2-2lbs (or chuck steak)
Season steak with salt and pepper. Sear on high heat with a little oil (I used truffle-infused olive oil) for about 90 seconds each side. Remove from skillet. Lower heat to med. Add a tbs of butter and about 1/4 cup of flour and cook for a minute to make a roux. Add 3-4 cups of beef stock and a couple dashes of Worcester and bring to boil while stirring.
Cut steak into 1” cubes and add it and broth to a Dutch oven or crock pot on low.
Start simmering for about 3 hrs until tender.
When an hour is left, sauté chopped onions until browned and add to broth. Repeat with mushrooms.
Cut shallots thin. Separate and cover with milk.
When beef is tender, season if needed and add about 1/2 cup of sour cream and a little heavy cream (if you want) and simmer for a few more minutes.
Drain shallots and toss in rice flour or corn starch. Fry in oil until golden and crisp. Not too long.
Served stroganoff over cooked egg noodles (or mashed potatoes. Or BOTH!)
