Oh the yumminess that I nourished myself with yesterday. Breakfast (not shown): berry and peanut butter smoothie). Lunch: scrambled eggs with spinach and onions and cherry tomatoes. Snack: walnuts and almonds, cukes, sweet peppers, and turkey. Dinner: big ol' salad with chicken. Dessert (not shown): frozen blueberries.
When I put my head on my pillow last night, there was peace in my heart because I had cared for myself and honored myself.

Torta fácil com crosta de batata
Você vai precisar de:
455g de batatas vermelhas, cortadas
3 colheres de sopa de azeite de oliva
2 colheres de chá de sal
1/2 colher de pimenta
1 colher de sopa de queijo parmesão, ralado
235ml (1 xícara) de leite
1 tomate, picado
35g (1/4 de xícara) de cebolinha, fatiada
110g (1/2 xícara) de bacon, cozido e picado
50g (1 xícara) de queijo cheddar, ralado
1 colher de chá de alho em pó
Modo de preparo:
1. Preaqueça o forno a 200°C.
2. Corte as batatas em fatias finas com uma faca ou mandolina.
3. Coloque as batatas fatiadas em uma tigela e regue com o azeite de oliva, 1 colher de chá de sal, ¼ colher de chá de pimenta e o queijo parmesão. Use as mãos ou uma colher para revestir uniformemente as fatias.
4. Ponha as fatias de batata em uma forma, começando pelo centro e terminando nas laterais, sobrepondo as fatias. Forre as laterais da forma com fatias de batata sobrepostas. Preencha os espaços vazios com as fatias restantes.
5. Asse as batatas por 15 minutos ou até ficarem tenras, antes de dourarem.
6. Em uma tigela, bata os ovos, o leite, o tomate, a cebolinha, o bacon, o queijo cheddar, 1 colher de sal, ¼ colher de pimenta e o alho em pó.
7. Despeje lentamente a mistura com ovos sobre as batatas. Caso as fatias comecem a "boiar", pare e use uma colher para colocá-las no lugar.
8. Asse o quiche por 30 minutos ou até que os ovos endureçam e as batatas dourem.
9. Fatie e sirva
