Maybe a little off my game and out of my best self today. But I was ready for a real meal at the end of it. And for that requires a piece of quality meat. Nothing compares to elk either 😍. Elk back straps grilled, grilled garden zucchini, fresh garden tomatoes and fresh basil made into a caprese salad with a Caesar salad. So good and delicious. Healthy can be easy and you definitely have time for it. I had time today and trust me it wasn’t easy. You put priority on to things. For me eating a good meal that’s healthy is a priority. It fuels the other areas of my life that are equally important: my husband and dogs, our home, our families, my career, my fitness. You do whatever you need to do to stay inspired and ready. I love breakfast. Like eating breakfast at midnight kind of love affair. Have you ever eaten at a diner in the middle of the night? It’s my fave. You’re either ending your day or starting your day either way you’re all there questioning your life choices while eating a good plate of food. And it’s glorious. One of my go-to favorites: eggs benedict... • SWEET POTATO NEST | sweet potato, arrowroot powder, scallions, and sea salt. #Spiralize your red sweet potato and toss in a little arrowroot powder with scallions. Lightly cost sweet potato evenly in powder. Shallow fry in preferred oil on med/med. high heat in a small pan. Flip nest and continue to cook until crispy. May have to flip a couple times to brown evenly. Tip: Turn the fire down to med. low if browning too quickly. And occasionally swirl potatoes in pan to release the steam for a crispy nest. Drain on paper towel and season with sea salt. 1 large potato will garner 2-3 nests. • CHIVE HOLLANDAISE | 2 yolks, 1/4 cup melted ghee, 1/2 fresh squeezed lemon, palm full of chopped chives, pinch of sea salt and cayenne pepper... Heat ghee until melted not too hot, set aside. In a blender combine all of the ingredients (except chives). Turn blender on high and slowly drizzle melted ghee evenly emulsifying the hollandaise. Throw in chives, pulse blender to mix. Done. Scary easy. • POACHED EGGS | simmer water with a splash of white vinegar in shallow saucepan. When water is at a small boil drop in 2 eggs gently. You can crack them one at a time into a small bowl first then slide into the water to avoid shells. Poach at a gentle simmer for 4ish min? Papaya Pico 1 papaya, skinned, seeded and diced 2 peaches, small diced 1/2 red onion, minced 1 tomato, small diced 1/2 bunch cilantro Lime Salt & lil garlic powder to taste . Use different variations of pico on EVERYTHING😭- Experiment w/ different fruits! Your key ingredients in a pico are onion, cilantro, lime and perhaps tomato. Sometimes, I’ll just straight up drink the juice and leave the rest for another time . What I can tell you is that this was delicious! 🤤 And easy with a food processor. Day 20 is done! . . 💙💙💙Blueberries💙💙💙 . When i make a smoothie, I decide what I want to be the star flavor. So the majority of it will be that ingredient. I then pile in everything else. No measuring, no different recipes. . Although almost every smoothie contains the following... . 1. Handful of frozen fruit (at least 1 banana) but it can include pineapple, mango, blueberries, cherries, strawberries, blackberries, pomegranate seeds, or whatever else is in season and I froze. 2. Greens. Blanched or steamed, pureed, then frozen into cubes. Some raw greens are goitrogenic, which can disrupt thyroid function. So we try to avoid eating them raw. 3. A healthy fat. Usually thats coconut milk, avocado, nut butter or coconut oil. 4. Super foods! I hear this allllll the time from people, and I can totally empathize. For my first Whole30 I literally told myself “I’m going to do this, but I’m keeping my smoothie in the morning (which had non-compliant protein powder) because I *have* to have it. It’s how I get breakfast, it’s fast, I don’t have time to cook something, etc. etc. excuses, excuses.” # Two days into Whole30 I stopped making smoothies and decided if I was going to try it, I was going to try it 100%! So I stopped. I started cooking eggs. They take me maybe 2 extra minutes, they keep me full longer, reduce my sugar cravings, and I eat them almost every single day. And you know what? I haven’t made a smoothie for breakfast since. That was 4+ years ago. # Food is comfort, food is routine, food is wrapped up in *so much* of our lives. It can be really uncomfortable, even scary, to try to change these routines. If we haven’t ever given up a food before it remains a big unknown. It can be easier to stay where we are, rather than test those new waters. # But then again, how will you ever know, unless you try? If you do end up missing a food, then bring it back! It’s not forever, it’s 30 days. Watermelon Salad// ... ... ... DAY 35 is here and I cannot believe it’s taken me this long to post a salad with watermelon in it! CRAZY. Love love love this fresh salad. Refreshing watermelon with shallots, kalamata olives, tangy vineagrette and fresh basil gives me ALL the summer feels. Savoring every sweet bit of summer before its officially fall. I want to know what YOUR secret is for picking out a good watermelon... Tell me! ... ... ... - - Recipe - - 6 cups seedless watermelon, cut into 1-inch pieces 1 1/2 tsp coconut sugar 1 Shallot, sliced into thin rings 3 Tbs white wine vinegar 1/4 tsp red pepper flakes Salt & Pepper 1 English cucumber, peeled, quartered lenghtwise, seeded, and cut into 1/2 inch pieces 1/2 C pitted Kalamata olives, chopped course 1/2 C fresh basil leaves, torn 3/4 C feta, crumbled - - Directions - - Toss watermelon with 1/4 tsp. coconut sugar in large bowl, transfer to colander in sink, and let drain for 30 min. In a separate bowl, combine shallot, vinegar, pepper flakes, 1/4 tsp salt and remaining 1/2 tsp sugar and let sit while melon drains. Pat cucumber and watermelon dry with paper towls and transfer to dry bowl. Using a fork, remove shallot from vinegar mixture and add to bowl with watermelon. Add 1/2 tsp pepper and 1/4 tsp salt to vinegar mixture and slowly whisk in oil until incorporated. Add dressing and olives to bowl with watermelon and toss to combine. Refridgerate for at least 30 minutes to 4 hours. Add basil to salad and toss to combine. Food - It’s fuel. It’s f*+king delicious. And it’s something I think about a lot ...perhaps because I’ve been an athlete most of my life and constantly thinking what, how much and when should I eat in order to make sure I don’t feel pukeish at practice - in my case, volleyball, and now the @crossfit box. At the moment, I’m halfway through my @whole30 month and sometimes worry that I am obsessing too much about food. Saying no to A LOT, but then again saying yes to SO many benefits of eating whole, natural food. And bonus, I’ve become reacquainted with my kitchen again, especially my #ninjablender , and not only feel my creativity flourishing but also more in control of my life and my choices. LAST WEEK !!! Sorry I have been so MIA - today is my first day back to the gym in 4 days ! 😳 I was battling stomach issues and was fighting to keep down crackers and water for 3 days only to find out I now have an acid reflux issue 🙄🤦🏽‍♀️. Needless to say my eating the last few days went back and forth from non existent to anything that my body would keep down which left me with a bloated tummy and low energy. A small bump in the road but I still have 1 full week left on bbg and 1 1/2 weeks until I fly out for my bachelorette weekend 🎉 Let’s see if I can regain my momentum and recover some of my progress !

Text my surgeon and sent him pics, he said it's normal from the extensive lipo. So today I took it easy. He also said that I should restrict my sodium intake and drink a lot of water, so I did. Took it back to #whole30 today and had #mexicanchickensoup from the #fastandeasycookbook my sis-in-law has been a great #nurse in making sure that I don't miss a dose of my antibiotics and that I'm getting my protein in for proper healing.

I get these questions a lot and always have a simple answer 🌸✨ I do crave sweets, I do fall off the ‘healthy eating wagon’, I don’t eat CLEAN every single day 😮🤭 The key to a Clean Eating Life is BALANCE ⚖️ Balance is so so important when it comes to food and living a healthy lifestyle. It includes treating yourself, eating what you want, going out with friends for dinner, but it always comes with discipline some days and asking yourself “if you really need it”...or “what is in that food that can harm my body?” A little lesson I’ve learnt over the few years of being healthy is to never restrict yourself from cravings or foods you enjoy; Food brings happiness and you definitely don’t want to ruin your relationship with it. 🌱😇✨
