I don’t mean to brag, but I make the BEST Whole30 butternut squash soup 💁🏻♀️
I don’t have an exact recipe, but here’s what I do:
-roast cubed butternut squash, yellow onion, and garlic
-blend in @vitamix
w/ homemade chicken bone broth
-add to pot w/ canned coconut milk, salt, pepper, smoked paprika, ground ginger, and some red pepper flakes
-simmer until flavors blend
-top w/ roasted pumpkin seeds for some added crunch
I’ve played around with various recipes/ingredients and I think the keys that make this one SO damn good are:
-roasting the squash first for a nuttier flavor
-blending in my Vitamix to make it extra smooth
-smoked paprika and red pepper flakes for an extra kick
I’ll be enjoying this on this snowy Monday with some chicken apple sausage

One of my favorite meal prepped protein is this Rosemary Dijon Chicken. It’s fantastic over an arugula salad, in a collard wrap, or simply as a sheet pan option with onions, potatoes, and broccoli.
With the holidays here, I am going to be relying on head start ingredients much more to keep me from indulging. Between the holiday parties, the baked treats, and the leftover sides from gatherings, having something like this ready to go in the fridge is crucial for me.

Both Andrew and I are up and out the door for work by 6AM M-F [I typically take my coffee/matcha to go and have a bar + piece of fruit], so we really enjoy preparing a big, hearty breakfast when the weekend rolls around!
first inspired me to start throwing everything on a bed of greens and its been a helpful way to up my veggie intake as I’ve always struggled adding them to my plate in the mornings! If I dress them (I don’t always find it’s necessary), I just add a drizzle of avocado oil & S + P.

Just popping in to say Hello 👋🏻 and hope you all have a freaking awesome Monday! I’m still feeling all the weekend feels and recovering from a Bottomless Mimosa Brunch yesterday 🤣. My good friend had her first Sunday off in months and we finally got together to have a truly millennial Sunday 🤣. We got back to my place and I proceed to take a 3 hour nap which was not in my Sunday plan. I actually woke up super guilty about it because I had so many things to do before Monday. But as my mom scolded me later, I’m allowed to have fun! Gotta love Moms! I somehow managed to pull myself together, do 3 loads of laundry, #mealprep
like a beast and put on night moisturizer and my lash serum 🤣. And I still managed to make it to my 6 am #purebarre

I am off work today but I have a very busy day planned out! Taking this day to work on my business and get some errands done. Dentist, 2 business calls, laundry, and maybe some Christmas shopping! I love going to the stores when they are empty and getting my shopping done early!

This one is a Fall go to for us. And while I didn’t use pumpkin you technically could use pumpkin, and I did use butternut squash, so I’m counting it!
This cooks for a while, but most of the time it’s just simmering on the stove while you go about your day...
I made a double batch last week and froze leftovers in individual serving sized freezer baggies for easy grab and go meals this week.
Recipe below! 👇🏽
1 tsp olive oil
1 lb cubed stew meat
2 medium tomatoes chopped
3 cups chopped butternut squash
1 chopped onion
1 chopped carrot
2 chopped celery stalks
4 cloves minced garlic
8 cups low sodium beef broth
1/2 cup red wine
3 bay leaves
1 tsp paprika
1 tsp black pepper
1/2 tsp sea salt
1. Heat oil in stock pot over medium high heat
2. Add meat and brown (4-5 min)
3. Add celery, onion, and carrots and cook stirring occasionally until onions are translucent (5-6 min)
4. Add garlic stirring frequently for 1 minute
5. Add wine and 1 cup broth scraping bottom so beef and bits don’t stick. Cook for 5-8 minutes until liquid has reduced to half.
6. Add tomatoes, bay leaves, salt and pepper. Bring to a boil, reduce, and boil for 5-8 minutes stirring frequently until liquid has mostly evaporated and tomatoes are starting to break down.
7. Add remaining 7 cups broth and bring to a boil over medium high heat. Reduce to a gentle boil, cover, and cook 2 hours stirring occasionally.
8. Add squash and cook 20-25 minutes stirring occasionally until squash is tender
The liquid cooks down a TON, but if you still prefer a thicker broth base try one of these two options:
1. Whisk 2tsp cornstarch with 2 tsp lukewarm water and add to the pot, stirring constantly for 2-3 minutes
2. Mix 1tb ground flax into your bowl of stew
You can also opt for sweet potatoes instead of squash, but if you stick with the squash this makes 6 large servings (about 1.5 cups each), and roughly comes out to 1💚, 1❤️.

Fairly obsessed with Coleslaw at the moment! I’m so into quick easy meals that don’t take much prep!
Tonight’s dinner consists of:
🌱coleslaw made with pre-cut coleslaw mix and home-made mayo
🌱smashed spuds are cooked in microwave in their jackets till soft then smashed with fork, covered in olive oil and spices and put in the air fryer
🌱tapioca chicken nuggets cooked with coconut aminos and frozen greens.
Probably 15 minutes prep all up and breakfast, lunch and dinner made 👌🏼@whole30

I especially love throwing together a good slow-cooker meal on the weekends when I know I can pop out to run errands, grocery shop, etc and have a delicious hot meal to come home to! Will definitely be making a double batch to freeze for next time around!

BBQ BACON BURGERS 🍔 I posted this quick dinner back in August, and immediately got SO many requests for the recipe! It’s 80% assembly, but I thought I might as well write up the process of how I make each element so you can recreate this dish at home. (Also now on my website, melissasfoodfreedom.com!) Here’s what you need: * 1 Medium Sweet Potato
* 1 Tbsp. Avocado Oil
* 1 lb. Ground Beef (80%/20% is best)
* 1 Pkg. Whole30 compliant bacon
* The New Primal Classic BBQ Sauce
* Whole30 compliant seasoned salt (like this one)
* Whole30 compliant Baby Dill Pickles (garnish)
Here’s what to do:
1. Preheat oven to 350°. Peel sweet potato, and slice about 1/2 inch thick.
2. Line a cookie sheet with foil and add strips of bacon. Line a second cookie sheet with foil, brush with the avocado oil, and add the sweet potato slices.
3. Bake the bacon and sweet potato “buns” for 20 minutes simultaneously.
4. While the bacon and “buns” are baking, form patties using the ground beef and sprinkle with seasoned salt on both sides. Cook in a skill set to medium heat heat, about 5 minutes per side (depending on burger patty thickness). Transfer to paper towel lined plate.
5. After 20 minutes in the oven, remove bacon and transfer to paper towel lined plate— then flip sweet potato buns and bake for 10-15 more minutes (or until fork tender).
6. To assemble, form a burger with 2 slices of sweet potato, one burger patty, and 1-2 strips of bacon. Drizzle with BBQ sauce and top with a baby dill pickle, secured with a toothpick. Serve immediately.

Heroine chicken. The final product. Finally getting around to posting this beauty. This chicken was. so. good. We will definitely be adding this to our normal weeknight rotation. Marinating it for 48 hours leaves the chicken so succulent, moist and flavorful. I think the pan juice was my favorite of any roast chicken I’ve ever made... I’m so glad I decided to make mashed potatoes as a side dish so I could use them as a vehicle for the pan juice 😂 💯. What’s even better is this meal was Whole30 compliant and paleo! Total win. It’s Sunday, which means it’s prepping time!
Taco meat will forever be my Hail Mary. Whether it’s ground meat in the freezer, or a prepared mixture waiting in the fridge, I know that having it on hand will keep me level on the craziest “crave all” evening.
Taco meat is perfect for stuffed bell peppers, a mindless salad, a sweet potato filling, a Mexican inspired frittata or scramble, and the obvious... tacos!
What is your quick and easy meal that you always keep on hand?
Can ya guess what I’m prepping this week? Probs not, because a lot of things I used in my cooking today were already in my pantry and fridge. Pro Tip: look at what you already have before buying more and planning your meals for the week. It prevents food waste and saves you money from over buying. I’ve gotten pretty good about boxing up a serving of a meal and throwing it in the freezer, if I know I won’t be able to get to it within a reasonable amount of time. I know it can seem expensive to eat a Real Foods based diet, but it just takes a bit of planning and smart shopping. Making some new recipes this week and I can’t wait to dig in! 🍽
SOUP soup SOUP soup SOUP soup ERRRYBOOOODY! (To the tune of Shots by LMFAO). It’s basically too cold to eat anything else 🤷🏼♀️ Soup is also the easiest way to meal prep ever. I found a paleo Italian veggie soup recipe, nixed the potatoes, added some corn and ground beef, and called it a day. And dang is it good! #alltheveggies #soupweather
for lunch today I sautéed veggies & chicken meatballs!! and to make things even easier, I bought the veggies frozen from @traderjoes
so all I had to do was throw everything in the pan and sprinkle on some salt & pepper! getting my GREENS this Sunday! 🥦🥦🥦
My dad was here for the weekend ❤️ so we took him to our favorite breakfast spot where it’s SO easy to eat clean and healthy! But also so many delicious #foodfreedom
options too (like the cinnamon roll that’s not pictured 🤦🏼♀️) I got two eggs with some potatoes and also a side of avocado that didn’t make the picture! And then we ventured over to #redrocks
and I definitely think my husband and I will head back next weekend to run the steps 🏃♀️ as a great challenging workout! 👌🏻💪🏻
I think moms, in particular, have a really hard time taking care of themselves and truly understand that, in order to best take care of others, they also must take care of themselves. We’re so keen to take care of our families, be there for our friends etc, that we often forget about ourselves entirely! I write now as if I’m not in that group myself. I am! Very much so! It’s SO hard to not feel guilty for doing something for yourself, even though it is so needed! .
So! What started as a plan to do a Whole30 with a friend starting tomorrow, is now turning into a month of practicing self-care; little acts of self-care! Whole30 fits in perfectly. When I feel better within, I always tend to do more things that also make me feel good for me. I am starting with simple ideas, such as ensuring I’m drinking enough water during the day (sometimes I get to the end of the day realizing I’ve had incredibly little water all day🙄😖) or making a point to go to bed at a decent time! Self-care can be so many things, little and small; it is truly whatever makes you feel good, better, happy, recharged! .
Other ideas I have in mind for myself for the month are, getting some form of exercise, be it yoga, a walk/run or some simple stretching, take a break from coffee, (because I’m pretty sure it makes me feel better and more balanced when I don’t drink it, as much as I love it) reading, working on my goals.
