Literally the most slapped together meal but let me share my tip! I made omelette/scrambled eggs 😂 and had green capsicum and mushroom in it! I lightly whisked the eggs with onion powder, garlic powder, s&p and COCONUT AMINOS!! So bloody delicious! I barely eat eggs on @whole30 cause I haven’t gotten around to making sauce and I don’t really like that ‘eggy’ taste! Well the C.M took them to a new level of delicious! Cheers girl. We did it! 🥂 A lovely morning full of yoga and healthy food. 🧘🏻‍♀️🍳 A full whole30 brunch spread with shakshuka, vegetable frittata, breakfast potatoes, sautéed zoodles, bacon, chorizo, bacon wrapped dates, fruit platter, and chia seed pudding. For drinks we served cold brew with almond milk and coconut milk, iced mint tea, lemon water, fauxmosas and a hot tea selection. (Of course the French press broke this morning. 😆) We’re grateful for all the love and support and JOY everyone showed today at our first yoga & brunch event! And thank you to TAG for hosting us as we made a last minute change to have an indoor and bigger space. P.S. oops I didn’t pull off the live. You'll want to gobble gobble up this Chipotle Turkey Chili. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ No, you shut up. I like puns m'kay. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This delicious bowl of chili takes just 8 minutes in the Instant Pot (but stovetop and crockpot instructions are included too) and has so many hidden veggies that even your picky family members will be happy to chow down! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Link to the recipe is in my profile. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Spaghetti squash boats. I used the shell to keep in all the yummy juices and it definitely hit the spot! 🎯 I threw some pork sausage in my large electric skillet with two shallots and two Roma tomatoes finely diced. Once the pork was browned we added salt and shredded up a carrot (and managed to get a chunk of my pinky in the microplane but that’s a different story) fresh cut basil , and diced black olives. All amounts can be adjusted to taste. After all the players have mellowed out together I added in compliant fire roasted tomato pasta sauce and let it simmer. Meanwhile I cut a spaghetti squash in half lengthwise and took out the seeds. Flip flesh side down on a plate with a tablespoon or two of water and microwave that baby for about 7 minutes and allow to cool. Shred with a fork (or two!) and mix some back into the sauce for those non squash loving people in your family. Then I plopped all the luscious sauce on top of the spaghetti squash “noodles” and topped with more basil. It would have been essentially a one pot dish but the boys got theirs on lentil pasta with a dash of Parmesan - hey we’ve got to clean out the pantry somehow. Luckily they didn’t even say anything about the noodles and dinner was done in a flash. It’s Jonathan’s birthday and we told him we could go anywhere he wanted for dinner and he chose a night in with a nice big homemade lasagna! We try to eat healthy as a family and although “healthy” is a subjective word, I think most home-cooked meals check at least a few of the healthy boxes in my opinion! Not everything has to be low fat and made with turkey instead of beef haha. Some more indulgent meals are more about mindful portions and being thankful that growing kids are getting all the extra fat, protein and calcium, and licking their plates clean is always a bonus! . VERY impressed with my first time fancy ramen skills tonight 🤤🍜🍲 not completely low FODMAP (because peas and soy sauce), but I used brown rice ramen noodles, made the broth from scratch with ginger, miso, fish oil, chicken stock.. and THOSE EGGS. I’ve never successfully made jammy soft boiled eggs so that was a lifetime achievement for me 🙏

*FAVORITE PRODUCT FRIDAY* Ya’ll know that I love Fourth and Heart ghee and have been buying their ghee for years! 🙌🏽 They are the first brand of ghee I had ever tried and I just stuck with it. One time I was shopping at @naturalgrocers and needed some original ghee, but they were out of Fourth and Heart ghee. I came across this @iloveghee traditional ghee and decided to try it out. I had never seen it before in the store, but I was pretty excited because I noticed that their ghee is organic! ✨ This company truly believes that food is medicine. Do you know where they first started selling their small batch, grass-fed ghee? At their Ayurvedic clinic and pharmacy! They sold it as a way to heal and nourish their clients, but eventually wanted to share their ghee with more people. 💕 If you don’t know how to use ghee, you can use it to fry up some eggs, roast veggies, sautée veggies, sear meat, in bulletproof coffee. While it’s recommended that we avoid snacking while on our #januarywhole30 ...sometimes it just can be avoided, especially when traveling. That’s why I like to make a batch of trail mix using raw, organic nuts/seeds and sugar-free raisins and prunes. I then pre-measure small portions, in snack sized containers or zip-lock bags, as nuts are very high in fat and are easy to overeat. 😉
High quality non-scale victory, low quality mirror selfie. Long story short - my favorite maternity jeans fit. Short story long....I wanted proper skinny jeans but maternity jeans options are pretty limited. So on Black Friday I ordered a pair that was a great deal and barelyyyyyyy my size. I took the comfort food of Thanksgiving and Christmas quite seriously and ate terribly. Like weeks where I had to scratch my head to remember the last time I had a veggie not baked into a creamy casserole. At my third trimester check up I weighed in at 190. I know pregnant people aren't supposed to try to lose weight - and that's not what I'm doing at all. I eat whenever I'm hungry, I don't limit calories and I have real meals. The only change I have made is WHAT I'm eating. Now I eat real, whole fruits, veggies, meats and nuts. I have lost weight, but I'm probably going to plateau at an actual healthy weight for pregnancy, rather than the danger zone I was creeping into. I feel better, my wedding bands fit, and my favorite maternity jeans fit, finally. Still managed to be compliant, even though my brain was screaming for garbage food. • Breakfast: No time this morning, just some hot tea. • Lunch: Beef patties and guacamole with steamed cauliflower and broccoli topped with @tessemaes balsamic. • Dinner: Pulled pork cooked in the @instantpotofficial over shredded lettuce, onions, and bell peppers. I said the other day that I would re-post the recipe that Instagram ate for the Korean sweet and spicy chicken. Bet you thought I forgot, huh?!? I didn't. I was just too tired/lazy yesterday... lol. ▪ Please do not take this as an "authentic" Korean recipe. It's not. It's a creation based on what I had in my pantry that I want to use up so that it doesn't go bad (a HUGE bag of gochugaru and an almost full box of dates), an idea of how food flavors work together, and a craving to recreate something we've eaten often at a few local places. I also really just wanted to try and make it the Whole30 compliant without needing to go buy half a dozen more ingredients, too! The only thing that I can see adding is a slight touch of freshly grated ginger. I'll probably try that tomorrow because, yes, I'm making it again that soon! ▪ How to make it: cut 3 chicken breasts into bite size chunks and sprinkle with gochugaru (Korean Red Pepper spice). Meanwhile heat up a mix of mild olive and sesame oil in a pan. I like the flavor of sesame but a little goes a long way so a splash is plenty. Fry the chicken in batches in the oil until you are finished. Add all of the chicken back to the pan along with the sauce (recipe in next paragraph), sprinkle with sesame seeds and green onion tops, and simmer just a few minutes until nicely thickened. We had a salad on the side... next time I'm going to pickle some veggies instead! ▪ The sauce: oh my goodness, this is soooo yummy! You will need: 2 tablespoons (more) of gochugaru, 2 tablespoons date butter (posted that simple recipe a few days ago), 2 tablespoons of coconut aminos, a teaspoon of fish sauce, and another splash of sesame oil. The last of the vacation food pictures from Pasadena 😊 there are no scenery pictures because of the rain ☔😔 . 1. Tried a new placed called @monsieurcrepe_sierramadre and their pistou crepe with buckwheat flour. I like how the buckwheat made it crunchy. 😁 2. Hiding out in @ikeausa Burbank which is not hard to do. Thanks to @wholelifeeats for the recommendation. 😉 Spent two hours walking around and looking at everything. 😲 3 & 4. @yardhouse little baby vampire taco and Korean spicy boneless wings. Both were super yummy. 5-6. Tried another new place called @nickspasadena. It was super ritzy looking, but we were there for an early lunch. The staff was so nice and the service was wonderful, they did not make me feel out of place in my wet tennis shoes. I had the chicken pot pie, and my friend had the prosciutto fig and pear flatbread; we split the asparagus fries. Salad & You 📺 Friday night & I am trying not to watch the entire second half of the season tonight.
I had a great time in Pasadena (except for the cold and rainy weather ☔ who said it never rains in Southern California!) . 1. First stop after Las Vegas was @donutmanca - praline caramel specialty donut, crullers and a plain sugar donut.🥯 Praline was super sweet, but worth a try! They take credit cards now. 2. Dinner @dintaifungusa to try their xiao long bao (soup dumplings), green beans, Shanghai rice cakes (the texture is more like Korean duuk vs Japanese mochi), spicy wonton.🥣 It was quick service and a nice experience. 3. Me in the back of the limo 😂 4. @urthcaffe mediterrean platter and matcha latte with almond milk. It was a lot of delicious food & I was happy to have non-dairy options. I had a pita, but just the one as it wasn't worth it to keep eating them just because they were there. I did forget to ask for unsweetened though 🍵 5-6. @parkwaygrill late dinner. I learned from various #whole30 that I can handle cider, so of course, I got the largest one available (just kidding, it was the only one, it was delicious and yes, I needed help walking straight). With the impending (Possibly? Maybe? Maybe not?) snow storm that’s supposed to hit MPLS tonight, I’m trying to channel all the warm sunshine rays I soaked up in Austin. I’m looking forward to a fairly chill weekend of relaxing and gearing up for AIP starting Monday. And by gearing up, I mean cooking a billon things and freezing them so I always have food on hand. Saying goodbye to eggs and protein bars which are my usual quick eats when I’m hangry. Going into this protocol with an open mind, hoping for the best, but accepting it may not fix all my problems.
