much of what i have learn through life experiences are super applicable in the gym. as it relates to food - one day off in the gym won’t break me, and one day in won’t make me (just like eating bad for one day won’t make me “fat” and yet one day in the gym won’t give me results). and just as we all find success in focusing on one thing at a time, the same goes for the gym. focusing on one or two muscle groups versus doing full body workouts everyday is where i have seen the greatest results. and just as we know we must take time to slow down in our crazy, chaotic lives, moving slow in the gym has its time and place too. sure, cardio helps burn fat and fast bursts spike your heart rate, but when it comes to lifting you really can never lift too slow. it is actually so much harder to lift slow and really focus on your form.
focus on one thing at a time, don’t try and do a million things at once. don’t move too fast in the process of getting to your goals - slow down. in life. and in the gym.

Happy Thursday! I am so excited for today. My company does an international volunteer day once a year and today is that day 🙌🏻🙌🏻. I’m headed to a local food bank to volunteer with a bunch of my local co-workers, and could not be more excited to get out in the community and help. How cool is it that my company does that in every single office in the world today?!
It’ll be a while before we break for lunch, so I’m loading up on tons of protein, fat and fiber to keep me full all morning. In the bowl: oatmeal + yogurt + peanut butter + banana + ground flax seed + chia seeds + granola
When someone brings you a large bag of tomatoes from her garden it's time to make some sauce. Also, I'm lazy so I didn't chop or blanche or do anything to the tomatoes besides rinse & put them in the pot with an onion, garlic, fresh oregano and olives and turn it on. Such bright flavors! 🌿🍅

These two have had quite the last 10 weeks. First a broken tibia (shin bone) in April for the Toddler & now a Broken Clavicle (collar bone) for the 4 year old! (Which he fell in AGAIN yesterday for some pretty impressive swelling this morning).
I have received a lot of sympathy along with comments that I’m not sure sit well with me.
Things such as “God! Does it ever end? - Do you ever catch a break? - Why are they so hard?”
I understand the intention of most of the statements, but in hearing them so often these past few months they actually started to anger me.
Let me explain. .
I had to wait for almost a decade for my babies. I had to go through countless injections, countless medications, lost more babies to heaven then I have on earth. Dealt with rejection, self image, fear, lack of faith, and even questioned my marriage in that process.
These. Children. Are a Gift. From. God.
I don’t want a break. I don’t need one. I want to live every moment of this life, with them, as God intended it.
Every trial, every obstacle, every struggle, every joy, every success and every adventure. .
Isn’t that part of the blessing of having them?
So next time you find yourself in a moment where you want to pull your hair out, you want to scream or runaway, remember: when the soot hits the fan, He alone, will bring Beauty from ashes.

Roasted mushrooms with chickpea pureed - protein packed dish and all plant based🌾🍴

✨Whizzing up a batch of my refreshing chunky #gazpacho
✨All you need is a blender, ripe ingredients and a cold fridge✨Simple!
500g ripe tomatoes
1/2 English cucumber, washed and peeled
1 small red, green and yellow pepper
1 tbsp chives
1-2 tbsp sherry
1 tbsp lemon juice
1/4 tsp cumin
2 generous pinches dried oregano
Salt and pepper, to taste
Garlic infused olive oil (goo)
✨thoroughly wash and chop all your veg
✨add your toms to blender and blend until smooth
✨add all other ingredients and pulse until you reach the desired consistency
✨add salt and pepper, to taste
✨refrigerate for 1 hour
✨drizzle or stir in some goo just before serving ✨optional toppings, chopped peppers and chives

C’est l’été ! J’avais envie d’une petite salade fraîche et légère pour marquer le coup.
L’inspiration est grecque 🇬🇷, avec de la fêta et des olives de Kalamata. J’y ai ajouté du saumon sauvage (pour ne pas trop alourdir la note calorique), et de l’ail frais.
Le tout assaisonné de quelques herbes du jardin, de mon huile d’olive fétiche (huile bio de Frantoi Cutrera, multiple primée du Olio-Award, un délice pour les amateurs), d’un jus de citron frais, et c’est tout !
Parfois il en faut peu pour être heureux 😋
