This recipe made me 8x good size burgers patties 🍔 . . Roasted Vegetables (makes one huge portion): . 1 Small Sweet Potato 🍠 (160g ish) 1 Carrot 🥕 1/2 Red Bell Pepper 90g Aubergine 🍆 2 tsp Braggs Liquid Aminos (or Soy Sauce) 1 tsp Agave Syrup 1 tsp Dried Tarragon 1 tsp Onion Powder 1 tsp Chilli Powder 🔥 1 tsp Black Pepper Pinch of salt if you want . 🔪🔪🔪 the vegetables into the shapes your ❤️ desires and then put all the ingredients in a bowl to get the vegetables nicely coated. Then roast in a fan oven at 180C for 40 mins. I added a 💦 of almond milk when I turned them mid-way through because things were looking a bit dry in there and I didn't want to use oil 👌🏼Shout to my main man @the_wholefood_dude ✌🏼 for the oil free knowledge bombs 💣💥🌱👊🏼🌱💥💣 . . Feels good to finally be back on track this month. I really let the holidays throw me out. Today I wasn't hungry for breakfast so I had a coconut cream coffee. Lunch was mini frittatas with peas, tomatoes, and homemade dairy free pesto. Dinner was Black bean pasta with Spaghetti Bologna sauce bulked up with lentils and chicken peas. For dessert I made Banana nice cream which is usually zero but I popped some peanut butter in there! A cheeky bit of dinner inspiration for a healthy Monday night - miso salmon with roasted crispy new potatoes & broccoli, grilled vine cherry tomatoes and baby spinach 😍 . After a big weekend full of alcohol and lots of food, people are often tempted to starve themselves the next day to compensate for the extra calories eaten (or drunk) over the weekend. This is what I used to do all the time and I promise you that it is NOT necessary. If you’ve over-indulged this weekend the best thing to do is to get moving (go for a morning walk or go to the gym), eat regular, healthy meals filled with lots of vegetables and drink lots of water. This is my #bustrengo , a traditional Italian dessert featuring a heady mix of fresh apples, figs, golden sultanas, Tuscan honey, Umbrian olive oil, polenta, organic spelt flour, sourdough breadcrumbs, cinnamon and the zest of several lemons and oranges. It was a fitting finale to Friday evening’s sell-out Supper Club at @schoolhousegallery served alongside crème fraîche epaisse swirled with limoncello, a garnish of Amalfi lemon zest and a sliver of fresh fig.
