Sorry I haven’t been posting, life has been busy, filled with birthday celebrations, grad events, and just life in general, such a whirlwind of joyous events! I hope you’ve all been well❤️🙏🏻 I was still in the kitchen making nutritious meals, snacks and baked goods, I just didn’t have the energy or the time to post! This weekend is a breath of fresh air with a bit of downtime, so I thought I’d share this amazing ooooey gooooey cacao brownie muffin recipe!! I added a melt in your mouth topping to this muffin recipe for creativity but it provides a healthy fat and sweetness to curb any sweet tooth! What have you’all been up to? OOOOOOEEEEY GOOOOEY BROWNIE CACAO MUFFINS
1 cup almond flour
1 cup oat flour
1 tbsp of coconut flour
Pinch of sea salt
1 tbsp grounded flaxseed
1 tsp baking powder
3/4 cup cacao powder
1/3 cup cane sugar
1 tbsp vanilla
1/3 cup raw honey
1/4 cup hemp milk unsweetened
1/2 cup melted coconut oil
Topping - 1/4 cup tigernut butter and 1/4 cup dairy free soy free dark chocolate pieces. -Set oven for 350 F
- I lined my baking pans with silicone liners
- combine oat flour, almond flour, flaxseed powder, coconut flour, cacao powder, cane sugar and salt in a bowl. - beat in the eggs and vanilla.
- soften the honey so it’s mixes in well and add along with the nut or seed milk of choice. - add coconut oil and stir to combine. -Pour batter evenly into muffin tins and top with a creative drop of the nutbutter or seed butter of your choice along with chocolate bits and bake for 20 minutes. NOTE - Use flax eggs in replacement of eggs.

I never wore sunscreen until I was diagnosed with lupus, but then I became the queen of toxic chemical sunscreens in an attempt to control my reactions to the sun. It didn’t work. I eventually abandoned my drug store sunscreens because they left me feeling worse than no sunscreen at all.
In this post, I’m sharing the difference between chemical and mineral sunscreens, the different types of harmful light rays, and my criteria for choosing sunscreen now. Hint: you want to choose non-nano zinc oxide mineral sunscreens that protect against all three types of harmful light rays and won’t be absorbed into your bloodstream. Sometimes it seems like the only way to lose weight is by adopting a super-strict diet or spending every waking moment at the gym. Luckily, that's not the case

Let’s talk about dairy. I’ve had issues with dairy my whole life and have cut it out many times. However, in December, I was in Greece and decided to eat ALL of the feta and ALL of the halloumi. And guess what? Not one stomach problem. It turns out that the dairy in Europe is not nearly as processed as the dairy we drink here in the US. In the US, we want to extend the shelf life of everything as much as possible, so our milks and cheeses are ultra-pasteurized. Pasteurization breaks down the enzymes in milk that help our stomachs digest it. It’s no wonder so many of us have dairy issues. So now, when I do have dairy, I look for raw or low-pasteurized varieties, and always organic. It makes a huge difference.
I’ve also started experimenting with making my own cheese. It’s crazy how easy it is! The hardest part is finding low-pasteurized milk. Here’s a recipe for an amazing Lemon Ricotta.
4c raw or low-pasteurized whole milk (ultra-pasteurized or low fat varieties will not curdle as well - I find mine at @unsqgreenmarket
1/4c lemon juice
1t lemon zest
You will also need cheesecloth and a food thermometer for this recipe
In a sauce pan, mix milk, salt, and lemon juice. Heat over medium-low, constantly stirring until milk is lightly bubbling around the edges. Once the milk registers 165 degrees on your thermometer, remove from heat and let sit for 2 min, then stir gently for 5 seconds. The milk should separate into curds and whey.
Line a bowl with cheesecloth and carefully pour the cheese into the bowl (you may want to use a slotted spoon). Cover the bowl with plastic wrap and allow to drain for 1-2 hours. Remove from cheesecloth and stir in lemon zest. Refrigerate until ready to use.
This works great on toast, in pancakes, to bake. Whatever your heart desires. Enjoy! #sweetthensavory

This stuff is the bomb! I haven’t had any for a few weeks so I was very happy to have some tonight with Greek yoghurt and fresh strawberries, delicious!

My CSA is between seasons next week which meant I’m totally on my own for meal planning. Splurged on a bunch of cheese because cheese is delicious 🧀 and also got a six pack of a beer I love to treat myself so the price tag was a little steeper than I’d usually spend, but I’m super pumped to eat all of this food, which I see as an upside to my usual “meh I don’t feel like eating this, I’m going to get takeout” wonk

Every time it touch me deeply, but this time, when I saw my article shines on me from Laisha magazine's cover - which is the leading women magazine in Israel, it left me speechless.
Healthy food and living, just as travelling the world in order to find the hottest trends for the human body and soul, is one of my biggest passions, probably since I was born and raised by my magical mother. and so every time I get to bring such a magical trend to my country it warms my heart.
I’m sitting in Poland, wrapped with my family’s love, watching my article published, and I’m the happiest person on earth.
