Try some nut bread! It is really tasty and nuts are supposed to be vaguely good for you, right? Pistachios are one of the major nuts in this creation but I always wondered about that specific kind of nut. When I was younger, I always saw pistachio nuts that had been dyed a bright red or nearly-fluorescent pink color. I don’t see any that look like that anymore. Turns out it was a practice that was common 20 years ago. The nuts were dyed red to hide ugly bruises that they development when harvested. However, production location and techniques have changed and now the nuts aren’t jostled around as much anymore, so no need to dye them. Companies looking to save money anywhere they can decided that dying them was costly and unwarranted, so now you get tan and green pistachios. I wonder if any other foods in my lifetime will change in such an interesting and strange way.
