I whipped up a big batch of granola this am! I used to make this stuff all the time... then I had kids and that didn’t happen anymore! . I got the recipe years ago from the morning news, of all places! . The base is oats, almonds and coconut with coconut oil, honey, maple syrup and a big spoonful of cinnamon. Then you add whatever combo of dried fruit, seeds and nuts you want! My fave add ins, diced dried apricots, and lots of seeds! . Just had a flashback... It was almost ten years ago when my toddler went to the refrigerator on his own, grabbed a bowl of chopped up romaine lettuce, and began crunching away! That was not typical at all, as both of my kids at the time were extremely picky when it came to vegetables! But a few months prior, I began adding Juice Plus+ to their diet after our pediatrician recommended it.
