VEGAN CHOCOLATE CAKE BATTER SPREAD⠀
It's rich, it's chocolatey, and it's free of dairy and processed sugars! If you've got a blender and a dream, then this, too can be yours! Here's the recipe:⠀
1 can chickpeas, rinsed and drained⠀
1/4 c maple syrup⠀
1/4 c cashew butter⠀
4 tbsp cacao powder⠀
1 tsp vanilla extract⠀
Throw the ingredients into your blender and blend until smooth. ⚠️ CAUTION ⚠️ Dip at your own risk! This stuff is highly addictive! 😜🍫🍫🍫⠀

My first Chicken Shawarma was a success!!!! This recipe from NYTCooking is amazing because it’s so easy and so tasty! Plus you don’t need a rotisserie, it can be done right in your oven. Shawarma is a Middle Eastern meat preparation and very popular street food. This recipe called for chicken thighs...I did half chicken thighs and half chicken breast. I didn’t need to adjust the cook time, the chicken cooked evenly in the oven. I filled a pita with the chicken, my homemade tzatziki sauce, some cucumbers, Kalamata olives and feta....you can’t go wrong with feta!!! Makes great leftovers too...👍🏻

Roast Cauliflower Steaks w/ Tahini Drizzle and Pomegranate Arils •
Preheat oven to 500F
Wash and pat cauliflower dry.
Cut cauliflower in half and then into 1” ‘steaks’. (1 head of cauliflower should yield 3-4 steaks. Roast rest of florets as well ). Drizzle with olive oil, lemon, cumin, 2 cloves of minced garlic, s+p, and garlic powder.
Lay cauliflower on baking sheet and roast for 8 mins with tin foil covering tray (to allow cauliflower to steam a bit). Remove tin foil and continue roasting for another 20 mins. Flip after 20 mins and roast another 15 mins.
Remove from oven, drizzle with olive oil, lemon, and a thick amount of tahini. Garnish with chopped chives and pomegranate arils. •
Enjoy hot, room temp, or cold. As itself or on top of salads or mixed in with cous-cous.

Traditional meals are the best! This is Achu - pounded cocoyams (taro) served with Yellow Soup - a soup made with exotic spices. It is a dish that's close to my heart because it is my dad's favorite meal. It is his traditional meal. Growing up, we ate Achu every week. It takes a bit of effort to make but when I lick that delicious soup and chew on a juicy piece of beef, I realize that every effort is worth it!
