Happy National Pretzel 🥨 Day!!!! We enjoyed Germany beer, schnitzel and of course, a giant pretzel.
Pour 1/4 cup canola oil in pan on medium heat
Peel and slice plantains
Fry plantain slices until lightly browned
Remove from heat and place on paper towel (to absorb oil)
Smoosh with the back of a spoon until slightly crushed
Place back in hot oil and fry some more
Remove from heat. Sprinkle with s+p and paprika. Serve

is Mediterranean potato pancake. I had a technical difficulty with the flip, my technique was good but the pancake was sticking😐 As you can see, I figured it out and got it back in that pan without making more of a mess. My child was hungry so dinner had to get done! When it was, she ate three pieces! Thank you @carlaphall

Well, here you have it. Seared rock fish atop cilantro lime cauliflower mash, cumin (mint, lime, wasabi) crema, fried shallot, cantaloupe, watermelon radish. It was bomb!!! Chloe hated it 😩. Me: 0 Chloe: everything I make x 365 🤣

Some changes are happening but I really dont want to give up on my dream of spreading vegan food and my cooking... What do you guys think? I made these last night which flavor would you try?
1. Chocolate hazelnut
2. Peanutbutter date and chia
3. Lemon, apricot, coconut and poppy seed
Still testing out flavors and hoping to get these into some coffee shops and grocery stores when the final product is complete.

Kale Carrot Salad •
Combine shredded carrots, kale, and cabbage
Drizzle lightly with olive oil and massage in with hands
Dressing: olive oil, apple cider vinegar, Dijon mustard, garlic salt, honey, s+p
Dress salad and sprinkle with pomegranate seeds
Sweet Potato Chips
Preheat oven to 375
Wash and dry sweet potato. Keep skin on
Slice into disks. Get them as thin as you possibly can
Drizzle baking sheet with olive oil and line sweet potato chips on baking sheet. Flipping them once to coat both sides of raw chips
Season chips with garlic salt, paprika, ‘herbs de provence’ (or dry seasoning of your choice), s+p
Bake for 30-45 mins, checking periodically. Turn oven up to 400 for the last 5 mins
Remove from oven, let them cool off, sprinkle with more salt, and serve (I like to dip them in ketchup or dijon)
Rainbow Shrimp Spring Rolls
Cut multicolored carrots, radish, raw zucchini, raw asparagus and radish very thin to make long strips.
Cook baby shrimp on stovetop with coconut oil, minced garlic, fresh chives, s+p.
Place a quarter inch of water on a rimmed plate. Individually place each sheet of rice paper on the plate and gently massage with water till flimsy, but not soaked.
Place your veggie/ shrimp filling on each rice paper, splash with teriyaki, soy, or peanut sauce, and super gently roll like a burrito (fold each end in). Cut each roll in half, sprinkle with black sesame seeds and serve.
In skillet (or pan) sauté diced tomatoes and yellow onions with olive oil, minced garlic, s+p till very tender (low heat). Add in a bunch of kale or spinach and sauté. Stir infrequently. Add paprika, garlic salt, pesto (or avocado pesto), and rosemary.
Add a layer of tomato sauce, sprinkle of parm, feta, and pine nuts. Cover and let sit on very low heat for 10-15 mins, adding in more greens and tomato sauce as desired.
Create little pockets for your eggs. Crack an egg gently into each pocket. Cover and let eggs cook to desired runniness.
Remove from heat, sprinkle with rosemary and feta and serve. *ideally served with bread to be used as a vessel to soak up all the layered yummyness*
Sweet Potato Shiitake Mushroom Pizza •
Heat oven to 450F
Sautée shiitake mushrooms with sesame oil, minced garlic, s+p, and a splash of soy sauce.
Roll out whole wheat pizza dough till paper thin. Bake for 8 mins and remove from heat.
Sprinkle dough with sesame oil. Schmear “sweet potato mash” as base ‘sauce’. Lay shiitake mushrooms on dough and layer with mozzarella, parmesan cheese and fresh rosemary.
Bake for another 10 mins. Sprinkle with s+p. Serve.
