I have 3 words: PUMPKIN SPICE PANCAKES 😍🥞 It may be 90 degrees outside today, but I’m over here ready for fall, feasting on these pumpkin pancakes 💁🏼♀️ My favorite method for pancakes? Mix it all in a blender🌪 Super easy! These taste like fall and will definitely be a staple around here the next few months 💯 Happy Friday Eve! 💃🏼 HOW TO 👉🏼
Add 1/2 cup @woodstockfoods
oats to blender (I use a @vitamix
). Blend till it becomes a powder consistency.
Add 1/2 tsp each: baking soda + baking powder + cinnamon. Blend for a few seconds.
Add to blender: 1 egg + 1/4 cup canned pumpkin + 1/4 cup milk of choice + 2 tsp maple syrup. Blend again till combined.
Heat a skillet over medium. Add a bit of coconut oil or butter. Cook add 1/4 cup batter for each pancake. Makes 4 pancakes 🥞 Top as desired (I used maple syrup + @bobsredmill
coconut flakes + pumpkin seeds). DEVOUR 🤤

vegan white chocolate, cranberry, coconut and hazelnut granola — the last thing i baked at home before leaving! thick clusters of caramelised crunch and crisp, with toasted buttery hazelnuts and tart cranberry gems — you know you have successful cluster action when eating your granola sounds like Walking On A Gravel Path (ASMR).mp4. best accompanied with soy yogurt, sprinkled on top of a smoothie, drowned in vanilla almond milk. made my own white chocolate drops by melting down loving earth white chocolate and re-fridging them into mini drops! recipe for the granola is as follows: ⭐️
mix 1 cup rolled oats, 1/4 cup oat flour, 1/4 cup almond meal, 1/3 cup roughly chopped hazelnuts, 1/2 tsp cinnamon, 1/4 cup shredded coconut. melt 3 heaped tbs coconut syrup, 2 tbs coconut sugar, 1 tbs nut butter and 1/3 cup coconut oil together and incorporate well. bake, spread out and packed tightly in a flat layer, on a large parchment lined sheet for 25 minutes at 160 degrees Celsius until golden brown. let cool completely, break up into fat clusters, and toast for another 10-15 minutes until golden brown all around, stirring occasionally and gently. once cooled, toss in cranberries and vegan white chocolate chunks and enjoy!

barolo wine marinara, sugar-free tomato purée, @boca.burger
crumbles and a BUNCH of spices! I combined rubbed dalmatian sage, thyme, oregano, onion powder, garlic powder, salt, pepper and paprika to get a sausage-y flavor with my boca crumbles as I sautéed them in a pan and then added the sauce and tomato purée. I basically use the “guess and check” method of adding spices — sampling, and adding more as needed — does anyone else cook this way?! Served it with broccoli, spinach, and a mix of @traderjoes
