Christmas season is knocking at the door and that calls for all things sweet and spicy! 🎄 These Vegan Pumpkin Spice Cheesecake Bars by @wildblend are a must-make this festive season 🍁 . Ingredients: Base layer • 7 Medjool dates, soaked & pitted • 1.5 cup pecan nuts • ¼ cup raw cacao powder Pumpkin layer filling • 1 cup pumpkin puree • 1.5 cups soaked cashews • 2 Tbsp unrefined coconut oil • 4 cacao butter buttons • 1-2 Tbsp maple syrup • ½ tsp pumpkin spice • ¼ tsp vanilla powder • ¼ tsp turmeric • pinch of pepper Method: 1. For the base, pulse all ingredients in a food processor until a sticky dough forms. 2. Press in a lined square baking dish and refrigerate while you make the filling. 3. For the pumpkin layer, melt the cacao butter over a double boiler. 4. Then add all filling ingredients including the melted cacao butter to a high speed blender or processor (she's used a @vitamix_aunz ) and blend until smooth and creamy. 5. Pour over the base and spread evenly. 6. Freeze for 4-6 hours or overnight. CHOCOLATE WAFFLE for breakfast 🍫 Never a bad move for a Friday 😎 Used my regular waffle recipe (main ingredients are banana, egg and coconut flour) and added cacao powder to make it chocolatey. What are your weekend plans? 💁🏼‍♀️ HOW TO 👉🏼 In a blender, blend till smooth: 1 ripe banana 1 egg and 1 egg white 2 TB @bobsredmill coconut flour 2 TB @betterbodyfoods cacao powder 1/2 tsp baking soda Pinch of salt Preheat waffle iron and grease/spray. Add batter and cook till done. Top with caramelized bananas 🍌 and @crazyrichardspb creamy peanut butter 😍

What you’re gonna do when hubby returns a fully ripe banana saying he forgot to eat it, which you’ve kept in his office bag for snacking 3 days ago 🤦‍♀️! So this was my situation yesterday which resulted into these Banana Avo Cake Cookies 😋! These are soft, cake-like and super easy to make. Guess I’m gonna munch on this whole weekend with some hot cocoa which is a basic necessity when it’s nearly 1 degree Celsius outside 😲! . INGREDIENTS *1 1/4 cup whole grain spelt flour or whole wheat flour *1/2 tsp baking powder *1/4 tsp baking soda *3 tbsp desiccated coconut *1 big ripe banana (mashed) *half avocado (mashed) *5 tbsp maple syrup *2 tbsp melted coconut oil *1 egg (beaten) [ Skip it for vegan version or can be replaced with 1 tbsp flax meal ] *1 tsp vanilla extract *some sliced almonds for topping . INSTRUCTIONS Preheat the oven at 350°F. In a bowl, whisk together egg, banana, avocado, vanilla, coconut oil, and maple syrup. Combine the flour, desiccated coconut, baking powder, and baking soda. Give it a gentle mix. Drop tablespoonfuls on a parchment paper lined baking tray. Top it up with sliced almonds and bake at 350° for 15-18 minutes. Homemade Granola 2 cups oats ¼ cup pecans ¼ cup pumpkin seeds ¼ cup sunflower seeds ¼ cup roasted or raw cashews ¼ cup dried mixed fruit ¼ cup freeze dried strawberries or raspberries ¼ cup freeze dried blueberries ¼ cup coconut oil ⅓ cup maple syrup ½ teaspoon cinnamon ¼ teaspoon pink Himalayan salt Pinch of cardamom Method: Combine oats, raw nuts, seeds and spices in bowl. Mix well. Add in coconut oil and maple syrup, mix well. Spread into a thin layer on a large cookie sheet lined with parchment paper and bake at 330 degrees for 12 minutes, flip and put back in for 10-12 minutes until golden brown. Add in raisins and roasted nuts/seeds, mix well again and place in Mason jars. Keeps on the counter for three days and in the refrigerator for a week.

Let’s talk foodie fails. This was supposed to be a Purple Sweet Potato Dutch Baby and it turned blue because I added baking soda to the mixture (duh). I knew that the acidity in baking soda has that effect on purple veg (i.e. purple cabbage etc.) but somehow I forgot and voila this is my beautiful brown-blue Dutch Baby. Despite the slight colour fail it’s hands down the BEST dutch baby I’ve ever tasted. Promise, I’ll try this again and next time it will really be purple. Ingredients: • 1 cup purple sweet potato, steamed • 1/2 cup unsweetened coconut milk • 2 Tbsp coconut oil • 1 pasture-raised egg (or vegan egg) • ¼ cup tapioca starch • ¼ cup blanched almond flour • 1 T maple syrup (some extra for drizzling) • 1/4 t vanilla • 1/4 t sea salt • ½ tsp baking soda (will turn mixture blue) Method: 1. Preheat the oven to 200ºC and place 2 tablespoons of coconut oil in a cast iron skillet. Place the pan into the preheated oven for 7 minutes to preheat. This will allow the Dutch Baby to cook through. 2. While skillet is heating, combine remaining ingredients in a blender. 3. Carefully remove hot skillet from the oven using a mit and slowly pour the Dutch Baby mixture in. 4. Place back in the oven and cook for 15 minutes. 5. Serve topped with candied walnut crunch and drizzled maple syrup. Candied Walnut Crunch Topping • 1 tsp coconut oil • ¼ cup walnuts • 1 tsp malpe syrup • ½ t cinnamon Method: 1. Heat coconut oil in pan add walnuts and sprinkle with cinnamon and maple syrup. 2. Stir until maple starts to caramelise. 3. Crikey it's cold out there! 😬❄️ Thankfully I have just the cure for those chattering teeth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ *Tuscan White Bean and Tortellini Soup* ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 tbsp ghee or olive oil 1 tsp garlic, minced 1/2 cup sweet white onion, chopped 2 cups sliced white mushrooms 2 medium carrots, thinly sliced 1 tsp dried oregano 1/2 tsp dried thyme 1/2 tsp cracked fennel 6 cups chicken or vegetable stock 2 (14.5 oz) cans diced tomatoes 10 oz cheese tortellini 1 (14.5 oz) can white kidney beans, drained 4 cups chopped kale 4 large basil leaves, chopped sea salt and black pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Heat ghee in a large dutch oven or stock pot over medium heat. Add garlic, onion, mushrooms and carrots. Cook uncovered for 5-7 minutes, stirring occasionally. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add oregano, thyme, cracked fennel, vegetable stock and diced tomatoes. Bring to a boil. Stir in tortellini and cook until al denté, about 7 minutes. Turn heat off and stir in beans, kale, basil leaves, sea salt and black pepper. Allow kale to wilt for 2-3 minutes. Stopped to get an oat milk matcha latte after yoga today 🍵 I rarely drink caffeine anymore but I’ve been dealing with a serious lack of spoons the past week or so. I’m assuming it’s because of the stress about moving, having loooong days, and just having a lot of work on my plate in general. It’s hard not to feel frustrated by the debilitating fatigue and pain when there’s so much to do and the deadline is quickly approaching. Here’s to hoping this latte helps me get through the day! Sticky oatmeal 🙏🏻 today i needed an extra sticky oatmeal! Usually I prefere my oatmeal more creamy than sticky but from time to time I love to have my oatmeal very sticky. If you want your oatmeal sticky use less liquid and optional some psyllium husk and if you want to have a more creamy consistency use more liquid, cook it a bit longer and/ or replace a part of your oats with oat flour/ oat flakes- easy as that 😊 🇩🇪 Hello ihr Lieben, heute mal mit extra sticky Oatmeal. PUMPKIN SPICE CHEESECAKES, anyone? 🎃🧡 Literally drooling over these dairy free cheesecakes made with a @emmysorganics pumpkin spice cookie crust 🤤 Did I mention they are no bake and super easy to make? A great addition to your Thanksgiving dessert table, if you ask me 💁🏼‍♀️✨ Hope you have a wonderful Wednesday! 😘#emmyspartner #cleancookies HOW TO 👉🏼 1️⃣ Line a muffin tin with 6 silicone or paper baking cups. 2️⃣For crust, blend 9 @emmysorganics pumpkin spice cookies with 1 TB coconut oil in a food processor until cookies are broken apart, about 30 seconds. Add 2 TB of cookie mixture into each cup, then use your fingers to push up the sides to form a cup shape. Freeze for 15 minutes. 3️⃣ While crusts are freezing, prepare filling. In a high speed blender, combine 1 cup cashews (soaked overnight and drained) + 1/3 cup full fat coconut milk + 3 TB maple syrup + 2 tsp lemon juice + 1 tsp pumpkin spice. Blend until smooth, about 2 minutes. 4️⃣ Divide filling between the 6 cups. Top each with a pecan half. 5️⃣ Refrigerate at least 1 hour. Store in the fridge.
Spring Rolls Ingredients: Rice paper wraps Red and yellow bell pepper Mini cucumbers or regular size Butternut squash noodles Blanched green beans Purple cabbage Black sesame seeds (optional) Lime Sauce: Cashew butter Tamari or soy sauce Maple syrup Method: Cut bell peppers into strips. Cut cucumbers into quarters. Cut up cabbage into strips. Sautee red and yellow bell pepper with @nutiva butter-flavored coconut oil, garlic powder and salt. In two medium sized pots of water with 1/2 tsp kosher salt to a boil, drop in washed organic green beans in one and baby carrots in the other and boil for 3 to 5 minutes. Remove from heat and place an ice bath (ice and water). Halve cooked baby carrots. Sauce: 1/4 cup cashew butter 1 tablespoon maple syrup 1 1/2 tablespoon tamari or soy Mix all ingredients in food processor. Porn bowl. Garnish with black sesame seeds. Lay out all ingredients with in hands reach and prepare bowl with warm water to soak rice paper in. Soak rice paper for 10 to 15 seconds. Place smooth side down and place in red Pepper, butternut squash or carrots, yellow Pepper, green beans or cucumber and purple cabbage in center stacked on top of each other.  Sprinkle in a few black sesame seeds if desired. Roll 1/4, tuck in sides and roll again. Cut in half to display beautifully or keep while for practical eating. Garnish with lime and enjoy! *you can also make these rolls with all raw ingredients if desired, but I like to lightly cook them to bring out the flavor and multiply powerful antioxidants (cooking lycopene and beta carotene in the carrots and peppers significantly increases absorption levels) and helps breaks down cabbage for better digestion.

Come here for the secret recipe😜🎁 Texture of cake is super super awesome! ❤ Rafined sugar free banana bread recipe; ▫️4 ripe bananas ▫️85 ml plant based oil ▫️15ml plant based milk ▫️200 gr maple syrup ▫️230 gr whole wheat flour ▫️15 gr baking powder ▫️2 tablespoons flex seeds ▫️1 handful raisin ▫️Any kind of nuts optinal but delicious😋 1. Preheat the oven to 180°C 2. In a mixing bowl, mash the ripe bananas and add wet ingredients. 3. Mix the dry ingredients in another cup and add to mixing bowl. 4. Bake for 40-50 minutes at 180°C, or until a tester inserted into the center comes out clean. 5.
