Follow @Food.Lovers.Life During the summer, my herb garden is ridiculous. I have over 20 different varieties which I prune and harvest from constantly. Some examples are lemon basil, lime basil, cinnamon basil, blue spice basil, silver thyme, orange thyme, Greek oregano, chives, society garlic, tarragon, flat leaf and curly parsley, and dill. (I know, I'm just showing off at this point.) But seriously, having all of these fresh herbs is the best. Especially if you love to cook, like me! Now when it comes to fresh herbs, there are many different ways to enjoy them. I find that one of the most *effective* ways is by making a flavorful pesto, using a very large amount of fresh herbs that are pulverized into a paste releasing all of their flavors. Blanched almonds provide the perfect texture and mild flavor for the herbs to hang out with while fresh lemon juice and miso intensifies the situation in the best way possible. As for the vegetables, I used sugar snap peas, English peas, and fava beans that were blanched. You can honestly use anything you'd fancy. I quite like the ear-shaped orecchiette pasta as it's incredibly satisfying to eat. Once again, this recipe is available on my blog, and linked up in the Epicurious bio. Grease a large tart tin, and line base with baking paper⠀⠀ 2. Mix everything in a bowl until well combined. Pour into tart tin and create an even base. Take your time to ensure it’s even and uniform across the tin. Set aside to make the filling.⠀⠀ ⠀⠀ To make the filling⠀💚⠀ ⠀⠀ 1.5 cups raw cashews, soaked 4 hours then drained⠀⠀ 1 Tbsp vanilla bean paste⠀⠀ Pinch good quality salt⠀⠀ 3/4 cup nut milk (almond or coconut works well)⠀⠀ 1/4 cup rice malt syrup⠀⠀ 30g cacao butter, melted (and set aside for 5 mins to cool slightly)⠀⠀ 1 drop pure lavender essential oil (optional)⠀⠀ ⠀⠀ Method⠀💚⠀ ⠀⠀ 1. Add all ingredients besides melted cacao butter to a high-speed blender and blitz on high until very smooth.⠀⠀ 2. Add cacao butter and blitz again for 30 seconds. Immediately pour into the base, then set in the freezer for 3+ hours.⠀⠀ ⠀⠀ To serve, allow to defrost for 15 mins +. Serve with fresh berries, edible flowers and coconut yoghurt. Roasted Corn, Avocado and Tomato Salad Dreaming of this roasted corn salad fit for a hot summer day. It’s perfect for weekend entertaining paired with grilled chicken, fish or steak. Recipe below 👇🏼 . . . 1 medium ripe avocado, diced 2 cups fire roasted corn kernels 2 cups cherry tomatoes, halved 1 handful cilantro, chopped For Dressing 2 tbsp olive oil 2 tbsp fresh lime juice 1 tbsp honey 1/8 tsp sea salt Combine corn, avocado and tomato in a mixing bowl. In a small bowl, whisk ingredients for dressing together. Pour dressing over salad and gently stir to coat. Serve chilled.

Dinner Idea: Vegan Big Mac by @eat_figs_not_pigs 💛 Recipe: Ingredients:⠀ Burger Sauce:⠀ 2 Tablespoons vegan mayonnaise⠀ 2 Tablespoon ketchup⠀ 1 1/2 teaspoons sweet pickle relish⠀ 1 1/2 teaspoons dill pickle juice⠀ 1 tsp white vinegar⠀ ⠀ Burger:⠀ 1 1/2 hambuger buns - 1 top bun, 2 bottom buns⠀ 2 vegan beefless patties (we used Gardein Ultimate Beefless Patties)⠀ Dash of salt and pepper⠀ Burger sauce⠀ 1 Tablspoons white onion, finely diced⠀ 1/2 cup shredded iceberg lettuce⠀ Sliced dill pickle⠀ 2 slices Vegan American cheese slices (we used the brand Follow Your Heart)⠀ ⠀ Directions:⠀ 1. For the burger sauce, mix all ingredients together and set aside.⠀ 2. Cook Beffless patties accordinf to pacage directions, seasoning with a bit of salt and pepper. We also melted the vegan cheese on our pan after cooking the patties for about 30 seconds, but thats totally optional!⠀ 3. Build the Vegan Big Mac in the following order from the bottom up - bottom bun, half the burger sauce, half the onions, half the lettuce, both slices of cheese, burger patty, second bottom bun, the rest of the burger sauce, the rest of the onions, lettuce, pickles, patty, top bun. Did someone say CARROT CAKE? 🥕 Carrot cake overnight oats = dessert for breakfast win 💯 In our house, overnight oats are the perfect solution for a quick breakfast. Prep them the night before, stir in the morning, and add toppings as desired 💗 Also, toasting coconut flakes is a game changer! 🙌🏼 Heat a skillet over medium low and add some coconut flakes. Stir till golden. Brings out the flavor and adds crunch 🤤 Hope you guys have a wonderful Friday! 😘 How to 👉🏼 The night before, combine: • 1/2 C @woodstockfoods Irish style oats • 1 C almond milk (used my @elliesbest bag) • 1/3 C grated carrot 🥕 • 1 tsp @betterbodyfoods chia seeds • 2 tsp maple syrup • Dash of cinnamon and nutmeg Stir in the morning. Topped with banana slices + an @emmysorganics Vanilla Bean cookie + a chopped Medjool date + toasted @bobsredmill coconut flakes 🤗
My mother isn't really a big fan of chocolate (weird, right? I can't go a day without having some chocolate derivative one way or another) so I made the cake with only 2 tbsp of cocoa powder. I must admit, when cocoa is added in little amounts, it tastes substantially better than when there's too much. I do make up for that by adding a rich chocolate ganache on top. But this time, it's not only chocolate but something else as well

Rich Raspberry Vanilla Cheesecake 🍰❤🍦⠀⠀ ⠀⠀ Ahhh there’s not a whole lot I don’t like about cheese cake, except for what it does to your body, digestion, and waistline … but this recipe is another healthy dessert or sweet treat made with nourishing ingredients that are actually good for you! This recipe is also sugar free and has no added sweeteners (not even rice malt or maple syrup!) so you can enjoy this gorgeous dessert without guilt. It’s simple to make and will impress the pants off all your friends at your next dinner party. 👌😁⠀⠀ ⠀⠀ Just 1 cup of raspberries contains 8g of fiber (!), that’s almost a third of the fiber most of us need for an entire day. They’re also lower sugar than most fruits, which can be a great choice for anyone watching their blood sugars like diabetics or simply those on a fat loss diet. When it was raining heavily outside yesterday and we were baking Oat and Whole Wheat Cookies. We tried a vegan version of the oat cookies and were happy with the great taste and crunch. With coconut oil, coconut milk, oats and Wholewheat flour, the cookies turned out crisp and delicious. These are refined sugar free too! Add 1/4 cup crushed almonds or peanuts for the crunch. Dessert aka breakfast aka brunch aka afternoon snack aka whenever snack is my favorite dessert💫 ⠀⠀ ⠀ Chocolate and coconut chia pudding with nectarines and rawnola! HOW TO? ⠀⠀ ⠀ 🌿Serves 4: Whisk together 3 dl (1.2 US cups) coconut milk + 1.5 dl (0.6 US cups) water + 3 tbsp raw cacao + 1 tsp pure vanilla powder + 1 pinch of flakey salt + 4 tbsp chia seeds. Let sit for 10 minutes, then whisk again to avoid the chia seeds from clumping. Let sit in the fridge for at least 2 hours, until you get a creamy chia pudding. ⠀⠀ ⠀ 🌿Mix 8 fresh dates (pitted) with 0.5 dl (0.2 US cups) sunflower seeds + 0.5 dl shredded coconut + 0.5 dl roalled oats + 1 tbsp cold pressed coconut oil until a crumble in a food processor. You might want to add a pinch of ground ginger/cardamom/cinnamon/chili - or whatever flavor you may like - as well! ⠀⠀ ⠀ 🌿 Divide the chia pudding in to 4 glasses. Cut 1 nectarine (or any fruit/berry in season that you prefer) in to smaller pieces, put on top of the chia pudding. Sprinkle with the crumble. Garnish with fresh mint! adapted my very lovely friend @biancazapatka ’s vegan cheesecake base to make this cookies and cream cheesecake slice — dark chocolate mocha biscuit base, vanilla cheesecake filling filled with crushed chocolate cookies. cuts through mousselike and butter-soft with the tines of a fork. ridiculously decadent, all crunchy chocolate clamour and dashing ivory cream, richer than an oligarch with their hands in a till.
