Mexican Street Corn and Caprese egg whites cups.
These are so good, #vegetarian
, and #mealprepped
breakfast/snack for the week!
Here’s what you need:
1/4 green pepper chopped
1/2 tsp taco seasoning
3 cups egg whites
2 tbs milk
Combine all ingredients and place in bottom of silicone muffin pans.
Mix egg whites, milk, salt and pepper.
Pour in muffin compartments.
Bake at 350 for 25 minutes
Serve with salsa or plain! So good! .
I’ve posted the Caprese ones before. You can just chop up tomatoes, fresh mozzarella, and fresh basil. I did not have fresh basil so I just sprinkled a little Italian seasoning in the compartment. Add egg and then cook the same way! Love a little variety! It’s the spice of life 😉
