Moroccan aubergine salad aka Zaalouk
Let’s start with my favourite...well all aubergine recipes are my favourites but this one is a very special one as it travelled with me from amazing Marrakesh 👌

this salad will never taste as good if you roast/boil aubergine - only grill or gas hob on a rack!!! Believe me - the smoky flavour of aubergine is essential for this dish❗️ don’t be afraid of fire, just use tongs and be careful!
RECIPE (serves 1..and you will not want to share 😋): ✔️ take 1 big aubergine, skin on, turn on your grill or gas hob and put it directly on fire. Using tongs turn it around until the skin is burned and it smells like heaven 😊 it will take you 10-15 min. No rush. Burn the aubergine properly. When finished, put the aubergine in cold water to rest, it will help the process of peeling the skin.
✔️ meanwhile, take 1 big tomato, peel the skin (do you know what’s the best way to do it? 👉 put whole tomato in boiling water for a minute. The skin will come off easily 👌)
Cut it and remove all the seeds as well - we don’t want any access liquid.
✔️ chop tomatoes and add to frying pan with 2-3 spoons of olive oil. Add 1 clove of garlic, let it cook until soft.
✔️ chop your peeled aubergine into small pieces and add to tomatoes.
✔️ add salt, 1 tsp of paprika and 2 tsp of cumin (I am a big fan of cumin so I add 2 spoons, you can stick to 1 if you wish so)
✔️ mix all together really well, fry a bit more so the mixture soaks in all the spices and oil.
✔️ chop some parsley (or coriander, whatever you prefer. I personally love coriander more with this dish)
Now take a big spoon, hide somewhere quite and enjoy 😊
You will want more so ignore my proportions, double or triple them straight away👍
Eat it on its own or on a crostini as canapé (like on the picture) or even as a dip with bread 👌
