Happy #recipethursday everyone! This week’s recipe for Strawberry 🍓 Oat Muffins comes from our friend @cookieandkate. . These muffins can be made #top8allergenfree with substitutions to suit your diet. They’re a great make-ahead for those busy school mornings that are upon us! . Here’s what you need to know! Note: recipe makes 12 muffins. . INGREDIENTS . - 1 ¾ cups white whole wheat flour or regular whole wheat flour (or wheat/gluten-free alternative as appropriate)! - ⅓ cup old-fashioned oats, plus 2 tablespoons for sprinkling on top (or wheat/gluten-free alternative as appropriate)! - 1 teaspoon baking powder - ½ teaspoon baking soda - ½ teaspoon fine sea salt - ⅓ cup extra-virgin olive oil - ⅓ cup maple syrup - 2 eggs, preferably at room temperature (or flax bloom as appropriate)! - 1 cup plain Greek yogurt (or dairy alternative, we used @so_delicious coconut plain Greek yogurt)! - 2 teaspoons vanilla extract - 2 cups hulled/diced strawberries (from 1 pound of strawberries, you may not need them all). We threw in some blueberries to sub a few strawberries! - 1 teaspoon turbinado sugar (also called raw sugar), for sprinkling on top (optional) . INSTRUCTIONS . - Preheat the oven to 400 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or cooking spray. - In a large mixing bowl, combine the flour, ⅓ cup oats, baking powder, baking soda, and salt. Stir with a whisk to blend. - In a medium mixing bowl, combine the oil, maple syrup, and eggs. Beat together with a whisk. Add the yogurt and vanilla, and mix well. - Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). Gently fold the strawberries into the batter. The mixture will be thick, but don’t worry. - Divide the batter evenly between the 12 muffin cups. They will be quite full! - Sprinkle the tops of the muffins with the remaining 2 tablespoons of oats, followed by the turbinado sugar. Bake the muffins for 19 to 22 minutes, or until muffins are golden on top and a toothpick inserted into a muffin comes out clean. Here’s this month’s follower question: . Hi, Tara! Our son is allergic to nuts and has celiac disease and goes back to school in a few weeks. We don’t feel comfortable buying school lunches, so we send a lunch with him everyday. He’s complained in past about my “boring lunches." Do you have any ideas for foods that are nutritious and delicious I can include? We need to change it up! . Tara’s response: . As a mom who packs 3 lunches a day 180 days a year, I will tell you it’s hard work keeping it fun, delicious, and nutritious! If you’re gluten-free, I’d say skip the sandwich and get creative! . Embrace the Bento box and fill it up with lots of different foods. Always include a fruit and vegetable, a protein, a starch, and a treat. We moms have to compromise sometimes, right?! . Here are a few examples: cut up chicken, GF rice crackers, carrots with ranch dip, raspberries filled with choc chips, hummus with corn chips, grape tomatoes and cucumbers, a banana, and a GF granola bar. . We decided to play it safe and rid our pantry of any nut products, however, it's been a staple for getting healthy fats into my kids in past. What would you recommend we supplement to ensure they're getting the healthy fats and nutrients their bodies need? . Tara’s answer: Here are some great healthy fats to add to your family’s diet: avocados 🥑, seeds (e.g., sunflower & chia), seed butters (my favorite is pumpkin seed butter!), olives, olive oil, ground flaxseed (tip: add it into muffins, oatmeal, granola, or pancakes), and fatty fish like salmon or tuna. Heyo, it’s #recipethursday ! Get ready for the darkest, richest, chocolatey-est brownies you’ve ever eaten! Don’t tell anyone, but they’re made with a whole can of black beans😵 . Thanks to @abcthechew for this healthy brownie recipe that can also be made #top8allergenfree + #glutenfree ! . Here’s what you need to know (note: this recipe makes 9 brownies so you may want to double it)! . INGREDIENTS: . - 2 tablespoons flax seed meal - 5 tablespoons water - 15 ounce can organic black beans (drained and rinsed) - 3 tablespoon melted coconut oil (plus more for greasing muffin tin) sub with EVOO if can’t tolerate #coconutoil - 3/4 cup unsweetened cocoa powder - a pinch of chipotle chili powder - 1/4 teaspoon fine sea salt - 1 teaspoon vanilla extract - heaping 1/2 cup coconut palm sugar (sub with cane sugar if needed) - 1 1/2 teaspoons baking powder - 2 tablespoons pure maple syrup . OPTIONAL SIDES/TOPPINGS: . - vanilla bean ice cream - salted caramel sauce . DIRECTIONS: . - Preheat oven to 350ºF. Prepare a muffin tin by lightly brushing with coconut oil. For a 12-cup muffin tin, only 9 of the cups will be used. . To the base of a food processor, add the flax seeds and the water. Pulse until combined and then allow to sit for 5 minutes to bloom. . - Then, add the black beans, coconut oil, cocoa powder, chipotle chili powder, sea salt, vanilla extract, sugar, baking powder, and maple syrup. Puree until smooth, scraping down the sides to ensure everything is incorporated. . - To the prepared muffin tin, evenly distribute the batter into only 9 of the cups. Bake for 20-25 minutes, until the tops appear dry. The brownies should still have a fudgy center. . - Allow to cool slightly, about 10 minutes, before carefully removing from the pan. .
