It’s finally fall, y’all! 🍁 We’re welcoming cooler temps with this healthy, allergy-friendly hot chocolate recipe! . INGREDIENTS: . - 1 cup milk of choice (🐐 🐄 🌱) - 1 tablespoon raw cocoa powder - 1 tablespoon pure maple syrup - 1/4 teaspoon vanilla extract - Pinch of sea salt . DIRECTIONS: . - Combine all the ingredients into a saucepan over high heat, using a whisk to break up any clumps. Keep stirring until smooth and piping hot, then pour into a mug and serve warm. - Top with whipped cream or marshmallows or shaved chocolate, if desired. . . Can you feel it everybody? FALL! 🍁 It’s in the air. Well, later this week it will be at least 😜 . We’re bringing you a recipe for Roasted Butternut Squash Soup 🍜 that can be made #top8allergenfree + #glutenfree ! . Thanks @cookieandkate for this deliciousness in a bowl. Note: recipe yields about 4 bowls or 6 cups of soup! . INGREDIENTS . - 1 large butternut squash (about 3 pounds), halved vertically and seeded - 1 tbsp olive oil, plus more for drizzling - ½ cup chopped shallot - 1 tsp salt - 4 garlic cloves, pressed or minced - 1 tsp maple syrup - ⅛ tsp ground nutmeg (note: nutmeg is not a tree nut)! - Freshly ground black pepper, to taste - Up to 4 cups (32 ounces) vegetable broth . INSTRUCTIONS . - Preheat the oven to 425 degrees and line a rimmed baking sheet with parchment paper. Place the squash on the pan and drizzle each half with just enough olive oil to lightly coat the squash on the inside (about 1 tsp each). Rub the oil over the inside of the squash and sprinkle it with salt and pepper. - Turn the squash face down and roast until it is tender and completely cooked through, about 45 to 50 minutes. Set the squash aside until it’s cool enough to handle, about 10 minutes. Then use a large spoon to scoop the butternut squash flesh into a bowl and discard the tough skin. - Meanwhile, in a medium skillet (or large soup pot, if you’ll be serving soup from that pot), warm 1 tbsp olive oil over medium heat until shimmering. Add the chopped shallot and 1 tsp salt. Cook, stirring often, until the shallot has softened and starts to turn golden on the edges, about 3 to 4 minutes. Add the garlic and cook until fragrant, about 1 minute, stirring frequently. - If you have a high performance blender, transfer the cooked shallot and garlic to your blender. Add the reserved butternut, maple syrup, nutmeg, and a few twists of freshly ground black pepper. Pour in 3-4 cups of veggie broth (depending on consistency you want) being careful not to fill the container past the maximum fill line (you can work in batches if necessary). . Halloween is a hard holiday for a dietician! We have to embrace the holiday one day a year and focus on the fun costumes, trick-or-treating, and the safety of children with food allergies. . @foodallergy has done such a great job with the #tealpumpkinproject to promote offering non-food items so that all children can enjoy trick-or-treating. . My teal bucket is full of finger lights, spider rings, jump ropes, and light up yo yo's. This recipe for Baked Italian Meatballs can be made #top8allergenfree + #glutenfree . . Here’s the lowdown! . INGREDIENTS: . - 1-1.5 lbs ground turkey - 1/3 cup shredded Parmesan (or #nutritionalyeast ) - 1/2 cup breadcrumbs (or your fave alternative if you eat a GF diet)! - 1/3 cup tomato sauce - 1/2 tsp basil 🌿 - 1/2 tsp oregano - 1/2 tsp thyme - 1 tsp dry mustard - 1/4 tsp salt - 1/4 tsp crushed red pepper - 2 cloves garlic, crushed or minced . INSTRUCTIONS: . Preheat oven to 375. Combine all ingredients in a bowl. Shape into golf ball-sized meatballs. . Place on a cookie sheet or 9x13 pan coated with cooking spray. . Hello 👋 everybody, it’s time for...🥁 Dish With a Dietitian! . Read on for this month’s question about #eggallergy and answer from our #dietitian friend @taramccarthyrd ! . Question: Our son was diagnosed with an egg allergy last year. We love to bake but have had trouble finding the very best alternative to an egg. Do you suggest cooking with a flax bloom, an alternative you can buy in the grocery store, what works best (and provides the best nutritional supplement) as well? . Answer: The good news is that egg substitutes are ever-growing! The best replacement depends on what other foods you avoid, as well as what recipe you are needing an egg replacement for (e.g., brownie, cookie, or egg wash for chicken). . I have used many different substitutes and I find some work well with some recipes but may not for others. For example, you can use 1/4 cup of applesauce to replace one egg in most baking recipes with success, or 1/4 cup mashed banana (though you will taste the banana)! . The “flax egg” bloom recipe = 1 tablespoon ground flax seed mixed with 3 tablespoons warm water, then let it sit until it forms a gel-like substance. . Ener-G (made from potato and tapioca) has been around for many years and is trusted by many. I have also had great success with the NEAT egg (made from chia and garbanzo beans) when needing an egg wash for chicken cutlets.
