Smashed Avocado & Smoked Salmon Toast
Makes 2 Servings * 2 Thomas English Muffins * 2 small avocados, smashed
* 4 tablespoons microgreens * 2 jammy eggs, halved * 2 oz. smoked salmon * 1 tablespoon white sesame seeds * 1 tablespoon black sesame seeds * 1 tablespoon red pepper flakes * salt and pepper, to taste
To make: Split two 2 English muffins and toast. Evenly divide remaining ingredients and layer onto English muffins. Salt and pepper to taste. Serve immediately.
