HAPPY 🍟DAY!! I’m feeling spicy with these SPICY JICAMA FRIES πŸ”₯😍 I’m excited because for the first time in what seems like forever, we have NOTHING planned this weekend! πŸ™ŒπŸ» I’m looking forward to just hanging out, watching reruns of Fixer Upper and drinking pumpkin lattes ☺️ what do you have planned? β€’ Street corn seasoning: 1 tsp chili powder + 1/2 tsp onion powder + 1/2 tsp garlic powder + 1/4 tsp cayenne powder + 1/4 tsp Trader Joe’s chili lime seasoning + dash of S&P. Coat one pack of jicama sticks in avocado oil and then seasoning. Air fry at 400F for 12 minutes, or until crispy! Served with my Greek yogurt guac which is on my blog!
I’m just going to leave this VEGAN CAULIFLOWER MAC AND CHEESE right here *mic drop* 😱🎀 β€’ Cook half a box of protein pasta. Meanwhile chop 2 cups of cauliflower into bite size florets. Combine the cooked pasta and cauliflower into a bowl and set aside. In a small saucepan bring together 1 cup almond milk + 2 cup vegan cheese (I used the almond milk mozzarella from Trader Joe’s) + 1 Tbls arrowroot powder + S&P. Once the cheese is melted, pour over pasta and cauliflower. You can bake this at 350F for 30 minutes, or serve as is! Bowlin’ into the weekend with a loaded pumpkin baked oatmeal bowl! πŸ™†πŸ»β€β™€οΈπŸŽƒπŸ˜ I love making baked oats and then enjoying them all different ways all week! πŸ‘πŸ»πŸ€€ This morning I landed it in a bowl with some plain whole milk yogurt + honey crisp 🍎 + lots of cinnamon! πŸ˜‹ I have a pretty low key weekend, but I’m excited to see my fam tomorrow for my nephews 1st birthday party! πŸŽ‰ What do you guys have planned this weekend?! β™₯️ β€’ The recipe for the πŸŽƒ baked oats is a few posts back!
Tis the season for APPLE CRISP! πŸŽπŸ™ŒπŸ» I couldn’t contain myself while this was baking and literally stared through the oven window watching the apples bubble up 😍 I know a watched pot never boils, but no one said anything about watching apple crisp! 😬 And no, vanilla bean ice cream is NOT OPTIONAL! Enjoy, friends! πŸŽπŸ˜‹ β€’ APPLE CRISP: Peel and dice one large honey crisp apple and place in a mixing bowl with 1 tbls coconut sugar + 1/4 tsp apple pie spice + 1 tsp arrow root powder + 1tsp vanilla. In a separate bowl combine 2 Tbls oats + 3 Tbls almond flour + 2 Tbls arrowroot powder + 2 Tbls coconut sugar + 1/4 tsp apple pie spice. Add in 2 Tbls solid coconut oil and cut into the mixture using a fork until it resembles wet sand. Fill a small cast iron (or ramekins) with apples and top with oat mixture. Bake at 350F for 15 minutes or until topping is golden brown! I also placed mine under the broiler for 2 minutes (WATCH CAREFULLY OR IT WILL BURN) for extra crisp!! Let cool and top with vanilla ice cream. Serves 2-3 πŸ€—
Baked oats, it’s been too long 😍 I made a batch of one bowl PUMPKIN BAKED OATMEAL for the week and I’m hoping it lasts til Friday! πŸŽƒπŸ™ŒπŸ» Also not telling P about it because this is so good it’s one of those things you hide in the fridge from your significant other πŸ€·πŸ»β€β™€οΈπŸ™ƒ HAPPY HUMP DAY, friends! β™₯️ β€’ In a bowl combine 2 cups oats + 1 Tbls chia seeds + 1 Tbls hemp seeds + 1 tsp baking powder + 1 tsp pumpkin pie spice. Add 1/2 cup pumpkin purΓ©e + 2 cups almond milk + 1 tsp vanilla (option to add 2-3 tbls of sweetener). Mix until combined. Pour into prepared 8x8 baking dish and bake at 350F for 18-20 minutes πŸ€—

I have some cauliflower in my fridge and I think this is how I’m going to cook it! πŸ€”πŸ˜ honestly just looking for any excuse to get Trader Joe’s vegan pesto in my mouth 🀀 β€’ Slice cauliflower head into β€œsteaks” by cutting like you would a loaf of bread. Coat the steaks in avocado oil and cook in the oven at 425F for 10 minutes, flip and cook for another 5 mins or until tender. Let cool and top with pesto and optional goat cheese!
