Good morning!! I’m talking a lot about knowing when enough is enough in my stories, because today I stopped running at 2.5 miles. Sounds silly and why couldn’t I just push through the extra half mile??? Because I’m at a point where injury is scarier than the guilt I used to ALLOW myself to feel. What guilt? I still crushed 2.5 miles and I know come Sunday, I’ll have an even better race due to me cutting my run half a mile short today. Setting goals has been important to me, and I wholeheartedly understand that little setbacks like this are crushing.. but are they? You choose how you feel, so instead of wallowing and feeling guilty, I’m choosing to be positive and proud that I ran 2.5 miles. Now off to crush the day. A handful of COFFEE BREAKFAST BITES sounds pretty good on a Monday morning! Of course with a cup of coffee in the other hand 😬 They’re the perfect on-the-go breakfast or for that 3pm slump! πŸŒβ˜•οΈπŸͺ Plus, I used @drinkvitacup coffee which is packed with B vitamins, vitamin D and antioxidants! πŸ‘πŸ» I had such a great weekend which can make Monday’s a little bit more difficult than usual, so I’m doing everything I can to get back into my routine, like going for a run, having my favorite breakfast and writing a to-do list! What are your tricks for getting back into your routine? HAPPY MONDAY, everyone! β™₯️ #VitaCupCoffee β€’ Coffee breakfast bites: preheat oven to 350F. In a bowl, mash one banana. Add 2 tbls drippy almond butter + 1/2 tbls vitacup coffee + 1/3 cup oat flour + 1/4 cup oats + dash of cinnamon + dash of salt in almond butter is unsalted. You can add chocolate chips or any mix ins you’d like! Mix and roll into one inch sized balls. Drop on a parchment lined cookie sheet and bake until bottoms are browned, about 8-12 minutes. #sponsored
Daydreaming of being back home and eating these SOURDOUGH BITES, but the reality is 1) I don’t want to leave Philly and 2) P probably ate them all πŸ€·πŸ»β€β™€οΈ He said they were top 3 best things I’ve ever made and they’re only 3 ingredients!!!! Four if you count salt, but that’s a non-negotiable for me πŸ™ƒ #WholeGrainSummer #BobsRedMill #ad β€’ Sourdough bitesπŸ‘‰πŸ» Preheat oven to 450F. Mix 1 cup @bobsredmill whole wheat flour + 1/2 Tbls baking powder + 1 tsp salt. Mix in 1 cup plain whole milk Greek yogurt. This will form a dough. Spray a cookie scoop with non-stick spray and drop onto a parchment paper lined cookie sheet. Sprinkle with sea salt and bake for 15 minutes or until golden brown. Serve with mustard. β€’ @bobsredmill uses high-quality whole grains and I love using the whole wheat pastry flour when I bake because it is still full of fiber, iron and B vitamins!

Last year on my birthday I woke up for a 5:45am gym class and then decided around 3pm I needed to do more, so I went for a 3 mile run. I had hoarded my calories for dinner that night. I spent my whole day agonizing over how many calories I was going to eat and I needed to save some for the alcohol I’d be having, too. 365 days later and I don’t know who that girl is anymore. This year, I went for a run because I wanted to, ate some toast for breakfast, and then some more bread at dinner, followed by tiramisu for dessert. But my day didn’t revolve around food this year. Instead, it was all about the well wishes I received from family and friends and how full that my heart. I sat down and truly thought about how important relationships with PEOPLE are, and not food as I had once prioritized. Now there is much more room in my head to hold on to memories as opposed to occupying that space with counting calories, worrying about food or negative thoughts. 26, you’re going to be wonderful.

CHOCOLATE CHIP COOKIE DOUGH because, Monday πŸͺπŸ™†πŸ»β€β™€οΈ I got several requests to make this recipe more like the classic chocolate chip cookie dough as opposed to my other recipe that tastes more like peanut butter cookie dough. BOTH GOOD, but this one tastes more like your classic chocolate chip cookie dough. I dare ya not to eat the whole thing 🀣 Wishing you all a great week!! β™₯️ β€’ In a food processor place rinse and drained chickpeas + 2 Tbls melted and cooled coconut oil + dash of sea salt + 1/2 tsp vanilla and princess until smooth. May have to stop and crape down the sides or add almond milk to get things moving. If you do add almond milk, add by the tablespoon. Once fully processed and smooth, add 1/4 cup coconut sugar and pulse until incorporated. Fold in 1/3 cup chocolate chips and serve chilled with pretzels or graham crackers!
