As I am an ice speedskater, my goal is to be as fast as possible on the ice! To reach this goal I do a weightlifting training 2 times a week, besides all the other trainings I do! 🏋🏼‍♂️ For example are bike rides, jumping training, sprints on the running track, skating of course part of my weekly program. Good food is essential to let my muscles recover from heavy workouts like these. For example the amount of proteins I integrate in my dishes or in a shake right afterwords, when lunch or dinner is not there yet. Every dish I post (and eat) consists of a minimum of 150 g component that is high in protein. I alternate between tofu, beans, fish, lean and organic cuts of beef, chicken or pork. However proteins are also in whole-wheat bread, that I consume for lunch consists of 10 grams of proteins per 100 gram. This middle American inspired dish is my favorite beans meal from now on. It’s amazingly fresh, satisfying and flavorful. Thereby I have a confession to make that I’m totally obsessed with coriander and black beans too. It’s just so good that I’m almost using it everyday with lunch or dinner 😇. This salsa I prepared can just be used for everything: on toast, as sides, on top of stews, in a salad, inside a wrap or taco. 🥙🌮🥗🍲. It’s so good with fish too. In this dish I steamed the fish on top of the stew for an extra fresh result! 🌿 I cooked some veggies (the butternut squash and paprika) in the oven before adding them to the bean stew. They add so much flavor, and nutritional value as well. I always cook a big amount of vegetables in the oven to freeze the rest afterwards! So easy! This dish was quite a simple one, as I had not much energy after a 2,5 hour rainy bike ride with @martijnvanoosten. It’s so easy to prepare and it’s all about the radicchio and the butter beans in this dish! This Asian noodle dish is so satisfying! It contains buckwheat noodles, heavily spiced veggies and tofu! It was great after a heavy speed skating training!! This vegan middle eastern inspired one pot dish was very welcome after a hot and sweaty day. Dominated by the spices ras el hanout and crushed cumin seeds all the veggies, black eyed beans and the tofu got an extra dimension. Some sprouts on top gave the dish even more freshness 😋. This is the super loaded salad I was talking about in my last post. It contains a lot of leftover ingredients and a lot of typical local ingredients from the Veneto region in Italy 🇮🇹(where I cooked this dish). For example smoked ricotta, which I will be using a frequently in the following posts. Furthermore the combination of balsamic vinegar dressed strawberries and raw zucchini was surprisingly good 😀. Another ingredient that suits this dish is radicchio lettuce. It’s cultivated and grown originally in the Veneto region and has a slightly bitter and spicy taste 🙌🏼.
