Well it’s known that I love dinner with loads of winter veggies included. This one is loaded for sure and is inspired to a Jiggs dinner, originating from Canada 🇨🇦. Originally there is fresh salted beef included, but I’ve chosen for lean corned beef instead. The combination of this corned beef, smooth boiled split peas and warm vegetables was an eye opener for me. I had some leftover chicken from the other day I added too. Lately I’ve been making tacos from scratch with the best whole-wheat flour I bought in Italy last summer. It’s super tasty, I know what’s inside, cheap and easy to make! This time I went for a spicy pumpkin chicken combination as the filling. First char the red unions, then add the pumpkin with fennel and grounded coriander seeds. Add the brussel sprouts 5 minutes later. Thereby I marinated the chicken breast in @lachinatasmokedpaprika agridulce what added so much flavor. It goes perfectly with the fresh veggies in my opinion.
