What’s on your dinner plate tonight 🤔 For us it’s roasted eggplant boats seasoned with turmeric salt and pepper, blistered cocktail truss tomatoes, broccolini and white beans potato and peas in a spicy tomato sauce. So much #yum 😋

It’s an absolutely horrible day in Sydney today. Torrential rain, flash flooding, gusty winds and cold ⛈ But horrible weather is perfect for a chickpea and tomato curry. With added coconut milk and warming spices, served over brown rice cooked with almonds, pepitas and sunflower seeds topped with coriander and a squeeze of lime to finish it off. I’ve been away from Sydney helping my bestie paint her holiday home. With no appliances (or running water) we’ve been eating out at the local eateries. This delicious bowl @5littlepigs includes pumpkin, avocado, brown rice, crispy kale, carrot noodles and more. I’ll definitely be making this at home 👍🏻
