I admit, sometimes I go overboard with the amount of dishes I make but thereโ€™s never been a complaint nor any food wasted with packed lunches for the next day. An assortment of roasted veggies, sesame encrusted tofu, a raw veggie salad, a chickpea salad with tomato, cucumber and sumac, grilled Dutch carrots brushed with maple syrup, mushroom and zucchini pan fried with garlic, onion and chilli, brussel sprouts cooked in coconut oil and gluten free soy sauce as well as a couple of non vegan options for the family. Weโ€™ve been away for 4 days on a wonderful trip to wine country. My dear friend came to visit and brought with her lots of fresh herbs and leaves from her garden. Not wasting any time I quickly used them up in this delicious meal for us to share.
