and I are trying to get more organ meat into our diets so I snuck some beef liver into this paleo meatloaf. And bacon... bacon's an organ right? Delicious for someone who isn't a huge fan of liver 🤓

I met a freaking legend last night and my dumbass questioned him as a look alike 😂 fortunately I came out of starstruckness and actually was able to take a picture with him and talk to him for a bit 🤤

Recapping the last 2 months of 2017 and my lack of posting... I got married to the most amazing human being on the planet 👰🤵, went on a 2 week honeymoon to Cambodia and Thailand ⛰☀, and bought a house 5 days upon our return 🏡 so needless to say... this post is WAY overdue and I'm excused for my MIA-ness.
Also, mpre importantly, Today is my husband's 🎉BIRTHDAY🎈 Nathan, you are everything I could've ever dreamed up and more... I hope other people in this world are lucky enough to have wjat we have. Happy birthday babe ❤ I couldn't think of a better way to wish you happy birthday on IG than to take us back to Asia 🌏 ... It was so hard to pick just 10 pictures to post but I think these sum up one of the best trips of our lives quite well :) Cambodia was our first stop and a major bucket list item - Angkor Wat, Angkor Thom and Ta Prohm. We experienced true 3rd world poverty here and an incredible sense of reality. A mission trip here is now on our list of things to do.
Phuket, south Thailand and the Phi Phi Islands was our 2nd stop to get some scuba diving and beach/leisure time in. The waters and islands were breathtaking and beautiful!
Chiang Mai, northern mountainous Thailand was our final stop and our favorite! Spending an entire day with rescued elephants, bathing them, learning their language and riding them thru the jungle completely bare back was an experience of a lifetime... the pictures don't do justice. Only to follow this activity the next day with a motorcycle ride thru the mountains... Just incredible.

Chicky, roasted broccoli, roasted red onion, roasted toms, roasted zucchini and coconut risotto. Colorful and freaking delicious.
I'm not the type to just jump on the fall bandwagon...🍁🍃🍂I have to slowly ease my way in... so ill start with a fall stuffed squash. I've been making this recipe since I created it in 2013 during a bikini prep and it is still my number 1 favorite stuffed acorn squash recipe. I highly recommend giving it a try!
Cut acorn squash in half, scoop out seeds, place face down on baking sheet, bake for 40 min @ 400F
Put the following in a pan:
Diced chicken (already cooked)
Add 1/4c almond milk, Stevia, and pumpkin spice.
Simmer on med-low heat covered for 15 minutes
Add some of your baked squash and mix it up
Scoop into your baked acorn squash!
Apple bourbon turkey breast with baked beans and steamed broccoli
This might be one of the simplest meal preps you can do.
For 6 days of meals you need:
3 regular size cans of organic baked beans
3 lbs of broccoli (I get the 5 lb bags that are pre cut because it's easier)
3 lbs of turkey breast
For the marinade:
1/2 cup Greek yogurt
1/4 cup bourbon
3/4 cup apple juice
1/3 cup soy sauce
1/3 cup apple cider vinegar
1 T minced garlic,
1T sage and thyme
Salt and pepper
Don't overcook your turkey... 15-20 min at 350 is ample! Depending on the thickness of your turkey breast, less or more. I always use a thermometer and check to make sure it hits 160 degrees F in the center of each breast
Tzatziki chicken salad... so easy you can thank me later.
3lbs of chicken breast
Crockpot cook it for 6 hrs until it falls apart
Mix in tzatziki dressing, celery and onion... that's it!
My tzatziki dressing:
3 cups Greek yogurt
3T lemon juice
1/4 cup fresh dill
1T garlic powder
2tsp sea salt & pepper
1 peeled cucumber (blend half and finely dice the other half - be sure to strain it so your dressing isn't too watery) 💪😚👌

eating this for dinner... every single night of the week... FOR A YEAR! 🤤 He's still not sick of it.. how? I have no idea. But this is probably one of my most frequently requested recipes from friends and family because of this odd dinner obsession he has with my chili... so I figured I would finally share it with y'all after a year 🤓
The fact that he loves this makes my life so much easier because it takes me 10 MINUTES to meal prep his dinner for the whole week... it will take you longer to watch and read this post... there's a secret to this recipe so you must read on!
Crockpot settings: 8-10 hours on low heat
3 kinds of raw beans (black, kidney and white) about 1.5 cups or so
1 sweet potato
2 cups of water
1 can crushed tomatoes 28oz
1 can tomato paste 12oz
1 can of diced tomatoes and green chilies (Use the brands i use - they have the least ingredients)
Stir it well at this point *** Add 3 lbs of ground beef or ground turkey or half and half
*Important* don't stir or break up the meat too much... this makes it really chunky!
Add 1 packet of chili seasoning and drizzle the same amount of old bay **lightly stir
Add basil and cover to cook... don't touch it til it's done 😤**if you're lookin it's not cookin*** That's it! It makes 8 meals for him... at about 500 calories each so if you want you can make smaller portion less calorie meals 🤓
