Fish and Tofu Soup This is what I need on this rainy evening... One of the easiest, healthiest and tastiest soup recipes, try it! #鲈鱼豆腐汤 . #lazyjenrecipe Serves 4 Ingredients: 500g whole sea bass, cleaned and chopped into 2 parts 300g silken tofu, cut into chunks 4 slices of ginger 1/4 cup julienned ginger 1/4 cup chopped Chinese parsley 2 tbsp vegetable cooking oil boiling water salt and white pepper . . Method: 1. Heat up cooking oil over medium high heat in a non-stick wok. 2. Add ginger slices to sauté, then add sea bass to pan fry on each sides until lightly brown. 3. Discard ginger slices. Transfer sea bass into a pot with lid. Pour boiling water over sea bass. Ensure water level is just sufficient to over the sea bass. 4. Add julienned ginger and tofu to combine. Allow to simmer for 20 mins with lid on. 5. Season with salt and white pepper to taste. How about a yummy Hokkien noodle for your Sunday meal plan? Here’s my recipe. Hokkien mee cooked to perfection in my #zenez cooking wok from @vcaresg . . #lazyjenrecipe Serves 4 to 5 Ingredients: 500g Hokkien noodle (flat yellow noodle) 200g pork loin or chicken breast, thinly sliced 200g prawn, shell and vein removed 200g fish cake, sliced 300g choy sum, cut into inch long 2 tbsp chopped garlic 750ml pork broth or chicken broth . Seasonings: light soy sauce dark soy sauce sesame oil corn flour salt and pepper vegetable cooking oil . Method: 1. Marinate pork/chicken in 1 tbsp of light soy sauce, 1/2 tbsp sesame oil, 1 tbsp corn flour, and a pinch of salt and pepper. Mix well and set aside. 2. Heat up 2 tbsp of cooking oil in Zenez cooking wok, add 1 tbsp of garlic to saute. Add pork or chicken to stir fry. Then add prawn to combine. Continue to stir fry until cooked, remove from wok and set aside. 3. Add another 2 tbsp of cooking oil in the same wok, then add fish cake to stir fry. Next, loosen up the noodle before adding to wok to combine. 4. Add broth at this stage. Continue to loosen up the noodle gently with a pair of chopsticks. Bring to boil, then place the lid on to simmer for 2 mins. Add 2 tbsp of light soy sauce, 1 tbsp of dark sauce, salt and pepper to taste. 5. Add choy sum to cook. Last, return pork/chicken to combine, mix well. You may need to add more broth or water during the process of cooking. Allow to simmer for another 1 to 2 mins or until the broth is reduced to gravy. Serve immediately.
Green Beans Eggs Scramble Sauté chopped garlic and green beans in vegetable oil over medium high heat. Season salt and pepper to taste. Add beaten eggs to combine, stir gently until the eggs and beans come together. Once the eggs set, remove from heat immediately. Serve with rice or porridge. Bok Choy and Bean Curd Skin stir-fry You could easily tell my family loves bok choy. There are so many ways to cook it. My kids love it with bean curd skin. . #lazyjenrecipe 1. Slice a bunch of bok choy into halves or quarters. 2. Slice store-bought bean curd skin into bite-sizes 3. Sauté chopped garlic in vegetable oil, add bean curd skin to stir fry. Then bok choy to combine, continue to stir fry until bok choy is lightly wilted. 4. Add seasoning mixture of light soy sauce, oyster sauce, water (1 tbsp each), and corn flour (1/2 tbsp). Steamed Chicken and Mushroom in Essence of Chicken A must-have nourishing recipe I’d prepare for my kids especially during the exams season. After the meal they would be more energized and work harder...hahaha at least I hope so 🤞🏻🎓⭐️🎯 . #lazyjenrecipe Ingredients: 1/2 a chicken, chopped into bite-sized pieces 150g fresh shiitake mushroom, sliced into bite-size 1/2 cup of rehydrated dried wood ear, sliced into bite-size 1 thumb-sized ginger, julienned . . Seasonings: 2 tbsp light soy sauce 1 tbsp oyster sauce 1/2 teaspoon salt 1/2 teaspoon pepper 1 tbsp groundnut oil 1 teaspoon sesame oil 1 tbsp corn flour . Others: 1 bottle of essence of chicken (optional) 1 stalk of green onions, chopped (for garnish) . Method: 1. Combine all the seasonings to chicken in a deep bowl, mix well. Leave it to marinate in the fridge for at least 30 mins. 2. Combine shiitake mushroom and wood ear with chicken, mix well. 3. Transfer all ingredients to a deep plate. Arrange to spread out the ingredients over the entire plate. 4. Pour essence of chicken over the ingredients. Place in the steamer over high heat for 15 to 20 mins. 5. Remove from steamer, garnish with green onions. Simple Dan Dan Noodles #担担面 I’m in the process of clearing up my kitchen (in fact the entire house) to prepare for a major renovation. With some ready ingredients, I thought I’m able to cook a simplified version of Dan Dan noodles. Not an authentic recipe, but definitely good enough for an enjoyable meal. Hope to see you soon in my new kitchen yay! . #lazyjenrecipe Serves 4 Ingredients: One pack dried wheat flour noodle 250g minced chicken (beef or pork) One bunch of bok choy One bunch of green onions, finely chopped One small onion, finely chopped 3 tbsp finely chopped garlic 2 tbsp finely chopped ginger Homemade Szechuan chili oil (or store-bought) Aged sorghum vinegar (or balsamic vinegar) . Seasoning to marinate chicken: 2 tbsp light soy sauce 1 tbsp oyster sauce 1 tbsp groundnut oil 1 tbsp spicy bean sauce 1 tbsp corn flour 2 tbsp water . . Seasoning to make sauce: 4 tbsp peanut butter 2 cups chicken broth 3 tbsp light soy sauce 1 tbsp groundnut oil . Method: To cook minced chicken, 1. Heat up 1 tbsp groundnut oil, sauté chopped onions and 1 tbsp chopped garlic until fragrant. 2. Add minced chicken to stir fry continuously until the meat is cooked. Use spatula to loosen up clumps. Sprinkle some chopped green onions, mix well and dish up on a serving bowl. . To make sauce, 1. Heat up 1 tbsp groundnut oil, sauté 2 tbsp chopped ginger and 2 tbsp chopped garlic until fragrant. Add peanut butter and chicken broth mixture. Stir to combine, bring to boil then season with 3 tbsp light soy sauce or adjust to your preference. Set aside. . To prepare noodles, 1. Cook wheat flour noodles according to package instructions. Drain and set aside. 2. Blanch boy choy in lightly salted boiling water. Drain and set aside. 3. Spoon a ladle of sauce in a serving bowl, add Szechuan chili oil and aged sorghum vinegar to your preference. Mix well. 4. Transfer a portion of bok choy and noodles to serving bowl. Toss and mix well to combine with sauce. 5. Spoon a portion of minced chicken as noodle toppings, garnish with chopped green onions. Mix well and enjoy.

Roasted chicken in mushroom cream sauce with kale and linguine . A simple instruction on how I prepared this: #lazyjenrecipe 1. Sauté shallots and garlic with fresh thyme in light olive oil, then add baby king oyster mushroom to combine. Add 1 to 2 tbsp of plain flour to combine after the mushroom has softened, mix well. 2. Add chicken broth and water, stir and bring to boil. Then add cooking cream to combine, continue to stir and allow to simmer. Add a good splash of Worcestershire sauce, and then season with salt and pepper to taste. 3. Add kale to cook in the cream sauce, then transfer roasted chicken to combine. Spoon the sauce over the entire chicken and cover with lid to simmer for 10 mins. 4. Remove roasted chicken from pot, add cooked al dente linguine in the cream sauce to combine, mix well. A quick scallion scrambled egg on bean stick noodle soup, that’s lunch for baby . #lazyjenrecipe I’ve blanched the bean sticks then transfer to cook in chicken broth, season in light soy sauce, salt and pepper to taste. In another pan, sauté chopped scallions then pour over beaten eggs seasoned in salt and pepper. Cook the eggs over low heat, folding in the eggs mixture slowly. The scramble egg is ready when it turned soft and silky.
