Chicken and Cabbage Curry Easy to prepare and satisfaction guaranteed hahaha . #lazyjenrecipe Serves 4 Ingredients: 500g mid-joint chicken wings 1/2 white cabbage, sliced into thick strips 50g tofu puff 4 boiled eggs, shells removed 1 carrot, cut into chunks 2 potato, cut into chunks 1 to 2 red chilli, cut into chunks 1 onion, chopped 1/2 bulb garlic, chopped 200ml curry paste 200ml coconut cream 4 tbsp vegetable cooking oil water salt . . Method: 1. Add vegetable oil in a pot to sauté onion, garlic and chilli until fragrant. 2. Add chicken wings, potatoes, carrots and curry paste to combine. Continue to stir fry for 2 to 3 mins. 3. Add water. Ensure water is just sufficient to cover the ingredients. Bring to boil, then allow to simmer until cooked. 4. Add cabbage, tofu puff, and boiled eggs to combine. Allow to simmer until cooked. 5. Add coconut cream, stir to mix well. Season with salt to taste. I love any kind of tofu recipes. Tofu is definitely one of the simplest and yet most versatile ingredients. I’ll never be tired of eating it. Try this way of cooking, braised tofu with mushroom, pork, and chives. . Ingredients: 1 block of soft tofu, sliced into 1 cm thick 100g fresh shiitake mushroom 100g ground pork 1 bunch of chives, cut into inch long 1 tbsp chopped garlic 1 tbsp chopped red chilli 1/2 cup of water vegetable oil to pan fry tofu . Seasoning: 2 tbsp light soy sauce 1 tbsp abalone or oyster sauce 1 tbsp corn flour 2 tbsp water salt and white pepper to taste . Method: 1. Pan fry tofu in vegetable oil till golden brown on each side then set aside. 2. Keeping the remaining oil add ground pork to stir fry until cooked and separated. 4. Add mushroom, garlic and chilli to combine. Stir fry until mushroom is soften. 5. Return tofu to combine and then add water. Ensure water level is just sufficient to cover the ingredients. Bring to boil then turn to medium heat to simmer for 8 to 10 mins. 6. Add chives and all seasoning. Stir gently to mix well. Allow to simmer for 2 mins until chives are cooked. Egg drop noodle soup It’s easy to prepare especially when you have ready broth or soup stock to work on. . . Ingredients: 1 serving of Chinese noodle 1 bowl of chicken broth 1 bunch of bok choy 1 to 2 eggs, lightly beaten 1 tbsp chopped green onions 1 tbsp light soy sauce 1/2 tbsp sesame oil salt and white pepper to taste . . Method: 1. Boil the noodle according to package instructions. Add bok choy just before the noodle is cooked. Drain and set aside. 2. Bring chicken broth to boil, then reduce to medium heat. Slowly whisk egg into broth. Stir gently until egg is cooked. Add light soy sauce and season with salt and white pepper. 3. Pour egg drop soup into serving bowl then transfer noodle to combine. Add sesame oil then garnish with green onions. Baby Abalone Noodle Soup I’ve shared my recipe on steamed baby abalone last week. Having these succulent abalones on noodles in chicken broth is simply exquisite and luxurious. Have you tried it? Here my recipe again... . Ingredients: 1 can Fortune Brand Baby Abalone (8 to 10 pieces of whole baby abalone) 1 tbsp julienned ginger 1 tbsp chopped garlic 1/2 tbsp chopped red chilli 1 tbsp chopped green onions a few stalks of bok choy . Gravy: 1 to 2 tbsp Fortune Brand Abalone Sauce 1/4 cup of abalone brine 2 tbsp vegetable cooking oil . Noodle for one person: 1 serving of Chinese noodle 1 bowl of chicken broth . . Method: 1. Drain the baby abalone and retain the brine in can. 2. Place the baby abalone on a plate and place in a steamer over high heat for 8 mins. 3. Add boy choy to combine and continue to steam for another 2 mins. 4. In a separate pan, heat up vegetable cooking oil over medium heat and then add ginger to sauté for 1 min. Then add garlic, chilli, and green onions to combine, cook for another 30 secs to 1 min. 5. Pour the liquid accumulated on the plate in the process of steaming into the pan; retain the baby abalone and bok choy on the plate. 6. Add abalone brine and abalone sauce to combine. Allow the gravy to boil then remove from heat. 7. Pour the gravy over the abalone and bok choy. 8. Cook noodle according to package instructions. Drain and transfer to the bowl of hot chicken broth. Add baby abalones, bok choy, and drizzle abalone gravy over the noodles. Serve immediately. #礼到福到财神鲍 #FortuneAbalone

One of the most well-received recipe of mine. I’ve used a store-bought roasted chicken today. This is a great recipe to make use of any leftover roasted chicken too. Try it. Happy Friday! . . Roasted chicken in cream sauce over Campanelle pasta Serves 4 to 5 Ingredients: 1 small roasted chicken 250g Campanelle pasta or any preferred pasta 250g brown mushroom, sliced into halves or quarters 1 onion, chopped 4 cloves garlic, chopped 1 bunch of thyme 150g kale, tear from stem and cut into 1 to 2 inch pieces 750ml chicken broth 200ml cooking cream 2 tbsp plain flour 4 tbsp light olive oil Worcestershire sauce to taste salt and black pepper to taste . . Method: 1. Boil your favorite pasta according to package instructions. Season the pasta cooking water in a good pinch of salt. Cook pasta to al dente, drain and set aside. 2. Add light olive oil in a pot, sauté onions and garlic with fresh thyme for 1 min then add mushroom to combine. Add plain flour to combine after the mushroom has softened, mix well. 3. Add chicken broth, stir and bring to boil. Then add cooking cream to combine, continue to stir and allow to simmer. Add a good splash of Worcestershire sauce, and then season with salt and pepper to taste. 4. Add kale and roasted chicken into cream sauce. Spoon the sauce over the entire chicken and cover with lid to simmer for 15 to 20 mins. 5. One-pot brown rice with pork and veggie One of the most flavorful one-pot dish and yet so convenient to make. . . #lazyjenrecipe Serves 4 to 5 Ingredients: 2.5 cups of uncooked brown rice 250g pork belly, sliced into strips 2 Chinese sausage, casing removed, sliced 8 brown button mushroom, cut into quarters 1 carrot, cut into small cubes 1 corn, cut corn kernels off the cob 1 bunch French beans, chopped 1 onion, chopped 1 bunch green onion, finely chopped 4 cloves garlic, chopped 1 thumbsized ginger, chopped 1 litre chicken broth or water 3 tbsp vegetable cooking oil light soy sauce to taste sesame oil to taste salt and pepper to taste . . Method: 1. Add vegetable oil in non-stick wok, stir fry pork until cooked. Add ginger, onion, garlic to combine. Continue to stir fry. 2. Add brown rice to combine, stir fry and add broth/water. Stir to mix well. 3. Add the rest of the ingredients (sausage, mushroom, carrot, corn, bean) to combine. Ensure the water level is just sufficient to cover all ingredients. Bring to boil in high heat. You may taste the broth at this stage. Adjust the taste with light soy sauce, salt, pepper, and sesame oil. 4. Cover the wok, reduce the heat to med low. Continue to stir to mix well occasionally to prevent the rice from burning at the base. Add more broth or water if necessary throughout the cooking process. 5. When the broth is absorbed by the rice, taste to check if the rice is thoroughly cooked through. Once cooked, remove from heat and garnish with green onion before serving. .
