Who else loves a warm toasted blueberry muffin on a beautiful fall 🍁day?! 🙋🏻‍♀️ I whipped these up last night and then went to bed dreaming 💭 about eating them all! ____ Here’s what I used: 1 scoop of @questnutrition multipurpose protein powder 1 and 3/4 cup @arrowheadmills multigrain mix 4 tbsp of wild blueberry syrup 1 egg 1 cup of soy milk 1/4 c unsweetened apple sauce 2 tbsp stevia 1 tbsp baking powder 1/2 tsp pink sea salt 1 cup of blueberries Macros: Cal172/F3.6/C25.1/P6.1 ____ I topped them with a homemade blueberry glaze. 1 cup organic @traderjoes powdered sugar, 2 tbsp soy milk, 1 tbsp vanilla extract, and a few splashes of blueberry syrup for extra blueberry flavor.
#Taco Thursdays why not? 😜 I worked later then I normally do and I was super #hangry when I got home so I threw together this pork taco to immediately satisfy the hanger 🤣 _____ Here are the dEATS on my 🌮 : Ortega’s whole wheat tortilla Baby romaine lettuce Roasted veggies (prepped earlier this week) Pork Tenderloin (prepped earlier this week) #Avocado Chipotle sauce Light sour cream A sprinkle of shredded Mexican cheese
Sweet Potato Gnocchi anyone? 😱 @traderjoes produces another quick, easy and delicious meal for me tonight! ____ I did NOT make these according to the package, at all!!!! I put the gnocchi in a pan and let the sauce that was frozen to it defrost. Call me crazy but then I actually strained the sauce off of it (it was butter and sage and to oily for my liking) I threw the gnocchi back in the pan with two spoonfuls of @traderjoes autumnal harvest pasta sauce and continued to cook the gnocchi till they got softer and then a little crispy. Once they were to the consistency I liked I tossed in some roasted onions and some grated sharp cheddar cheese stirred it all up. Topped the dish off with some more grated cheddar cheese and some fresh parsley for more taste and presentation. I’m just over here keeping things super simple since I’m eating without @realbk (👮🏻‍♂️😘) tonight. One day I’ll attempt to make homemade gnocchi but for now I’ll stick to this! 😊
Good Morning! Today I’m starting my day off with some Cinnamon Crunch Overnight #Oats 😋 Topped with @traderjoes #cookiebutter , half a Macintosh Apple, and a sprinkle of chia seeds. _____ 1/2 cup @quaker oats 1/2 cup soy milk 1 scoop @questnutrition cinnamon crunch protein. This recipe makes the oats pretty thick so if you prefer your oats more wet just add some extra milk.
Are you a personal trainer? Days off are for baking 😋! Funny story these were suppose to be no bake protein bars but once I mixed everything together I realized they were not going to work as no bake bars so I decided to turn them into Protein Cookies 🍪 ! Here are the dEATS on these little cuties. ____ Preheat your over to 350 degrees. Next grind up 2 cups of oats, in a bowl mix the ground oats with a 1/4 cup of regular oats (not ground), 4 scoops of @optimumnutrition vanilla protein, 1/4 cup chai seeds and 4 tbsp of @nestletollhouse simply delicious organic semi sweet morsels. In a separate bowl mix together 1 cup of @wowbutter (soy butter) 5 tbsp of agave, and 1/2 cup of soy milk. Once that is all mixed together add the wet ingredients into the dry ingredients. Once it is all combined you will roll the dough into one inch balls and then press them flat on the cookie sheet. Bake the cookies for 5 minutes. Remove from the oven and let them sit for about 1 min on the cookie sheet before removing them. Then place them on a cooling rack to finish setting. ☺️ _____ Macros per cookie: 100cals/F4.7/C8.7/P5.4
Happy Saturday 🙋🏻‍♀️! Today I got up a little bit later then usual because @realbk and I were up late working on business stuff (@fitforthefallen ). So after some much needed 💤 s and a nice big cup of coffee ☕️ I threw some cute purple potatoes 🥔 in the oven, cooked up some bacon 🥓 and fried an egg 🍳 to make this delicious dish. But my breakfast would not have been complete without a slice of 🍞 @daveskillbread and a mashed avocado 🥑 topped with my go to seasoning, @traderjoes everything but the bagel and a few strawberries 🍓 . I hope everyone has a wonderful day!

I’m just a girl holding a salad 🥗 wishing it was a donut 🍩 all joking aside this salad was delicious. As you all know I try to keep things simple and there is not much more simple then this salad and I’m totally ok with that. I used baby romaine mix, cherry tomatoes, yellow onion, cucumbers, avocado sprinkled with Trader Joe’s EBTB seasoning, and a piece of @tysonchicken___ 🍗 . Some may say it’s a little early for soup season but I disagree! Growing up I did not love soup like the rest of my family (my mom makes the best chicken noodle, I know so does everyone else’s mom 🙋🏻‍♀️) but it’s definitely growing on me. So tonight I decided to make a soup recipe that a co-worker gave me and it was so delicious and guess what...full of PROTEIN! (46.7 grams to be exact 😱) The originally recipe did not call for turkey but I thought it would be a great addition. _____ Brown up 1.5 lbs of ground turkey. In a separate pot cook up 10 slices of chopped up bacon (over medium/low heat) - cooking it until it starts to give up its fat, then stir in 2 whole chopped up onions - cook them until they turn translucent, then add 6 cloves of pressed garlic - cooking the garlic till you smell it, followed by adding a 32 oz container of low sodium chicken broth, one can of diced tomatoes and 3 tbsp of ketchup. You will then add your ground turkey to the pot, and 4 cans of drained black beans (not rinsed). Stir everything together and raise the heat to high until your soup comes to a boil. Once it start to boil, lower the heat so the soup is bubbling gently for 15 -20 minutes. ____ I topped my soup with a few slices of avocado, shredded Mexican cheese and because I like some crunch I added @gratifyfoods gluten free everything thins! ____ #livingnutfreeforlove #soup #protein #soupoftheday #turkeyblackbeansoup #yum #soupseason #fitnessfood #instafood #foodporn #strongnotskinny #gains #avocado #nosoupforyou
Waffles for dinner, yes please 🙌🏻! @realbk and I loved every bite of these @birchbenders protein waffles tonight! (As always I added a scoop of @optimumnutrition vanilla to the batter) ____ These waffles are topped with: Sautéed Macintosh Apples 🍎 . (I coated the apples in cinnamon and then sautéed them in coconut oil.) A scoop of @parkersrealmaple butter and @waldenfarmsinternational syrup to complete my waffle 🤤
Back home and back to business. This morning I made my first ever batch of cauliflower oats 😱 @fitstrongshann finally convinced me to give them a try and they were delicious! I truly enjoyed eating some warm pumpkin flavored oats on this very cool morning here on Lake Hopatcong. Here are the details on these Mocha Pumpkin 🎃 Cauli Proats!! I followed Shannon’s recipe and just added a little extra protein to mine. _____ Combine the following in a pan and place over medium heat: 1 c of frozen or fresh cauliflower rice 1/2 c pumpkin purée 3 tbsp oats 1 tbsp chia seeds Splash of vanilla 3/4 c coffee or cold brew (or milk or water) Place on the stove stirring occasionally until it starts to boil. Then turn it to low heat and add the following: 1/4 mashed banana 1 scoop of protein (I used coffee flavored @optimumnutrition ) 1 tbsp cacao chips Stir it all up and let it simmer till it thickens up to your preferred consistency. I want to take a moment to be real with everyone on here because I never want anyone who follows me to think that I’m not. I started this page to show how I’m living a nut free life but as you can see fitness and eating healthy is also VERY important to me and it has been for many years now. _____ For the last few days Brian and I have been away in OCNJ enjoying our time with one another....But with that being said we’ve also been enjoying lots of “unhealthy” foods (i.e. the donut in my hand) 😱 and let me tell you, my head has been in some sort of place this entire trip!! 🙁 For example after indulging in some cheese, crackers and red wine I said out loud “ugh I feel like garbage for eating that” and then after eating two pieces of @mancoandmanco pizza I said, “I can’t wait to get back in the gym.” Yep I’m a human and Im not always nice to myself (as most of us are not) and that’s why I’m sharing this with all of you because I know so many of you can relate to these feelings. Let’s all work on being more kind and forgiving with ourselves and learn that the memories with family and friends far out weigh the guilt of eating something unhealthy. As most of you already know I’m doing a giveaway (see previous post) of some #nutfree butters...but if I’m going to give away goods then I obviously need to show you that I in fact use all of the products I’m giving away 😋! So here is my very own recipe for Sunflower Butter Chocolate Chunk Protein Cookies 😱! Step 1: preheat your oven to 350 Step 2: In a medium size bowl mix together the following ingredients: 2 cups of coconut flour 3/4 cup coconut sugar 3/4 cup stevia 2 scoops of vanilla protein (I used @optimumnutrition ) 1 tsp baking soda 1 tsp pink salt Step 3: Combine the following ingredients with a mixer: 1 cup @sunbutter sunflower butter 4 tbsp of light butter 2 eggs Step 4: slowly add the dry ingredients into the wet ingredients, mixing until completely combined. Step 5: Fold in 3 tbsp of chocolate chips. (I used @traderjoes semi-sweet chocolate chunks) Step 6: place a piece of parchment paper on a cookie sheet Step 7: Roll dough into inch size balls then press them so they are flat on the cookie sheet. Step 8: Bake for 7 minutes! Macros: F8.4/C16.6/P6.3 (UPDATE: your cookies will start to turn green in color but i promise this is totally normal and they are still safe to eat! it’s due to the chlorogenic acid in the sunflower seeds reacting to the baking soda feel free to look it up) ☺️
