Funny story, I made pancake batter three times this morning 😕. I attempted making a big mans world - thick and fluffy low carb vanilla pancakes not once but twice. 😒 After failing miserably ✌️ times I scratched the entire idea and pulled out my go to box of @kodiakcakes pancake mix! As always I added an extra scoop of protein to the batter for the extra #gains ! 🤷🏻‍♀️ This was just a nice reminder that not everything is going to come out perfect and that’s ok because no one is perfect! Today I’m going to talk about self esteem along with some self love. I personally think that it’s important that every one work on appreciating themselves more (myself included). I believe that when one is able to hold themselves with high esteem they tend to have more enjoyment, a more positive attitude towards life and the future and they worry less about what others may be “thinking” or “saying” about them. _____ So how can we all get better at building our self esteem? Someone (@realbk ) once told me I needed to say kind things to myself daily in order to help build my confidence and self esteem. I am guilty of falling off with this self love task so today I’ve picked two things that I’m going to promise to tell myself daily and I’m hoping that some of you will do the same. “I am a beautiful unique spirit and there is no one else quite like me.” “I am strong. This may not be the prettiest dish but it sure does have a pretty girl in the background, don’t ya think? ____ I followed @isavea2z ’s Beef and Broccoli instant pot recipe for this amazing #mealprep dish which I made this past Sunday (if you saw my stories). I doubled the recipe and used chuck roast for the meat, just as an FYI. I served my beef and broccoli with brown rice which I made in my #instantpot prior to making the beef and broccoli. I’m not sure if I was more excited to have NY strip steak or sweet potato waffle tots last night??? Real Life: I have not had a steak in over a year and a half 😱! Thanks @realbk for cooking it perfectly 👌🏻 You might be wondering what sweet potato waffle tots are?! Well all I did was line up 8 @alexiafoods tater tots in a square in the middle of my waffle maker, closed it slowly and then cooked it for 10 minutes until they were nice and crispy. Starting the day off with some pumpkin cauliflower oats and planning to finish the day off with some pumpkin pie 🥧! Have a Happy Thanksgiving everyone!! Here are the details on making these oats. Place the following ingredients in a pan over medium heat. 1 cup of frozen cauliflower rice 1/3 cup @quaker oats 1/2 cup pumpkin purée 1 tbsp chia seeds 3/4 cup soy milk (or whatever you choose) 1 tbsp agave Bring these ingredients to a boil, stirring occasionally. Instant Pot you are to good to me!!! These drumsticks 🍗 are perfect for meal prep or even as a game day 🏈 snack. ____ 3 lbs of drumsticks @lawrysseasoning seasoned salt (or whatever seasonings you want) ____ Toss the drumsticks with seasoning. Add one cup of water to the pot, place the trivet inside, arrange the drumsticks inside the pot with the drum side down. You can pack the drumsticks in pretty tight. (I was able to cook all 3lbs at once). Press the manual button and set for 15 minutes. Quick release the pressure when finished. ____ Turn your oven on to broil. Put some foil on a baking sheet, spray with cooking spray, arrange the drumsticks on the baking sheet and broil for 5 minutes, rotate and broil for another 5 minutes. I like my wings a little more crispy so I rotated the drumsticks one more time and broiled them for another 5 minutes. (Watch them to make sure they don’t burn) ___ Topped with @franksredhot hot sauce and ranch dressing👌🏻
Short Hair Don’t Care. ____ When I was in college a guy I was dating told me “I’ll break up with you if you cut your hair off” You can guess what I did ✂️ 😤 ____ Over the years I’ve grown my hair and cut it off a lot and almost every time random people would say “oh, you cut all your hair off, I like it better long” 🙄 ____ Two years ago I cut my hair again and a coworker at the time said, “it’s really cute in the front, but you look like a lesbian from behind” 🤬 ____ So what’s the point of this post....just wanted to remind everyone to do what ever the hell YOU want to do with your hair (or anything else for that matter) and do it with some damn CONFIDENCE! No, we can not avoid all the rude people in this world, but we can not let it bother us so much if we are confident in who we are and the choices we make in life. You come first, period. Never ever neglect that chocolate 🍫 craving again when you can make a treat like this and not even feel remotely bad about it 💥 _____ Smoothie Bowl: 1 frozen banana 5 pieces frozen mashed sweet potato @traderjoes 1 scoop of @questnutrition chocolate milkshake protein Approximately 1 tbsp of @nestletollhouse simply delish dark chocolate morsels 1 cup soy milk Blend it all up. This bowl was much more creamy then some of the other bowls I had and I loved it! ___ Topped with coconut cranberry granola from Trader Joe’s (I picked out the cranberries) @pure7chocolate raspberry bar
Homemade “Healthyish” Mac and Cheese featuring @eatbanaza chickpea pasta. ____ Directions for the Mac and Cheese Sauce: First start with melting down 5 tbsp coconut butter in a sauce pan over medium heat, then add a tablespoon of minced garlic to the coconut butter, next you will add 8 oz of fat free cream cheese and mix until they are combined, then you will slowly add in 3/4 cup of soy milk (or whatever you choose) whisking until combined, next add a pinch or two of pink salt, then you will grated approximately 3oz of @cabotcheese garlic and herb cheese (or whatever you wish) right into the pan and whisk until combined, lastly you will add one tablespoon of cornstarch again whisking until the sauce is smooth with no clumps. Let the sauce sit over medium low heat for about two minutes then pour all over your pasta and serve! I added dill and a sprinkle of extra cheese to the top of mine. _____ This dinner was seriously so 💣!!
Some say, “Good food is all the sweeter when shared with friends.” But would you share this popcorn with your friends or eat it all yourself 🤣! Today @fitforthefallen and I completed the murph challenge and we were damn #proud to do so. We were able to complete the challenge in under a hour which we were both pleased with. (especially after our weekend of indulging) ____ 1 mile✔️ 100 pull ups✔️ 200 push ups✔️ 300 squats✔️ 1 mile✔️ ____ Not only am I proud to say I completed the challenge today but I’m also proud to say I was able to do all 100 pull ups with no assistance needed. After a long weekend away in the finger lakes with my favorite person eating some of the best food I’ve ever had, it’s officially time to get back to business. This is my version of PBnJ oats without the PB 🙃. ____ 1/2 cup oats 1 cup of soy milk 1 scoop of @optimumnutrition vanilla protein Microwave for 2 minutes, then I stirred in some of my mixed berry chia jam and @wowbutter (soy butter), I then topped it off with more jam, Wowbutter and a piece of @pure7chocolate with raspberry because why not! ____ Now, @fitforthefallen and I are off to complete the #murphchallenge wish us luck. 🇺🇸
