As most of you already know I’m doing a giveaway (see previous post) of some #nutfree
butters...but if I’m going to give away goods then I obviously need to show you that I in fact use all of the products I’m giving away 😋! So here is my very own recipe for Sunflower Butter Chocolate Chunk Protein Cookies 😱! Step 1: preheat your oven to 350
Step 2: In a medium size bowl mix together the following ingredients:
2 cups of coconut flour
3/4 cup coconut sugar
3/4 cup stevia
2 scoops of vanilla protein (I used @optimumnutrition
1 tsp baking soda
1 tsp pink salt
Step 3: Combine the following ingredients with a mixer:
1 cup @sunbutter
4 tbsp of light butter
Step 4: slowly add the dry ingredients into the wet ingredients, mixing until completely combined.
Step 5: Fold in 3 tbsp of chocolate chips. (I used @traderjoes
semi-sweet chocolate chunks)
Step 6: place a piece of parchment paper on a cookie sheet
Step 7: Roll dough into inch size balls then press them so they are flat on the cookie sheet.
Step 8: Bake for 7 minutes!
Macros: F8.4/C16.6/P6.3 (UPDATE: your cookies will start to turn green in color but i promise this is totally normal and they are still safe to eat! it’s due to the chlorogenic acid in the sunflower seeds reacting to the baking soda feel free to look it up) ☺️
