These are my Lazy Potatoes flanked by a small spinach scramble and some avocado. The potatoes are lazy because the prep is all of like 5 mins and they happen when I don’t feel like waiting for the @chefauntietoonie
potatoes, which are more labor-intensive. These aren’t AS good but they’re different and still pretty great. Here’s what I did:
. Preheat oven to 450° (I used a toaster oven for maximum laziness)
. Dice potato and toss to coat in whatever fat you want (I used olive oil)
. Season to taste (I used salt, pepper, garlic powder, onion powder, rosemary which I crushed up in my palm a little, Italian herbs which were also palm crushed), toss some more to coat in spices
. Bake on a layer of tin foil placed directly on the rack for 30-35 mins (I like them pretty crisp)
. Use the baking time to make whatever else you’re eating. If you’re eating nothing but potatoes, that’s okay too.
