I’m not even sure what’s going on with these potatoes. I guess they’re just half-assed and twice-baked. So yeah, I baked a potato, scooped out the innards, mixed it with olive oil, roasted broccoli and some @uswellnessmeats breakfast sausage. Then I put the extra broccoli and sausage into a scramble. We all know I struggle with broccoli because it’s gross, like all vegetables. Then I started roasting it because crispy garlicky broccoli is less gross. But then I struggled with that because it’d get flat and oily. I went on like this for years. Then I remembered about this wire rack I bought for butterflied chicken which solved everything. Excess oil drips away and you’re left with evenly cooked crispy florets. Oh, and the rack was maybe $5 at a restaurant supply store. Everything in the below recipe is adjustable. Warning: I love garlic. . Rack Method Garlic Broccoli: . 1/2 bag of broccoli florets . 6 cloves garlic . 2ish Tbsp extra virgin olive oil (or any roasting fat in liquid form) . Salt, pepper, garlic powder . First, run a bath for your garlic: . Pour olive oil into a medium bowl . Slice garlic cloves in half lengthwise (big enough to not fall through the rack) . Put cloves into bath, mix around to make sure they’re coated . Let this sit for up to a day, tossing regularly . Now we roast: . Preheat oven to 425° . Cut broccoli into manageable, similarly sized pieces (they’ll shrink down a little) . Toss in the garlic oil bath, add a little more oil if they look dry . Sprinkle on a heavy pinch of salt, a few twists of black pepper, and a few shakes of garlic powder, toss to coat . Put rack on a baking sheet, evenly distribute broccoli and garlic on rack, don’t let any fall through . Oh hey. This is a breakfast pizza I made with a @simplemills crust. It won’t replace real crust, but it serves the purpose. This has eggs, @uswellnessmeats bacon, @aidellssausage chicken sausage, and @raoshomemade sauce with chopped spinach added. I’ve only made two crusts so far, and I’ll probably figure out my own mix, but here are a few tips if you’re making this: . . Once you section the dough, wrap in parchment paper and refrigerate before shaping it. . Cook the crust on its own for 10 minutes (rather than 5) to fight flimsiness. . Hey guys. I roasted brussels sprouts using a slightly modified @seriouseats recipe. Theirs calls for maple syrup but honestly, if you have good balsamic (and are on Whole 30), you don’t need that shit. Here’s what I used: . . 1/2 cup pecans . 8 slices of @uswellnessmeats bacon (recipe calls for 6) . 2 lbs Brussels sprouts . 3 tbsp extra virgin olive oil . 1 tsp salt . 1/2 tsp pepper . 3 tbsp balsamic . For the recipe, just google “serious eats pecan brussels sprouts” because I’m not going to copy and paste the whole thing. This is less a recipe and more an exercise in having a fridge of ingredients ready to go. I fully didn’t want to make anything for dinner but had a rainy day cauliflower crust from @traderjoes in the freezer. Highly recommend the crispy crust cooking instructions (and even then it was a lil flimsy). End result was delicious but honestly I credit that more to my toppings.
