With no true medical explanation for them I turn to food, herbs and spices to help ease them. Oops I did it again..Another Vegan Pumpkin Medicinal Mushroom Vegan Cake 🎃🧡💛 INGREDIENTS: Crust: 1 cup almonds 1 tbsp coconut oil 5 dates soaked and pitted 1 tbsp ground flax seed 2 tablespoons maple syrup 2 tsp Reishi 1 tsp vanilla extract 1/2 tsp cinnamon 2 tsp cacao powder 1/4 tsp clove pinch of salt Pumpkin filling: 1 cup pumpkin puree (homemade is ideal but you can use canned too) 3/4 cup soaked cashews 1/3 cup coconut cream 2 tbsp maple syrup 1 teaspoon vanilla extract 1 tbsp Chaga 1 tsp cardamom 1/2 tsp cinnamon 1/2 tsp clove 1/4 tsp nutmeg 1/4 tsp ground ginger INSTRUCTIONS Crust: Add the nuts to a food processor or high speed blender. Pulse until roughly chopped. Add in the remaining crust ingredients and blend until just combined. Press the crust in an 8 inch spring form pan Pumpkin Layer: In a clean processor, add all ingredients and blend until smooth. Now is the perfect time to taste test and see if you want more sweetener or spices. Place cake in freezer for at least 5 hours . To serve: Remove the cheesecake from the freezer and allow it to soften for about 20 minutes before serving.
