Cordyceps Almond Flour Fig & Pear Cake 🍐💫 This Cake is grain free and dairy free and good enough for you to be eaten for breakfast 🤗
1/4 cup coconut oil softened
1/3 cup pure maple syrup
1 1/2 tsp pure almond extract
1 teaspoon pure vanilla extract
1 teaspoon apple cider vinegar
2-1/2 cups @bobsredmill
1 tbsp @rootandbones
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 ripe figs sliced
1 pear sliced
•Preheat the oven to 350 degrees F and line a 9-inch springform pan with parchment paper.
•Add all of the ingredients except for the fruit to a high-powered blender. Blend until combined. •Pour the cake batter into the pan and smooth into an even layer. Arrange the sliced figs and pear on top, tucking gently into the batter.
•Bake for 25 to 30 minutes or until cake is golden brown. Turn off the oven and keep the cake in the oven for another 10 to 15 minutes until toothpick in center comes out dry
•Allow cake to cool 30 minutes before releasing it from its mold. Serve with nuts, drizzled honey or fresh fruit slices

Preheat oven to 350*
Cut pears in half and place on baking sheet

Bake in oven for 30-35 min

Gluten-free Cordyceps Cardamom Doughnuts
1 Cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1 tbsp Cordyceps
1 tsp cardamom
1 Tsp Baking Powder
1/2 Cup Coconut Sugar
1/4 tsp Teaspoon Salt
1/2 Cup Unsweetened Almond Milk + 1/2 tsp Apple Cider Vinegar (let sit for a few minutes to form a "buttermilk")
2 Tsp Vanilla Extract
3 Tbsp Coconut Oil, melted and cooled
2/3 cup of coconut cream (full fat, not milk)
2 tbsp coconut oil
2 tsp vanilla extract
1 tbsp raw honey
•Preheat oven to 350F and prepare a doughnut pan with non-stick baking spray. Set aside.
•In a medium bowl, combine flour, Cordyceps, baking powder, cardamom, coconut sugar and salt. Stir until well combined.
•In a small bowl, whisk together the almond milk, apple cider vinegar, egg and vanilla extract until well combined. Slowly pour in the coconut oil and whisk until the mixture is smooth.
•Add the wet ingredients into the dry ingredients and whisk until a smooth batter forms. Pour the batter into the doughnut pan
•Bake at 350F for 9-12minutes or until golden brown and an inserted toothpick comes out clean. Remove from the oven and allow to cool for a few minutes in the pan, then transfer to a wire rack to finish cooling.
•For the frosting, use the thickest part of the coconut cream, leaving behind any water. Add the vanilla and coconut oil and honey
•Using a whisk or a hand held electric mixer, whip until smooth. Place in fridge to chill and harden.
•Spread onto doughnuts and add your favorite toppings ✨

Big ol’ bowl of Chaga Carrot Cake Oatmeal with Pine Pollen 🍄🌟🥕🌲🍊
1/3 cup grated carrot
3/4 cup @pacificdairyfree
almond milk, plus more as needed*
1 tablespoon maple syrup
1 tsp @rootandbones
Chaga+ Pine Pollen
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
Pinch sea salt
1/3 cup @bobsredmill
gluten-free rolled oats
1 teaspoon vanilla extract
Peel and grate the carrot
In a medium-sized pot over medium heat, whisk together the almond milk, maple syrup, cinnamon, ginger, nutmeg, and a pinch of salt until smooth.
Stir in all of the grated carrots and oats. Bring to a low boil and then reduce the heat to medium to simmer. Cook, uncovered, for about 8 to 11 minutes, stirring thickened. Add more almond milk if it's too thick.
Remove from heat and stir in the vanilla extract and Chaga and Pine Pollen.

Beetroot, HeShouWu, Cardamom, Rose Iced Latté 💫🌹☕️ This is a lovely take on a feminine coffee drink. Blood nourishing with Beetroot and HeShouWu and soul soothing with Rose. 🌒
Ingredients: enough for 2
1 cup Coconut Milk
1 cup coffee
5-7 crushed Cardamom Pods or 2 drops @doterra
4 tbsp Dried Rose Petals
1 tbsp Raw Honey
1 tsp Rose Water
2 tsp Beetroot powder
2 tsp @rootandbones
Pour milk into a sauce pan, add the cardamon and dried rose petals and heat over medium heat. Set aside to cool. Make 1 cup coffee and set aside to chill.
To a blender, add coffee. Strain out cardamon and rose petals, and add coconut milk to blender
Add beetroot powder, rosewater and HeShouWu. Blend until fully combined. Serve over ice. *This can be made without coffee, just an iced coconut milk latte, and its just as delicious!
