Out of all the sweet treats, ice cream has to be my absolute favorite treat! Summer is coming soon and I can’t wait to start making ice creams again 😍 This is Thandai Ice cream with ribbons of Rose Syrup and chards of Pistachio, Rose Petal and Cardamom Brittle. Thandai powder is a mixture of whole nuts and whole spices, along with dried rose petals, ground up together to make the most aromatic fragrance evaaa!!! The farmers market is bursting with fresh vegetables like asparagus, green peas, leeks, green garlic, beets, and my garden with fresh herbs like lemon thyme and rosemary! Mothers are selfless, caring, thoughtful, nurturing, loving, hardworking and protectors. Mother’s Day, is hard for many people and it brings joy to many. I have gone through both sadness and joy on this day - been through losing my mother(my best friend) when she was yet too young to go, to not being able to have children, to working hard to nurturing and healing my system, to miscarriages to being able to have two beautiful kids and two fur babies. It is ok to have sad feelings, and know that it does not mean you do not have the mothering instincts, you can mother anyone. Sometimes you even mother, your own mom, like when I did when my mom was ill. So to all the women out there, who have lost moms or are moms(to humans or fur babies) or trying to be moms, Happy Mother’s Day! 💕💐✨ #mothersday
May is an absolutely crazy month! Too much going on and I can’t seem to keep up! Teacher Appreciation Week is this week and being a room mom entails responsibilities, along with kids book reports, tests and never ending homework! Gahhh😫😫 it’s birthday month for my husband and I - yes we are both Taurus ♉️😂 so a few celebrations, and many other things going on that I will leave for now. Mother’s Day is this Sunday and I will leave you with one of my favorite tarts - Raspberry Rose Lemon Curd Tart with Pink Meringues and Berries from the blog archives! I love mangoes!!! We get mangoes from Mexico here in the grocery stores, and enjoy them a lot! I made this deeelicious ice cream for #margaritaweek last year! It’s a Passionfruit Mango Tequila Lime Ice Cream with an Ancho-Chile Tequila Caramel with a Peanut Pepita Brittle! It’s seriously the bomb 💣!!! 😍 One of my favorite ice cream flavors that I have created! I love touching all the flavors like sweet, salty, sour and spicy in all my foods! I grew up eating a ton of mango during mango season! All Indians can relate to this! Mango season runs from April to June, less than months, but in that duration, my family consumed mangoes 🥭 day and night!! Aam Raas or mango juice was dessert for every meal! And we all would put on 5-7 pounds during mango season 🤣 mom made mango milkshake, mango shrikhand, mango everything! Sometimes all you need is a pipping hot bowl of noodle soup with a ton of veggies and some protein to feel satisfied! The broth is homemade, made with aromatics, like onions, garlic, lemongrass and a ton of ginger, veggies like carrots and red cabbage, gochujang, soya sauce, rice vinegar, lime juice and cilantro. The broth itself is so flavorful, that it brings a lot of flavors into the add-ons! A dash of sriracha and that’s all that is required! My daughter loves this bowl so I make it quite often for her. And it’s our dinner tonight! No set recipe but it works every time 😍 veganize it by not adding egg and subbing it with fried tofu ! Yum!
One of my favorite jams is this Pluot Lavender Jam that I make once pluots are in season in the summer! Lemon Lavender Shortbread Sandwich Cookies with a Pluot and Lavender Jam Buttercream! {New Blog Post} This is a popular recipe at my home, that I make often. They are Huevos Rancheros Buttermilk Corn Waffles 🤤 , where I used masa harina flour, along with AP flour, spices like ancho chilli powder, smoked paprika, and vegetables like corn, jalapeno, bell pepper, cilantro, red onion, garlic and cheese as well nin the batter. These waffles are super delicious and I usually make all the waffles in one go, and refrigerate them for a great weeknight dinner. In the recipe on the blog(long story short - I had to delete the 2 year old post cause of some issues with WordPress and redo the post!), I make Chipotle Tomato Salsa, and Chipotle Fingerling Potatoes to go with the dish. Pictured here are Roasted Potatoes with a dried guajillo chilli salsa, recipe from @holasus in her highlights ! 😍 These potatoes with the salsa are so very flavorful, that my family wanted me to make it again! If you do not follow Susana, then you need to, cause her feed is ALL kinds of deliciousness, and will leave your mouth watering! I swear! ☺️💕✨ Go give her a follow if you are not! Easter Chick 🐣Macarons! @pastrywithjenn came over for a baking date last year and it was so fun to put these together! They are Lemon Mac shells with a Meyer Lemon Buttercream and Raspberry Curd in the middle! My favorites are the babies hatching out of the shells! Spring Wreath Cake! 🌸🍃🌹🌼 My inspiration for the colors on this cake, came from the @anthropologie window display! See my stories for the picture inspiration! They have the most creative window displays, for every season and holiday! 😍 The colors spoke to me and I had to convert it into a cake design. The cake is a 3 tiered cake with Strawberry, Lemon and Lavender Layers - very spring inspired with an Elderflower Swiss Meringue Buttercream. The buttercream frosting has been adapted from @bravetart ‘s recipe that I love and been using for the few cakes that I bake! For the flowers, I referred to Tessa’s @stylesweetdaily ‘s gorgeous new cookbook Icing on the Cake for her inspiring tutorials on how to create pretty florals! I am far from perfect but I so loved the process of making those flowers!!! I can’t wait to practice more and make more 🌸 !! I will put together the post for this Spring inspired wreath Cake soon ☺️💕 #f52bright
