I ate 2 huge meals today, at 1pm and 4pm, but there's no discernible increase in blood sugar at those times (good!) . . The big bump at 8pm? That's a Crossfit WOD of Echo Bike, thrusters, and burpees. My highest BG of the day, and it happened independent of food intake. Interesting! The liver spits out whatever is needed to meet energy demands. . . I'm wearing a Continuous Glucose Monitor all month and my goal is to eat in a way that keeps average BG to 4.7 mmo/l (or 85 in American ๐Ÿ˜œ). TODDLER FOR SALE!! . . I spent way too much time painstakingly cleaning the seeds from the pumpkin guts for that once-a-year treat of fresh toasted pumpkin seeds. One batch with olive oil and sea salt, the other with dill pickle seasoning. They were delicious. Then my 2 year old was playing 'wash the dishes' at the sink and (while I wasn't looking, of course!) Pickle brined chicken fingers! ๐Ÿฅ’๐Ÿ— AH-MAH-ZING! Oh and some bacon balsamic brussell sprouts too. Apparently pickle brine is the secret to why Chick-fil-A chicken is so juicy and delicious. If you're being a good keto-er and getting in enough sodium by eating lots of pickles, then you probably have jars of the left over juice on the regular. Throw a few chicken breasts in there and let them sit for 8 hours. Grill, fry, or bake them any way you like! Days like today make me think thank gawd for keto adaptation!! I had a very fun but very busy time organizing, hosting, and officiating an Olympic weightlifting meet today ๐Ÿ‹๏ธโ€โ™€๏ธ๐Ÿ‹๏ธโ€โ™‚๏ธ It left no time for food at all, but it didn't matter! No blood sugar drops, no shakiness, no grouchy mood, and no scrounging around for any old junk to put in my face when I hadn't eaten. Hunger is no longer an emergency lol! I'm not advocating starving yourself OF COURSE , but when life happens I'm so glad for the resiliency to power through on my own fuel on board. I've experimented with lots of "frameworks" for choosing what to eat. I've counted macros, I've done paleo, I've been low fat, at times I've been very strict and other times, very lax. High fat/low carb aka Keto is hands down the easiest, most delicious, most stress free way of eating for me any time, any where. It's the only thing that's felt actually sustainable. Tonight I enjoyed the heck out of deviled eggs, buffalo wings, a double burger with a fried egg and bacon, and a big bowl of greens with olive oil vinaigrette. And the only "high maintenance" thing I asked for was no bun with the burger. I get asked all the time how my strength has held up since I shifted to a keto diet in Jan of 2017. I don't lift nearly as often as I used to, but when I do the strength is just THERE. It's a strange feeling to describe! .
