This is what my life's been looking like these days ๐Ÿคท๐Ÿผโ€โ™€๏ธ, not that I'm complaining. I figured out a waffle hack that's pretty genius, if I do say so myself! Easy gluten-free protein waffles that taste just as good (if not better) than the unhealthy kind! All you have to do is make @traderjoes gluten free pancake/waffle mix according to the instructions, but replace the butter with milk and protein powder (for every 1/4 cup butter, use 1/4 cup milk and 1/4 cup protein powder instead). Then you can customize them however you like! Most of the time these days, my breakfast looks exactly like this: avocado toast and a matcha latte. Simple but definitely a winning combo. Iโ€™m back! Sorry for the absence of posts there, I was on a trip and just got back a few days ago. Oh my gosh guys, I cannot even explain to you how good these are. Seriously, get the ingredients and make these spicy turkey samosas (sort of?) ASAP! Hereโ€™s whatcha gotta do: 1. Sautรฉ a diced red bell pepper, a diced white onion, and a large handful of grape tomatoes with lots of paprika, some red chili flakes, and salt + pepper. Add in ground turkey and cook until browned completely, periodically draining out the fat (we want as little liquid as possible so they arenโ€™t soggy) 2. Preheat oven to 400 F. Line some baking sheets with parchment paper and get out about 50 wonton wrappers. Put a small amount of filling in the center of one, wet the edges with egg mixed with water, and fold/press the edges to seal. Repeat until no filling is left. You can freeze any remains wrappers for later use or fill them with anything else you like, sweet or savory. 3. Bake for about 15 minutes until crispy, checking every 5 minutes. Iโ€™m definitely the latterโ€”itโ€™s almost impossible for me to follow a recipe without changing something ๐Ÿคท๐Ÿผโ€โ™€๏ธ. I even do this with my own recipes! Luckily my flax muffin recipe is super forgiving, meaning you can change it up a ton! Here for example, I made chocolate cherry muffins with what I had in hand by subbing oat flour for ground flax, blending some frozen cherries for the purรฉed ingredient, using egg yolks instead of oil, and adding cocoa powder and maple syrup to half the batter to make a chocolate swirl. And they turned out great! So I made @lilsipper โ€™s cheeseburger soup recipe since Iโ€™ve been eyeing it for so long, and it did NOT disappoint ๐Ÿคค. Mine had a bunch of substitutions based on what I had on hand (replaced some squash with shredded cooked carrots, used ground turkey instead of ground beef, omitted tahini and apple cider vinegar, added some cooked broccoli and spinach on top) but it still actually tasted like a cheeseburger! I can only imagine how good it would be if I had all the right ingredients. I donโ€™t know why Iโ€™ve never posted this before, but you guys have to try these coconut jello cubes! Theyโ€™ve been one of my absolute favorite summer snacks/desserts for years ever since I discovered those white cubes of coconutty goodness they serve at dim sum restaurants. ๐Ÿ˜‹๐Ÿฅฅ With this recipe, you can enjoy them at home too! * 1 cup water * Scant 2/3 cup sugar * 1 oz gelatin powder * 1 1/4 cups canned coconut milk (cream skimmed off the top; use only the liquid) * 3/4 cups vanilla soymilk 1. Set aside some of the water and add the gelatin packets. Whisk the mixture while you bring the rest of the water to a boil. 2. Once the water is boiling, add sugar and stir to dissolve. Take off the heat and add gelatin, whisking well to dissolve. 3. Add coconut milk and soymilk and mix until combined. 4. With a fine mesh strainer, strain the mixture into any container you want (ramekins, molds, a dish, etc.) 5.
