Are you the type of person who follows recipes to a T, or uses them just as inspiration to base your recipe off of? I’m definitely the latter—it’s almost impossible for me to follow a recipe without changing something 🤷🏼‍♀️. I even do this with my own recipes! Luckily my flax muffin recipe is super forgiving, meaning you can change it up a ton! Here for example, I made chocolate cherry muffins with what I had in hand by subbing oat flour for ground flax, blending some frozen cherries for the puréed ingredient, using egg yolks instead of oil, and adding cocoa powder and maple syrup to half the batter to make a chocolate swirl. And they turned out great! So I made @lilsipper ’s cheeseburger soup recipe since I’ve been eyeing it for so long, and it did NOT disappoint 🤤. Mine had a bunch of substitutions based on what I had on hand (replaced some squash with shredded cooked carrots, used ground turkey instead of ground beef, omitted tahini and apple cider vinegar, added some cooked broccoli and spinach on top) but it still actually tasted like a cheeseburger! I can only imagine how good it would be if I had all the right ingredients. I don’t know why I’ve never posted this before, but you guys have to try these coconut jello cubes! They’ve been one of my absolute favorite summer snacks/desserts for years ever since I discovered those white cubes of coconutty goodness they serve at dim sum restaurants. 😋🥥 With this recipe, you can enjoy them at home too! * 1 cup water * Scant 2/3 cup sugar * 1 oz gelatin powder * 1 1/4 cups canned coconut milk (cream skimmed off the top; use only the liquid) * 3/4 cups vanilla soymilk 1. Set aside some of the water and add the gelatin packets. Whisk the mixture while you bring the rest of the water to a boil. 2. Once the water is boiling, add sugar and stir to dissolve. Take off the heat and add gelatin, whisking well to dissolve. 3. Add coconut milk and soymilk and mix until combined. 4. With a fine mesh strainer, strain the mixture into any container you want (ramekins, molds, a dish, etc.) 5. I’ve been into overnight oats again for breakfast—I don’t really know why I stopped. They’re so convenient and healthy, plus delicious too. This is my go-to (1/2 cup oats, 1/2 cup vanilla soymilk, cinnamon and blueberries), but the real star here is that @delightedbydesserthummus snickerdoodle hummus on top 😏. I’ve tried their vanilla bean flavor before and liked it, but snickerdoodle BLEW ME AWAY. Seriously, it is smooth, sweet, cinnamon-y heaven that you can just eat right out of the tub. If you try it, definitely go for the snickerdoodle flavor first. It tastes amazing, it’s healthy, and it’s nut-free!!! So recently I’ve been trying some recipes from @lilsipper and I’ll be posting about how AWESOME they are soon (I made the 2 ingredient caramel squares, but forgot to take an pictures of them!), but for now all I have is one of these smoothie pictures. I’ve had it on repeat for the past few days, and though I didn’t follow her recipe exactly, I definitely have to credit her for the inspiration. Here are the deets: • 1/2 cup plain 0% Greek yogurt • 1/2 cup frozen cherries • 1/2 cup frozen riced cauliflower (pre-steamed) • 1 scoop vanilla protein powder You can swirl in cocoa powder and dark chocolate chips after blending, or leave plain. Hey, can I tell you a secret? For over a year, I’ve been terrified of trying foods with any “risk”. I’m not talking about foods that could contain my allergens—I’ve always been scared of those (and rightly so!) No, I’m talking about anything that could harbor food poisoning: uncooked fish, runny eggs, etc. It started when I got salmonella for the first time, which was not from any of these things, fyi. It sent me into and obsessive spiral that kept me from enjoying my favorite foods or trying new ones. But bit by bit, I’m learning not to be afraid of food again. Today I tried smoked salmon for the first time, and although I’ve been terrified of it I actually really liked it! P.s. Most mornings, I simply grab whatever quick bites are already prepped and start getting ready to leave. This morning though, my cat woke me up an hour early 😒 so I figured I might as well cook something nice for breakfast. The result? Chocolate French toast topped with bananas and @88acres chocolate sunflower seed butter! I used my usual French toast recipe (1 1/4 cups soymilk, 2 eggs, cinnamon, and 1 tsp stevia) and added 1 tbsp cocoa powder. The real star here though is the chocolate sunflower seed butter melting on top 😍. It’s a little sweet, a little salty, and very chocolatey 🍫 but most importantly it’s nut free! @88acres makes seed butters and other seed products in a facility that is entirely free of peanuts and treanuts, which means us nut-allergic people can finally have a safe version of “Nutella” French toast 😉😋. I found my jar in Big Y, but I have seen it in several other grocery stores too. If you can’t find it in your area, you can always buy it online straight from the 88acres website. Peel and slice some SUPER ripe bananas (the riper they are, the better it will taste) and freeze them at least overnight. 2. Add 1 cup of the sliced frozen bananas, 1 cup vanilla soymilk, and 1 tsp matcha powder to a high-powered blender and blend until smooth. 3. Enjoy! These taste exactly like one of those Wendy’s frosty milkshakes, but about a million times healthier and also matcha flavored 😉.
