The recipe of the month: 'Vive le tartiflette'! Oh là là!
Wherever you travel in France in winter you will come across this must-have of French cuisine, a true 🥓 bacon, 🥔 potato and 🧀 cheese-based delicacy ready to steal your heart.
Ingredients: 500 g of potatoes, 3 onions, 200 g of smoked bacon, 1/2 glass of white wine, 1 tablespoon of extra virgin olive oil, Reblochon, 100 ml of single cream, salt and pepper.
Wash the potatoes and boil them whole with their skin. Cut the bacon into strips and sear it in a frying pan. Once its juices are released, before it turns golden, take it out of the frying pan and add the julienne-cut onion, and leave it to fry in the bacon juices. Add a tablespoon of olive oil and fry it on a middle-low heat for 20 minutes. At this time add the bacon, sautée for several minutes on a middle-low heat, add the glass of white wine and cook for three to four minutes, until the alcohol has evaporated.
In an oven dish, place the potatoes in a row, cut into 1 cm slices. Cover with a layer of bacon and onion and finish with a layer of grated cheese. Bake for around 15 minutes with the upper and lower elements, and finish under the grill until the cheese is golden 👏👏
