We are throwing our first Cheese 🧀 Monger Show Down competition at the #UnionStation store on Saturday 4/21 from 2-4pm. 6 of our very own Certified Cheese Professionals (CCPs) will be competing for the title of Best Cheese Monger in the RM region. Our contestants will compete in a number of cheesy disciplines in front of a live customer audience to determine who is the best. We will have a panel of expert judges from the local and national cheese and restaurant community to help us determine who will be crowned cheese supreme. There will be cheese, prizes, and samples galore during the event as well as crowd participation. We will be raffling off 4 tickets to the 4/21 #Rockies vs. #Cubs baseball game to a lucky customer as a grand prize. Meet some of our contestants.. . Favorite Cheese: Comte. “The cheese itself (Comte) is incredibly complex with its nearly 1000 years of tradition and some 85 descriptors for its flavor.” . We are committed to supporting agricultural communities and maintaining sustainable food production. So, we are promoting a variety of water-saving methods: deficit irrigation, rotational fallowing, irrigation efficiency, water conservation and crop switching—switching from traditional crops to others that use less water.  Different crops use different quantities of water over different time periods. Crop switching can reduce water use due to differences in the plants' water requirements. For example, in western Colorado, corn uses 30 percent less water than alfalfa over the growing season. Crop switching may also shift water use from summer months to winter or spring months when water is more available.  We believe that crop switching has huge potential benefits. #NatureUnitesUs :: 📷barbara east Our second takeover post is all about sustainable grazing. With over 500 scientists on staff, The Nature Conservancy's decisions are grounded in science. The iconic grasslands of #Colorado provide a home for wildlife while also supporting a ranching lifestyle that is ingrained in our state’s heritage. The hotter and drier conditions projected to result from climate change will likely make it more difficult to conserve these lands for people and nature in the years ahead.  To address these challenges, @co_nature has established a Sustainable Grazing Lands Program. We are developing science-based solutions to advance grazing practices that meet the needs of ranchers who own and manage these lands and help sustain the many plants and animals that call this landscape home. The Conservancy has four test sites around the eastern plains. The lessons learned from the test sites are helping to refine our understanding of how to continuously improve and adapt grazing systems, fence and stock water facilities, financial management tools and knowledge-sharing to improve outcomes for nature and for ranching businesses and communities. Hi Whole Foods community!  This is the @nature_co the first post as part of our takeover of Whole Foods account!  If you follow our Insta account, you know we are a science-based, bipartisan and pragmatic conservation organization-finding solutions to world’s biggest environmental challenges. During our takeover we want to focus on the importance of soil health and improving water usage while feeding a hungry world. At the core of agriculture is innovation. Advancements in agricultural technology throughout the past century have allowed farmers to feed a population that has grown from less than 2 billion people to more than 7 billion today. As demand for food continues to grow, our lands are stretched to their limits, the world will need farmers to make another leap. With a changing climate exacerbating today’s challenges, it is clear the next agriculture revolution will require solutions that not only increase food production, but also sustain the health of our communities, our land and water, and our climate. One such solution lies with the soil under our feet. About 70 percent of fresh water worldwide is used to produce food, and 95 percent of food is produced on land.  Soil health might not grab the headlines, but it might just be the most important agricultural conservation endeavor of our lifetime. If we want to meet the growing demand for food while strengthening the health of our communities, our land and water, and our climate, we need to support innovation in soil health and ensure farmers have broad access to the practices and incentives that can shift the paradigm. #303eats #303 #natureunitesus #earthday2018

Battling the #SundayScaries with these delicious vegan and gluten free Chocolate Walnut Chunk Cookies 🍪 from @thenoshingfox ▻ ▻ ▻ Not only is this recipe incredible simple and fast to make, but it’s super friendly to most dietary needs: gluten-free, refined-sugar-free, vegan, soy-free, and paleo! Plus they pack a bit more protein than your avg. cookies, as well 👌🏻😏. Oh, and if you’re a chewy or crispy cookie person, no problem I gotchu. 🙌🏻 Just adjust the baking time a bit. What’s one of your fave easy, healthy baking recipe btw?! 🍰🍩👩🏻‍🍳🍪🥧 ▻ ▻ ▻ Chocolate Walnut Chunk Cookies 🍪 | V GF SF P RSF👇🏻: Ingredients: - 2 1/4 C. @thrivemkt Blanched Almond Flour - 1/2 C. Dutch Processed Cocoa Powder(or raw cacao powder) - 1/3 C. @nutiva Extra Virgin Unrefined Coconut Oil (melted) - 1/4 C. @wholefoods Pure Maple Syrup (or honey if not vegan) - 2 tsp @simplyorganicfoods Pure Vanilla Extract - 1/2 tsp Baking Soda - 1/4 tsp Pink Himalayan Salt - 1/2 C. Chopped Walnuts 1. Pre-heat oven to 350F. 2. In a medium bowl, mix all ingredients (except walnuts) until well-combined. ***The dough should be moist and can hold a shape, but not stick to your hands a lot or crumble.*** 3. Once cookie dough base is combined, mix in the walnuts. 4. Line a baking sheet with parchment paper. 5. Spoon ~1-2 Tbsp’s worth of dough and roll into a ball with your hands. Gently flatten out to 1/4” thick discs and place on cookie sheet (~1/2” apart). 6. Bake on middle rack for 12-15 mins. (for chewy) or 18-20 mins. (for crispy). ▻ ▻ ▻ They are fragile right out the oven, so let set up on cookie sheet ~5-10 mins. Then transfer to a cooling rack or continue to let cool on the pan another 5-10 mins. Store in an airtight container. *** ☝🏻I will also say, these are really best eaten slightly warmed, so enjoy them freshly baked or pop them in the microwave or oven on low temp. after they’ve fully cooled for best flavor/texture. ***
